Beautiful on the table, refreshing side dish or light dessert, perfect for a brunch or wedding or baby shower. For years it has been a must-have tradition at our Thanksgiving dinner. May be served immediately, but best if refrigerated for a few hours or overnight.

1 cup chopped pecans
⅓ cup white sugar
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla extract
2 pounds red seedless grapes

Steps:

  • Place pecans in a skillet over medium-low heat; cook and stir until pecans are toasted and fragrant, 3 to 5 minutes. Remove from heat and pour into a heatproof bowl; stir to prevent nuts from overcooking.
  • Beat sugar, cream cheese, and vanilla extract together with an electric mixer in a bowl until smooth. Fold in pecans and grapes. Stir gently until grapes are coated.

This is one of the many recipes from my Grandmother's cookbook. She passed away in May of 2005. I am recording her wonderful recipes for my family and the many generations that will follow. I hope you enjoy her recipes as much as we do. I have not made each one yet so cooking time and servings may not be posted on some. Blessings from FOURMRANCHWIFE in Texas.

20 ounces pineapple chunks in juice, juice reserved
20 ounces bing cherries in juice, juice reserved
2 (8 ounce) packages cherry Jell-O
3 (8 ounce) packages cream cheese, softened
1/2 cup pecans, chopped
1 1/2 cups cola

Steps:

  • Drain pineapple and cherries; reserve juice.
  • Heat 1-1/2 cups of reserved juice; most of the 1-1/2 cups should be pineapple juice and just a little cherry juice.
  • Dissolve Jell-O in heated juice; add softened cream cheese; whip.
  • Add pineapple, cherries, and pecans.
  • Stir in Cola.
  • Chill until firm.
  • The ounce sizes are guesses; it is the big can of cherry and pineapple; the Jell-O is the small box. When I make it I will look at sizes and edit.

My nanny passed away when I was 10 years of age though one of my fondest memories is of her grapenut custard and how it was a staple in her home. If it was not just a visit but a family dinner at her house, it always came out with a dollop of whipped cream on top. I have been making this for years and cannot help but remember my nanny and smile with each bite. I like it best without the whipped cream and cold from the fridge just like it always was a nanny's house. This recipe gives a nice caramelized almost crisp top and a soft velvety interior. c.2007

4 cups whole milk
3/4 cup Grape-nuts cereal
1/2 cup sugar
4 eggs
1 teaspoon pure vanilla extract
1/16 teaspoon salt
butter (to grease casserole)

Steps:

  • Preheat oven to 350.
  • Combine the cereal, salt and milk while preparing the remainder.
  • Grease with butter a 2.5 qt casserole dish.
  • In a small bowl or 2 cup measuring cup combine the eggs, vanilla and sugar. Mix until thoroughly combined and emulsified.
  • Pour the cereal and milk mixture into a mixing bowl and add the egg and sugar mixture. Stir well though do not allow to get overly foamy.
  • Pour into the greased casserole and bake 60 minutes. This is done when a knife inserted halfway from the edge to the middle comes out clean.
  • Do not attempt to overbake, it will appear underdone in the middle. Carry over cooking will handle that. Overcooked and it makes a nice albeit sweet hockey puck!
