This is a hit at parties and it's so easy to prepare. The lovely fresh chopped chives add color and delicious flavor. You can add crushed garlic or finely chopped onion to it as well if you like!

1 ¾ pounds new potatoes, halved
1 cup sour cream
½ cup mayonnaise
½ cup chopped fresh chives
salt and freshly ground black pepper to taste
½ cup chopped fresh chives for garnish

Steps:

  • Place the potatoes into a pan, and fill with just enough water to cover. Bring to a boil, then simmer over low heat until tender, about 10 minutes. Drain, and cool under cold running water.
  • In a large bowl, stir together the sour cream, mayonnaise, and 1/2 cup of chives. When the potatoes have cooled, stir them into this mixture. Season with salt and pepper. Garnish with remaining chives.

1 kg new potatoes, scrubbed
100 g higher-welfare smoked pancetta or bacon
1 handful stale breadcrumbs
125 ml soured cream
125 ml fat-free natural yoghurt
1 bunch fresh chives, snipped

Steps:

  • Boil the potatoes gently in salted water until tender, then drain well. Leave them to cool slightly.
  • Fry the pancetta or bacon until crisp, break up, then set aside. Fry the breadcrumbs in the pancetta or bacon fat until crisp.
  • Slice the potatoes in half and dress with the soured cream, yoghurt, sea salt and freshly ground black pepper. Fold in the pancetta and most of the breadcrumbs and scatter the top with the chives and remaining breadcrumbs before serving.

2 pounds small boiling potatoes (about 1 to 1 1/2 inches in diameter)
3 garlic cloves, minced and mashed to a paste with 1 teaspoon salt
3 1/2 tablespoons fresh lemon juice plus additional to taste if desired
1/3 cup mayonnaise
1 tablespoon hot water
1/4 cup chopped fresh chives

Steps:

  • In a large saucepan combine potatoes with salted water to cover by 1 inch and simmer until just tender, 15 to 20 minutes. Drain potatoes and cool until they can be handled.
  • While potatoes are cooling, in a large bowl whisk together garlic paste, 3 1/2 tablespoons lemon juice, mayonnaise, and hot water.
  • Peel potatoes and cut in half. Add potatoes and chives to dressing and toss well. Season salad with additional lemon juice and salt and pepper. Salad may be made 1 day ahead and kept chilled, covered. Before serving, toss salad with 1 to 2 tablespoons water to moisten dressing.
  • Serve salad at room temperature.

4 eggs, hard boiled and diced
4 celery ribs, diced
1 cup red onion, diced
1/3-1/2 cup fresh chives, thinly sliced (one 3/4 oz package)
1/4 cup dill pickles, diced or 1/4 cup dill relish
1 cup mayonnaise
1 cup sour cream
2 teaspoons Dijon mustard
4 teaspoons dried dill or 2 tablespoons fresh dill
1 1/2-2 teaspoons salt
1/4 teaspoon pepper

Steps:

  • Peel and cut potatoes, cut into one-inch pieces and boil for 10-12 minutes. Strain the potatoes in a colander and run cold water over the potatoes to stop the cooking. If you omit this step you will end up with mashed potatoes.
  • Combine sour cream, mayo, and mustard in a medium size bowl.
  • Combine the potatoes and all remaining ingredients in a large bowl, and empty the sour cream mixture into the large bowl and mix well.
  • Cover and refrigerate overnight, if possible.
