MARVELOUS MEATLOAF
I just kind of made up this meatloaf from combinations of several recipes. It is so good. Even my picky son said it was good.

Steps:
- Set oven to 350°F.
- Prepare a 9 x 5-inch baking pan and a baking sheet covered with foil to place underneath to catch any drippings.
- In small mixing bowl add the eggs, milk, garlic, Worcestershire sauce & Garlic Plus seasoning, stirring constantly until blended well.
- Using a large mixing bowl, dump in the mixed ingredients from the small bowl and add the diced onion, corn flake crumbs and chili sauce, mixing well.
- The apple cider vinegar, brown sugar and ketchup are for the sauce. DON'T mix them in with meatloaf.
- Last, using clean hands mix the beef and pork into the bowl, continuing until all ingredients are well combined.
- Pack the mixture into prepared pan.
- Place the pan on a foil-lined baking sheet to catch any spills.
- Bake for 1 hour.
- While baking, mix together the apple cider vinegar, brown sugar and ketchup for the sauce.
- After the 1 hour of baking, remove the meat loaf (at this point you can carefully drain off some of the fat if desired) and spread the sauce over the top.
- Place back in the oven and bake for another 20-30 minutes, or until the meat loaf is pulling away from the sides of the pan. (Meatloaf should be 140°F at centre.).
- Enjoy!

MOMMA'S MMM-MMM-MAGNIFICENT MEATLOAF
I've never been a big meatloaf fan but I like this recipe. My family raves about it! I think the onion, mushroom, cheese and bacon combination really makes it stand out from your ordinary meatloaf!

MOM'S MEATLOAF
Steps:
- Put ground meat in a large bowl. With your fist, push a bowl shape in the middle of the ground meat. Take a handful of crackers and crumble them by hand into the bowl shape in the beef. Beat the eggs and add them on top of the crackers, then pour in the milk. Season with a few shakes of salt and pepper and mix everything together with your hands.
- Sauté peppers and onions in a small pan with about a teaspoon of butter or olive oil until just tender, about five minutes. Add about a third of this to the meatloaf mixture and set the rest aside for the gravy.
- In a separate bowl or plate, crush a generous handful or so of the crackers. Form two large or three small loaves out of the meatloaf mixture and roll each in crushed crackers to coat. Melt about a teaspoon of butter in a large, deep pan and brown meatloaves over medium heat for about ten minutes. Flip each loaf with a long spatula to brown the other side, covering with lid both times.
- While loaves are browning on the second side, sauté sliced mushrooms in a small pan in a teaspoon of butter or olive oil for about five minutes. In a medium-sized pot, combine a large can of diced tomatoes, a jar of your favorite prepared spaghetti sauce, the mushrooms, and the rest of the sautéed peppers and onions. Stir and let simmer for a few minutes, then add to meatloaves. Cover pan, turn heat down to low, and let loaves cook through, about an hour. Serve with blanched green beans and white rice.

Steps:
- 1. Preheat the oven to 425°F.
- 2. Combine all the ingredients with your scrupulously clean hands. Arrange in a standard 9 1/4 by 5 1/4 by 2 3/4-inch loaf pan lined with oiled aluminum foil and bake for 30 minutes.
- 3. Reduce the oven temperature to 350°F and continue to bake 30 minutes longer, basting with water as necessary. The meat loaf is done when an attractive brown crust has formed on top and the juices run clear.
- 4. Let the meat loaf stand for 10 minutes. Then grasp the top of the aluminum foil at both ends of the loaf and pull it out of the pan and onto a serving platter. Raise the loaf off the foil with a spatula and slip out the foil.
- 5. Serve with ketchup and/or the hot sauce or chutney of your choice. Like all meat loaves, this one is excellent eaten at room temperature.

MARVELOUS MEATLOAF TOPPING
Try on grilled burgers or chicken, too! Makes about 1/4 cup. From the 1995 "Heart Healthy Cookbook" of delicious healthy recipes, Edina, MN. This is very similar to the topping I use on my own meatloaf I have posted (recipe #53831), except it uses ground nutmeg. I can't wait to give it a try.

MY MARVELOUS MEATLOAF
I make a really good meatloaf!!! And I credit my meatloaf to food network stars such as Tyler, Rachel and Guy for starters...I used to watch them cook all the time...and one thing alot of them do is saute or caramelize their onions before adding to the meat...it adds flavor and moisture...mmm I hope you like this recipe and I really hope I don't leave anything out...I do this from my head every time I make it, so it's a lil different everytime too lol Bare with me...

Steps:
- In a small bowl, pour milk over bread and set aside.
- Drizzle olive oil in a skillet, heat to to a med high and add mushrooms and onions, season with salt and pepper, saute until caramelized 5-8 minutes, stir in garlic. Set aside to cool. I pour out onto a dinner plate and spread around so it cools faster.
- Squeeze milk from bread and crumble into a large bowl, disgard milk. Add meats, mushroom mixture, worcetershire sauce, eggs, cheese, 1 1/2t salt and 1/2t pepper and mix well. Divide mixture among 2 large loaf pans. Bake at 375 for 45 min.
- Mix together brown sugar and ketchup divide and spread over top each loaf, I like to drain fat off loafs before adding ketchup topping. But not needed. Then put back in oven another 15-20 min. Remove from oven...let rest 10 min. then remove from pan onto a platter, I use 2 flipper type spatulas, one on each end to lift out of the pans.
- I've also done many little things to this meatloaf: ~add cooked wild rice and crasins ~add crumbled blue cheese ~topped with cocktail sauce instead of the ketchup mixture...(cocktail sauce is mainly ketchup and horseradish) ~added thyme and shredded swiss ~added smoked paprika ~added spinach and artichoke ~I have even shaped the meat mixture into 8 lil loaves, place in a 9x13 pan, and poured a large jar of sauerkraut over top then baked it...toward the end sprinkle with shredded swiss and bake until golden... ~added a small can of italian tomato paste to mixture
