A super fast, super easy to make cookie made with chewy oatmeal, rich cocoa and creamy peanut butter. They're perfectly fudgy and always just too good to resist! A childhood favorite that I'm still making all the time.

1/2 cup (113g) salted butter
1 3/4 cups (350g) granulated sugar
1/3 cup (32g) unsweetened cocoa powder
1/2 cup (120ml) milk
1 tsp vanilla extract
2/3 cup (160g) creamy peanut butter
3 cups (275g) quick oats ((don't use old fashioned oats))

Steps:

  • Line two baking sheets with parchment paper or set out approximately 29 cupcake liners.
  • In a 2.5 to 3 quart medium saucepan combine butter, sugar, cocoa, and milk.
  • Set over medium heat, and cook stirring frequently until it reaches a full boil.
  • Allow mixture to boil 60 seconds without stirring.
  • Remove from heat, immediately add in vanilla, peanut butter and quick oats.
  • Stir mixture until well combined then, using a medium (2 Tbsp) cookie scoop or two spoons drop mixture onto lined baking sheets or into cupcake liners.
  • Allow to rest at room temperature until set, about 20 - 30 minutes (to speed up setting refrigerate).
  • Store cookies in an airtight container at room temperature.

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

1/2 cup sugar
1/2 cup powdered sugar
1/2 cup milk
1/4-1/2 cup unsweetened cocoa powder (your choice)
1/2 cup peanut butter
1/2 cup butter
1 teaspoon vanilla
2 -3 cups oats

Steps:

  • Combine all the ingredients in a saucepan except for the vanilla and oats.
  • Bring mixture to a boil. Boil until the bubbles are shiney (about two minutes after boiling starts).
  • Remove from heat and put mixture into a mixing bowl because it will continue to cook in the pan.
  • Add the vanilla and oats and mix until oats are coated.
  • Spoon onto wax paper. Let cookies rest until hardened (best results when left to rest in refridgerater with wax paper placed on cookie sheet). Once cookies have hardened, you can now remove them from the wax paper and put them in a container of choice and youre ready to enjoy them.
