4 boneless pork loin chops
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
2 tablespoons butter
2 tablespoons olive oil
1 red onion, sliced very thinly
2 granny smith apples, peeled, cored and sliced very thinly
1/4 cup dry white wine
1 cup heavy cream
1 teaspoon Dijon mustard
1 tablespoon capers
1 large lemon, zest from half of it
salt and pepper
1 pinch dried basil

Steps:

  • Pound the pork chops to 1/4 inch thickness.
  • Mix the flour, 1/2 teaspoons salt, 1/4 teaspoons pepper, and the garlic powder and dredge the chops in this mixture.
  • Melt 1 tablespoons of the butter and 1 tablespoons of the olive oil in a pan and cook the chops until nicely browned on both sides and done.
  • Take the chops out of the pan and keep them warm.
  • Melt the remaining butter and olive oil in the same pan now and sauté the onions for a couple minutes.
  • Then add the apples and sauté until the onions start to get soft.
  • Add the white wine and cook 5-7 minutes longer, stirring occasionally.
  • Slowly add the heavy cream while stirring, and combine well.
  • Add the Dijon mustard, capers, lemon zest, salt and pepper to taste, and dried basil and combine well.
  • Add the chops back to the pan over medium-low heat and cook covered, until heated through and it starts bubbling. Enjoy!

½ teaspoon garlic powder
kosher salt & pepper to taste
1 tablespoon olive oil
2 tablespoons butter
½ red onion (sliced)
2 large tart apples (sliced)
⅔ cup apple cider (or as needed, not apple cider vinegar)
2 teaspoons grainy mustard
⅛ teaspoon cinnamon
2 sprigs fresh thyme

Steps:

  • Season pork chops with garlic powder, salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Brown pork chops about 5 minutes on each side or until browned (be sure not to overcook the pork). Remove from the pan, and set on a plate.
  • Add butter and onions to the skillet. Cook 2-3 minutes or until onions start to soften. Add apples and continue to cook until they begin to soften, about 5 minutes.
  • Whisk apple cider, mustard, and cinnamon, and add to the skillet with thyme. Simmer 2-3 minutes.
  • Add the pork chops, along with any juices on the plate, back into the skillet.
  • Push the pork chops down into the apples. Simmer an additional 2-3 minutes or until the sauce has cooked down slightly and the pork reaches 145°F with a meat thermometer.

1 tablespoon chopped fresh thyme
salt and freshly ground black pepper to taste
4 pork chops
1 large apple - peeled, cored, and thinly sliced
1 tablespoon butter
½ cup apple juice
½ cup heavy cream
1 teaspoon cornstarch

Steps:

  • Combine oil, thyme, salt, and pepper in a shallow bowl. Add pork chops, brush with the marinade, and set aside for 15 minutes.
  • Heat a large skillet over medium heat and cook pork chops until browned on one side, 4 to 5 minutes. Turn and cook until lightly browned on the other side and juices run clear, 4 to 5 minutes. Transfer pork chops to a serving plate, cover, and keep warm.
  • Reduce heat and add butter to the skillet. Add apple slices and cook until they start to change color, 5 to 10 minutes. Transfer apples to the plate with the pork chops and keep warm.

2 stalks celery
1 teaspoon pepper

Steps:

  • Carmilize onion in a few tablespoons each olive oil and butter until lightly brown (8-10 minutes).

salt and pepper (to taste)
2 tablespoons butter
2 teaspoons oil
1 tablespoon butter
2 teaspoons minced garlic
1 cup chicken broth (I used low sodium)
2 tablespoons dijon mustard
1 cup heavy cream
½ teaspoon salt, or to taste
¼ teaspoon cracked black pepper (or to taste)

Steps:

  • Preheat oven to 425 degrees.
  • Generously season pork chops with salt and pepper on both sides.
  • In a large skillet over medium heat, melt butter. Drizzle oil into the pan.
  • Add pork chops to the pan and sear on both sides for 2-3 minutes. Transfer to a plate and cover to keep warm.
  • To prepare the sauce, add butter to the pan. Once melted, stir in garlic for 1-2 minutes until fragrant.
  • Add chicken broth. Whisk in dijon mustard, then cream. Stir in salt and pepper.
  • Return pork chops to the pan, spoon some of the sauce over the pork chops, then transfer to the oven.

six 1-inch-thick loin pork chops (about 2 pounds)
3 Granny Smith or Golden Delicious apples
2 tablespoons firmly packed light brown sugar
2 tablespoons applejack or Calvados
1/4 cup dry white
1/2 cup heavy cream
1/4 teaspoon celery salt
1/8 teaspoon crumbled dried sage

Steps:

  • In a large skillet heat 2 tablespoons of the butter over moderately high heat until the foam subsides, in it brown the chops, patted dry and seasoned with salt and pepper, in batches for 2 minutes on each side, and transfer them to a plate. Pour off the fat from the skillet, add the remaining 1 1/2 tablespoons butter, and in it sauté the apples, peeled, cored, and cut into eighths, with 1 tablespoon of the brown sugar over moderately high heat, turning them for 3 minutes, or until they are golden. Add the applejack, the wine, the remaining tablespoon brown sugar, the cream, the celery salt, and the sage, bring the mixture to a boil, and add the chops with any juices that have accumulated on the plate. Simmer the mixture, covered, for 20 minutes, or until the chops and the apples to a heated platter. Cook the sauce for 1 minute, or until it is thickened, and pour it over the chops and apples.

black pepper
2 tablespoons butter
2 tablespoons oil
3/4 lb sliced fresh mushrooms
1 small red bell pepper, finely chopped
1 small onion, finely chopped
1 tablespoon minced fresh garlic
3/4 cup dry white wine
1 cup chicken broth
1 cup whipping cream
1/4 cup grated parmesan cheese (optional)
3 tablespoons Dijon mustard (can use more or less)

Steps:

  • Season the pork chops on both sides with salt and pepper.
  • Heat the oil and butter in a large skillet, the brown the chops on both sides; remove to a plate.
  • Add in more butter or oil if needed and saute the mushrooms until they have released their moisture and are lightly browned.
  • Add in the onion, bell pepper and garlic; saute for about 3 minutes.
  • Add in the wine, broth and cream and stir with a wooden spoon scraping up any browned bits on the bottom of the skillet; bring to a boil and simmer until slightly reduced and thickened (about 20 minutes).

  • Season the sauce with salt and pepper.

I got this recipe in the mail on a recipe card from some company that wanted me to buy their cookbook...please, I have Zaar! What do I need with their cookbooks...but I sure like this recipe of theirs!
