Golden puff pastry is layered with pastry cream and jam and then iced before being cut into bars.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Roll out three sheets of puff pastry, each to the same size and a thickness of 1/8 inch. Prick with a fork, and place on baking sheets.
- Bake in preheated oven until golden, about 10 minutes.
- In a medium bowl, combine cornstarch and 1/2 cup milk with fingers until smooth. Stir in cake flour and half the sugar. Beat in egg yolks. Set aside.
- In a saucepan over medium heat, bring remaining milk and remaining sugar to a rolling boil. Stir in egg yolk mixture; continue stirring and bring to a boil again. Remove from heat and stir in butter and vanilla. Let cool.
- In a small saucepan or in the microwave, heat the jam until runny.
- Place one sheet of pastry on a board. Spread with cooled pastry cream to a thickness of 1/2 inch. Place a second pastry sheet over the cream. Brush with fruit glaze. Spread remaining pastry cream over glaze. Top with final pastry sheet and gently compress layers, using a baking sheet to press.
- To make icing, beat together confectioners' sugar and lemon juice with enough of the egg whites to make a creamy consistency like that of a cream soup. Working quickly, color a small portion of the frosting with red food coloring. Frost the top and sides of the assembled pastry with white icing. Pipe parallel lines of red icing on top of dessert, then draw a pick or knife crosswise through icing to make the traditional design. Let icing set before cutting into bars.

EASY STRAWBERRY 'NAPOLEON'
Easy, rich, fast and yummy dessert. Your guests will never guess the crust layer is saltines! Pretty enough for company but easy enough for everyday! Time to make does not include refrigeration time- 4 hours Very yummy made with fresh strawberries from Mexico, Texas and California.

Steps:
- Mix pudding mix and milk-(skim or low fat is fine) and beat on low for 2 minutes.
- Fold in Cool Whip- can be low or non fat.
- Place 12 crackers in bottom of 8" square dish to cover bottom, break crackers if needed. Breaking also helps disguise the saltines.
- Top with 1/3 of the pudding mix.
- Repeat to create a total of three layers of crackers and three layers of pudding.
- Cover and refrigerate for at least 4 hours.
- Just before serving top with cleaned and sliced berries.
- Note: Vanilla and strawberries are my favorite combo but try with different types of fresh fruit using what is in season. Also try different pudding flavors keeping in mind that lighter colors disguise the saltines the best!

- 1. unfold puff pastry and place each sheet on a baking sheet. bake according to package directions, until golden. allow pastry to cool.
- 2. meanwhile, in a large bowl, whisk pudding mix and milk until thickened. stir in half of the whipped topping until thoroughly mixed.
- 3. break cooled pastry into large pieces and place one third of them into bottom of trifle dish or large glass bowl. spoon half of the pudding mixture over that and drizzle with one third of the chocolate syrup.
- 4. repeat the layers then top the remaining pastry pieces, the remaining whipped topping and the remaining chocolate syrup.
- 5. cover and chill for at least 2 hours before serving.
- 6. notes: for really rich flavor and texture, whip 2 cups (1 pint) heavy cream and use that instead of the whipped topping.
STRAWBERRY NAPOLEONS

Steps:
- Add the egg yolks to a medium sized bowl and gently beat them together. Set aside.
- Add the sugar, cornstarch and milk to a large saucepan and mix until smooth.
- Cook, stirring continuously, over medium-high heat until mixture begins to thicken and bubble.
- Reduce heat to medium and simmer for 2 minutes. Remove from heat.
- Add a little bit of milk mixture to the egg yolks and whisk together, then add egg mixture to milk mixture. This process ensures that you don't scramble the egg yolks.
- Place the pan back on the heat and bring to a light boil. Allow to boil for 2 minutes, stirring continuously.
- Remove from heat and add butter and vanilla extract. Stir until smooth, then top with clear wrap that touches the top of the cream (it helps prevent a film from forming on top). Refrigerate until cool and ready to use.
- Remove the two sheets of puff pastry from the box and cut each set into 3 strips, for a total of 6 strips.
- Place on a baking sheet and bake for about 13 minutes.
- Remove them from the oven and allow to cool. Press the baked pastry down just a bit, if needed so they layers are relatively flat.
- To finish making the pastry cream, add the heavy whipping cream and powdered sugar to a large mixer bowl and whip until stiff peaks form.
- Gently fold the whipped cream into the pastry cream.
- To layer everything together, place a layer of puff pastry onto a serving plate and top it with some chopped strawberries.
- Pipe or spread some pastry cream on top of the berries, then repeat another layer of puff pastry, strawberries and pastry cream.
- Top off the pastry with a third pastry strip on top. Repeat the layering process with the remaining puff pastry, pastry cream and strawberries.
- To make the icing, add all ingredients to a small bowl and whisk until smooth. Spread the icing onto the top of the completed napoleons.
- To add the whipped cream topping, add the ingredients to a large mixer bowl and whisk until stiff peaks form.
- Pipe swirls of the whipped cream on top of the napoleons and top with a few additional chopped berries. Refrigerate until ready to serve.

DESSERT NAPOLEAN
Steps:
- Cut tortillas into triangle shapes and place into 325 degree oil and fry until golden brown. While still hot dust with cinnamon sugar; set aside. Take 2 containers of raspberries and puree.
- Place egg yolks in a double boiler and whisk until yolks ribbon and turn pale yellow. Add 2 ounces white sugar and Marsala and whisk until all sugar dissolves and Marsala is incorporated. Hold warm.
- Ladle Sabayon onto base of plate. Place 1 tortilla on top and cover with fruits. Add another tortilla, top with fruit and so on. Top with sabayon and raspberry sauce. Garnish with a rosette of whipped cream, mint leaf and reserved container of raspberries.
RUSSIAN CAKE (CREOLE TRIFLE
In one of my summer reading books I read about them eating this cake and it sounded so yummy and different. I searched high and low and finally found the recipe on http://herbsaint.wordpress.com. Posted on here to make sure I always have the recipe and so I can added to the shopping list to try. Time does not include overnight chilling.

- Mix rum, anise, jam and (optionally) the food color with a wire whisk until everything is well integrated; the alcohol in the rum helps dissolve the jam quickly so it shouldn't be more than 30 seconds.
- Pour evenly over your cake pieces and place bowl in fridge for a few hours or overnight (covered). The more cake pieces you use for the inside, the denser and heavier the cake will be. The Russian cakes I remember weighed several pounds and seemed very heavy for their size.
- When ready to assemble cake, bake your boxed cake according to instructions in a 9-inch cake pan. When cool split the cake evenly down the middle. Place one half in a 9-inch springform pan (one used for cheesecakes) and "fill" with your soaked cake pieces. Try to get this even as possible.
- Place top layer over "filling" and cover with plastic wrap, the plastic touching the top of the cake. I placed my cleaned cake pan over the top of this and weighed it down with jars from the fridge. The reason I did this was to make sure that the cake was flat, number one, but also I wanted some of the "juice" from the middle to seep into the top and bottom layer, thereby binding the cake together.
- Place in fridge overnight (make sure it's covered). The next day, frost the top and cover with sprinkles.
