CHERRY-CHOCOLATE COBBLER

Unsalted butter, for the baking dish
3 pounds pitted cherries (thawed, drained and patted dry if frozen)
1 cup granulated sugar
2 tablespoons cornstarch
2 tablespoons fresh lemon juice
1 teaspoon pure vanilla extract
1/2 to 3/4 teaspoon pure almond extract
Pinch of kosher salt
2 cups all-purpose flour, plus more for dusting
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
1 stick cold unsalted butter, cut into small pieces
4 ounces semisweet chocolate, chopped
1 large egg
1/2 cup buttermilk, plus more for brushing
Turbinado sugar, for sprinkling
Cherry-vanilla ice cream, for serving

Steps:

  • Make the filling: Preheat the oven to 375 degrees F. Butter a 9-by-13-inch baking dish. Combine the cherries, granulated sugar, cornstarch, lemon juice and vanilla and almond extracts in a large bowl; toss until combined with no clumps. Spread in the prepared dish.
  • Make the topping: Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter and pulse until pea-size pieces form. Pulse in the chopped chocolate. Whisk the egg with the buttermilk in a medium bowl; add to the flour mixture and pulse a few times until the dough just comes together.
  • Turn out the dough onto a lightly floured surface and pat into a 4-by-12-inch rectangle (about 1/2 inch thick). Cut into twelve 2-inch squares; arrange in 3 rows over the filling. Brush the tops with buttermilk and sprinkle with turbinado sugar. Bake until the topping is browned and the filling is bubbling around the edges, 45 to 55 minutes. (To check for doneness, look under a biscuit to make sure it?s not raw; continue baking if necessary.) Let cool at least 30 minutes. Serve with ice cream.

1/2 ounce cornstarch
2 tablespoons cinnamon
1 teaspoon baking powder
1 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt
5 ounces (1 1/4 sticks) unsalted butter, at room temperature
10 1/2 ounces granulated sugar
3 eggs
1 teaspoon vanilla
1 cup buttermilk
1 can cherry filling
1 cup all-purpose flour
1 cup rolled oats
3/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
3/4 cup cold butter
1 cup cake shortening
8 ounces (2 sticks) unsalted butter, at room temperature
2 teaspoons vanilla
2 pounds confectioners' sugar
2 tablespoons cinnamon

Steps:

  • For the cake batter: Preheat the oven to 325 degrees F; line cupcake pans with 24 cupcake liners.
  • In a medium bowl, combine the pastry flour, cornstarch, cinnamon, baking powder, nutmeg, baking soda and salt and set aside. Using an electric mixer with a paddle attachment, cream the butter and granulated sugar until light and fluffy; scrape down the sides of the bowl. Add the eggs one at a time, beating well after each addition; mix in the vanilla. Alternately add the flour mixture and the buttermilk, starting and ending with the flour mixture and beating well after each addition.
  • Spoon the batter into the liners, filling them about halfway, and add 1 teaspoon of cherry filling in the center of each. Bake until an inserted toothpick comes out clean, about 25 minutes. Let the cupcakes cool completely before frosting.
  • Raise the oven temperature to 350 degrees F for the crumble.
  • For the oatmeal crisp crumble: In a medium bowl, combine the all-purpose flour, rolled oats, brown sugar, cinnamon and nutmeg. Cut in the cold butter until the mixture gets crumbly. Spread the mixture on a baking sheet and bake for 15 minutes. Let cool.
  • For the cinnamon buttercream: In the bowl of an electric mixer with a paddle attachment, beat the shortening and butter on medium speed until creamy and smooth. Add the vanilla and beat for 2 minutes. Add the confectioners' sugar and cinnamon and beat for 1 minute. Add 1/4 cup water and beat until creamy and smooth.
  • To assemble: Frost the cupcakes with the cinnamon buttercream and garnish with the oatmeal crisp crumble.

1 -2 teaspoon cornstarch

1 cup Splenda granular
1/2 cup nonfat dry milk powder
1/2 teaspoon baking soda
2 cups flour
1 teaspoon salt
2 teaspoons baking powder
1 cup milk

Steps:

  • Preheat oven to 350. In a bowl combine the 3/4 cup Splenda and cornstarch. Then mix in the cherries. Place the cherries in a 13 x 9 baking pan.
  • In another bowl cream butter and 1 cup Splenda. Add in milk powder, baking soda, flour, salt, baking powder, and milk.
  • Spoon the batter over top of the berries, using a spatula to smooth it out.
  • Bake at 350 for 40-45 minutes.

4 cups fresh pitted cherries (about 2 lbs uncleaned)
3/4 cup granulated sugar
1 tablespoon quick-cooking tapioca
1/3 cup water
1 tablespoon butter
1/2 cup butter
1 1/4 cups flour
2 tablespoons baking powder
1/2 teaspoon salt
1 cup sugar
1 cup milk

Steps:

  • Combine in a large saucepan the cherries, 3/4 cup sugar, tapioca and water.
  • Let stand at least one hour and up to several hours, stirring occasionally.
  • Cook and stir till slightly thickened and bubbly, about 5 to 10 minutes at a good boil.
  • Add 1 TBS butter and set aside.
  • Pre-heat oven to 350 degrees.
  • Put the 1/2 cup butter in a 9 X 13-inch glass baking dish and put the dish in the preheating oven.
  • While the butter is melting, mix the batter by combining flour, baking powder, salt, sugar and milk.
  • When the butter is completely melted, remove the pan and pour the batter into the melted butter.
  • The batter will immediately begin to cook, which is what you want.
  • Carefully spoon the cherry mixture evenly over the batter.
  • Return dish to oven and bake for approximately 20 minutes, or until batter sets and is browned.
  • As the cobbler cooks, the batter will begin to rise up around the cherry mixture.
  • Serve warm (or at room temperature) with vanilla ice cream, if desired.
