- Put the coco lopez, ice, and pineapple juice into a blender. Blend for 30 seconds (or until your blender breaks up most of the ice). Then add the pineapple chunks and blend for another 10 seconds. Enjoy!

VIRGIN PIñA COLADA RECIPE
Steps:
- Gather the ingredients.
- Place frozen pineapple chunks and ice in a blender .
- Pour pineapple juice and coconut milk over top. Add brown sugar, if using. Puree until smooth. Taste to test the sweetness and add more sugar, if needed.
- Pour into glasses and garnish with fresh pineapple wedges or a maraschino cherry.

This is a recipe I made up many years ago. Everytime I made this people raved for days. I have given the recipe to many friends. And they have given it to their friends.

Steps:
- Preheat oven to 350 degrees F.
- Spray pan with baking pan spray. You must use baking pan spray or oil and flour to prevent sticking.
- Mix all ingredients except chips. Mix chips.
- Bake in bundt pan for 35 minutes or until toothpick comes out clean.
- Let it cool. Then take it out of the pan. It gets stuck to the pan sometimes but it is very good anyway. Any suggestions would be great also.
- Optional: Top with glaze or powdered sugar. It is very sweet so it is not really needed.
VIRGIN (NON ALCOHOLIC) PINA COLADA
This is just a variation of some of the other pina colada recipes i have seen on here. It has mostly the same ingredients and all, and probably tastes the same, but I just made it to suit our taste. I am just posting it so that I can keep up with it, but everyone is welcome to try it and review it. I did however make it for my family's 4th of July party and everyone raved about it. Too bad we ran out of it. :D

Steps:
- To make a mock rum syrup, put the dark brown muscovado sugar and 200ml water in a saucepan, stir well and heat gently until the sugar has dissolved. Add a few strips of skin from the pineapple, add the black peppercorns, cloves and a cinnamon stick, then bring to the boil. Turn off the heat and leave to infuse until cold. Strain into a jug and set aside in the fridge until needed. Will keep for up to three days.
- Pour the pineapple juice into a tall glass, and add the coconut milk and lime juice. Stir gently. Fill up the glass with a handful ice then slowly add 25ml of the syrup so it sinks to the bottom. Garnish with pineapple leaves and a tinned cherry.
