ZEBRA CAKE III
This easy-to-make icebox cake seems to be as popular today as it was 50 years ago.

Steps:
- Beat cream in a large glass or metal mixing bowl with an electric mixer. Gradually add confectioners' sugar and vanilla extract, continuing to beat until the cream holds stiff peaks. Lift your beater or whisk straight up: the whipped cream should form a sharp peak that holds its shape.
- Spread a generous teaspoon of whipped cream on each cookie. Press cookies together to make 3-inch stacks.
- Spread a 1-inch wide line of whipped cream down center of a serving platter. Assemble cookie stacks into a log on platter following the line of whipped cream.
- Frost cookie log with remaining whipped cream and sprinkle with grated chocolate.
- Cover tightly and refrigerate overnight.
- To serve, slice diagonally to create striped pieces.

My family has been making this dessert for over 80 years. It was first introduced by Nabisco in 1929 as "Chocolate Wafer Icebox Cake". Steps:
- 1. Combine whipped cream and vanilla in a glass bowl. Beat with mixer until stiff peaks form.
- 2. Spread just a tsp. of whipped cream onto each wafer. Stack wafers together. Then stand on edge on serving platter to make log.
- 3. Frost with remaining whipped cream. Refrigerate at least 4 hours or overnight.
- 4. Cut dessert diagonally into 14 slices. Store leftover cake (...if any =) ) in refrigerator.
- 5. Decorate with mini chocolate chips, chocolate shavings, nuts, toasted coconut or (my favorite) just serve as is!

- 2. Spread 1-1 1/2 teaspoons whipped cream onto each wafer; stack, then stand on edge on platter. Frost with remaining whipped cream.
- 3. Refrigerate 4 hours. Cut into diagonal slices to serve.
- 4. Variation: Assemble as directed. Freeze until firm. Wrap tightly. Store in freezer up to 2 months. Remove from freezer about 1 hour before serving. Refrigerate until ready to serve.

- Place whisk attachment and the bowl of the stand mixer in the freezer for 10 minutes. Remove from freezer. Add cream, sugar, and vanilla extract and whip until soft peaks form.
- Cover the inside of the loaf pan with plastic wrap. Spread a thin layer of whipped cream on the bottom.
- Stand up a cookie on each of the short sides of the pan. Stand up 3 cookies, evenly spaced on the other sides of the pan. Spread the cookies with whipped cream and stack then layer in the pan in three rows.
- Cover cookies with whipped cream and cover with plastic wrap. Refrigerate for at least 4 hours or overnight. Cover and reserve remaining cream in bowl.
- Turn cake out onto a platter, remove plastic wrap and cover with remaining whipped cream. Place in freezer for 30 minutes or until solid.
- Slice while frozen and serve at room temperature. Store leftovers wrapped in the freezer or refrigerator.
