100g pudding rice
butter, for the dish
50g sugar
700ml semi-skimmed milk
pinch of grated nutmeg or strip lemon zest
1 bay leaf, or strip lemon zest

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Wash and drain the rice. Butter a 850ml baking dish, then tip in the rice and sugar and stir through the milk. Sprinkle in the nutmeg and top with the bay leaf or lemon zest.
  • Cook for 2 hrs or until the pudding wobbles ever so slightly when shaken.

My sisters and I always loved the recipe for rice pudding our grandma made. After she passed away, I took it upon myself to try and find the secret to her rice pudding. It took quite a bit of experimentation, but I finally got it right! And I'm glad to share this easy recipe here. -Margaret DeChant, Newberry, Michigan

1-1/2 cups cooked rice
1/4 cup raisins
2 large eggs
1-1/2 cups whole milk
1/2 cup sugar
1/2 teaspoon ground nutmeg
Additional milk, optional

Steps:

  • Place rice and raisins in a greased 1-qt. casserole. In a small bowl, whisk the eggs, milk, sugar and nutmeg; pour over rice. , Bake, uncovered, at 375° for 45-50 minutes or until a knife inserted in the center comes out clean. Cool. Pour milk over each serving if desired. Refrigerate leftovers.

1 quart milk
½ cup white sugar
¼ teaspoon salt
2 eggs, beaten

1 pinch ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.
  • In a 2 quart saucepan over medium heat, scald the milk and remove from heat. Add the rice, sugar and salt. Mix well and slowly add the eggs, vanilla, and butter. Pour mixture into a 2 quart baking dish. Sprinkle nutmeg on top. Bake for 40 minutes. Stir pudding after 20 minutes.

450ml single cream
zest 1 unwaxed lemon
1 vanilla pod , split
25g caster sugar
100g short-grain pudding rice
25g butter , diced

Steps:

  • Heat oven to 140C/120C fan/gas 1. Put the milk, cream, zest and vanilla pod in a saucepan. Gently bring to a simmer, then stir in the caster sugar and rice.
  • Transfer mixture to a shallow ovenproof dish and dot the butter on top. Bake for 30 mins, then stir well and cook for 1 hr more until the pudding is soft and creamy, and a golden skin has formed on top. The depth and type of dish you use will affect the cooking time, so if the pudding seems too loose, return to the oven and check every 10 mins or so. Once cooked, rest for 10 mins before serving.

5 cups whole milk
3/4 cup short-grain white rice (if unable to locate, try medium-grain white rice in the Spanish foods section of store)
1/8 teaspoon salt
1/4 cup granulated white sugar
1/4 cup vanilla extract
3/4 cup golden seedless raisins pre-soaked in warm water
2 egg yolks
1 cup heavy cream
2 tablespoons butter
Ground cinnamon, optional

Steps:

  • In a medium, heavy-bottomed saucepan, add milk, rice and salt. Cook the rice at a low simmer until the rice is tender, do not boil. Once you achieve "simmer," the rice should take around 20 to 30 minutes to be ready, depending on your cooker. Taste the rice to make sure it is tender. Remember to keep stirring so the rice doesn't stick to the bottom. Once the mixture has cooked, remove from heat and add sugar, vanilla, raisins and egg yolks. Keep stirring to incorporate all of the flavors, then let it sit for about 10 minutes. The sugar and vanilla will infuse very quickly, giving a flowery aroma. Add the heavy cream and butter, mixing them well together in the saucepan. Spoon into ramekins or individual serving bowls. Rice pudding can be served warm, room temperature or chilled. This particular recipe benefits from setting overnight in the refrigerator. Sprinkle with cinnamon, if desired.

1 cup pudding rice or 1 cup short-grain rice
3/4 cup superfine sugar or 3/4 cup caster sugar
2 1/2 cups whole milk, plus
2 -3 tablespoons extra whole milk, for mixing
2 tablespoons cornstarch
3 tablespoons rose water
ground cinnamon, for sprinkling
fresh rose petals, for garnish (not dried) (optional)

Steps:

  • Place the pudding rice in a large non-stick saucepan. Pour in enough water to cover the rice one inch above the level of the rice.
  • Bring to a boil and cook until rice is tender. Do not cover.
  • Add the milk and sugar.
  • Return to a boil and then reduce the heat and simmer. Do not cover.
  • Mix together the cornstarch with a tablespoon or two of milk to form a slightly runny paste.
  • While stirring the rice, slowly add the cornstarch mixture.
  • Mix in the rosewater and bring to a boil. Do not cover.
  • Remove from heat and transfer the rice into a large glass serving bowl or 6 individual ramekins.
  • Cool at room temperature and then refrigerate for at least one hour.
  • Dust with cinnamon before serving and garnish with rose petals (if desired).
