1 3/4 cups Instant Chocolate Pudding Mix, recipe follows
2 cups milk
2 cups heavy cream
1 teaspoon vanilla extract
3 ounces Dutch-processed cocoa, approximately 1 cup
2 ounces cornstarch, approximately 1/2 cup
6 ounces confectioners' sugar, approximately 1 1/2 cups
1 1/2 ounces instant non-fat dry milk, approximately 1/2 cup
1 teaspoon salt

Steps:

  • Place 1 3/4 cups of dry pudding mix into a medium saucepan. Add milk and heavy cream and whisk to combine. Over medium heat, bring mixture to a boil, continuously whisking gently. Reduce heat to low and cook for 4 minutes while continuing to whisk. Remove from heat and stir in vanilla. Pour the mixture through a sieve and into individual dishes or a 1 1/2-quart serving dish. Cover the surface of the pudding with plastic wrap. Place in the refrigerator to chill completely before serving, approximately 4 hours.
  • In a large bowl or plastic container with a lid, combine the cocoa, cornstarch, sugar, instant non-fat dry milk, and salt. Store in an airtight container in the refrigerator for up to 1 month.

You don't need a box! Can be doubled. I have also substituted low fat milk and half and half. Feel free to experiment with milk substitutes if you like. The corn starch really "sets" this pudding.

3/4 cup granulated sugar
6 tablespoons unsweetened cocoa powder (like Droste)
1/4 cup cornstarch
1 pinch salt
1 1/2 cups milk
1 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • In a heavy-bottomed saucepan, stir together granulated sugar, cocoa, cornstarch and salt Slowly pour in 1 ½ cups milk, stirring or whisking to create a lump-free mixture Stir in 1 cup heavy cream.
  • Place saucepan over medium heat and, stirring gently and continuously scraping bottom and sides of pan, bring mixture to a boil (boil 1 minute) Remove from heat.
  • Stir in 1 teaspoon vanilla extract.
  • Pour pudding into stemmed glasses or custard cups or other container.
  • Chill at least 1 hour.

Pastry for single-crust pie (9 inches), see below
1/3 cup sugar
1/4 cup cornstarch
2-1/2 cups half-and-half cream
4 large egg yolks
6 ounces semisweet chocolate, finely chopped
3 tablespoons Cognac or brandy
1 teaspoon vanilla extract
TOPPING:
1 cup heavy whipping cream
1 tablespoon Cognac or brandy
1 teaspoon confectioners' sugar
Baking cocoa

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice., Bake at 400° for 20 minutes. Remove foil and weights; bake 10-12 minutes longer or until golden brown. Cool on a wire rack., In a heavy saucepan, mix sugar and cornstarch. Whisk in cream. Cook and stir over medium heat until thickened and bubbly. Remove from the heat. In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to the pan, whisking constantly. Cook and stir over low heat 1 minute longer. Remove from the heat; stir in the chocolate, Cognac and vanilla until chocolate is melted. , Transfer to a clean bowl; press waxed paper onto surface of filling. Cool filling to room temperature. Spoon into crust. Refrigerate, covered, until cold, about 4 hours., For topping, in a small bowl, beat cream until it begins to thicken. Add Cognac and confectioners' sugar; beat until soft peaks form. Spread over pie. Dust lightly with cocoa.

1/3 cup unsweetened Dutch-process cocoa (spooned and leveled)
1/4 cup cornstarch
1/4 teaspoon salt
2 1/2 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
4 ounces bittersweet chocolate, chopped, plus shavings

Steps:

  • Place a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, whisk together sugar, cocoa, cornstarch, and salt. Gradually whisk in milk, taking care to dissolve cornstarch. Whisk in egg yolks.
  • Whisking constantly, heat over medium until the first large bubble sputters, about 8 minutes. Reduce heat to low; cook, whisking, 1 minute. Remove from heat; immediately pour through sieve into bowl. Add butter, vanilla, and chocolate; stir until smooth.
  • Place plastic wrap on surface of pudding (to prevent a skin from forming); chill at least 3 hours (or up to 3 days). To serve, whisk until smooth; divide among serving cups, and garnish with shavings.

I got this recipe at a class I am taking at Whole Foods. Make sure the family does not see you making it - they will never guess it is healthy. It is really tasty. We estimated 8 1/2-cup servings, but be prepared to be asked for seconds. Prep time does not include chilling time.

1 cup pitted dates, packed
2 1/2 cups almond milk or 2 1/2 cups coconut milk
1/4 cup unsweetened cocoa powder
1/2 teaspoon salt
1 ripe avocado
1 teaspoon vanilla

Steps:

  • In a blender, pour the hot water over the dates and let them stand 10-15 minutes or so to soften. (you can use a hot non-dairy milk, but it tasted just great using only water).
  • After they have soaked, add the flesh of the avocado and all remaining ingredients. Blend on high, scraping down sides as necessary, until smooth.
  • You can eat it warm, but it tastes best if you can refrigerate it for 2 to 3 hours in an airtight container. Nice with raspberries on top. You can also freeze to make fudgiscles, we were told.

2 cups skim milk
1/3 cup sugar
3 tablespoons unsweetened cocoa
3 tablespoons cornstarch
1 1/2 tablespoons margarine
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1 tablespoon sliced almonds, toasted (optional)

Steps:

  • Place milk in a 1 1/2 qt casserole dish. Microwave uncovered on high for 3 minutes or until milk is hot but not boiling.
  • Combine sugar, cornstarch, and cocoa and stir into hot milk.
  • Microwave uncovered on high for 3 minutes or or until thickened, stirring after 1 1/2 minutes.
  • Add margarine and extracts and stir well. Refrigerate for about an hour. Top with almonds.

  • In the top of a double boiler combine the cornstarch and sugar. Slowly begin to whisk in the milk, making sure to scrape the bottom and sides with a heatproof spatula incorporating the dry ingredients. Place over gently simmering water and stir occasionally, scraping the bottom and sides. If lumps begin to form use a whisk to beat smooth as necessary. When the mixture begins to thicken (about 15-20 minutes) and coats the back of the spoon, add the chopped chocolate. Continue to stir for about 3-4 minutes, or until the pudding is smooth and thickened. Remove from heat and stir in the vanilla. Strain through a fine-mesh strainer and pour into serving bowl.
  • Place plastic wrap on top of the pudding and smooth it gently against the surface. Refrigerate for at least 30 minutes, or up to 3 days.

Transfer the pudding to six 6-ounce ramekins and refrigerate until chilled. (If you're not in a hurry, press a piece of plastic wrap directly onto the surface of the pudding in the bowl and refrigerate.) Serve with lightly whipped cream.
