The directions are probably for seasoned biscuit makers. This is the way he explained it to me and frankly, I couldn't make biscuits with these directions LOL. Thats why he makes the bread.

Steps:
- cut butter into flour
- add milk stir until blended.
- turn out & kneed 5 to 7 times.
- roll to 1/4 inch thick.
- punch out 10 3 inch biscuits.
- spray a pan with the cooking spray and place biscuits in pan touching eachother.
- bake for 8 minutes on 500°F.

RACHEL'S FAMOUS HOMEMADE BISCUITS
My husband and my brother-in-law alerted me that this recipe was not included in my cookbook entitled "Miss Rachel's Heirloom Recipes". (Miss Rachel is my MIL) I had to fix that right away! BIL says that these biscuits and were served on special occasions when he and his brothers were growing up, such as times when they left for college or went on trips. He also says that Rachel learned how to make these biscuits from watching her mother, who must have learned from HER mother, and so on.

Steps:
- Place the flour and shortening in a large bowl.
- Using a pastry cutter, a fork, or your fingers, mix the flour and shortening into pea-sized morsels.
- Add the milk to the flour and shortening mixture and combine, using a fork. Mix a minimum number of strokes, or for for about 15 seconds.
- Place the dough onto a hard surface sprinkled liberally with flour.
- Using floured hands, knead the dough a few times. Do not over-knead.
- Sprinkle the dough with flour and, using a rolling pin, roll it out to the desired thickness, thin for crispy biscuits and thick for more doughy biscuits.
- Use a cookie cutter cut out the biscuits and place them on an ungreased cookie sheet about 1 inch apart. Keep the cookie cutter well-coated with flour to prevent sticking.
- Remaining dough can be used to make stickies (Recipe #.).
- Bake at 450* for 12 to 13 minutes or until golden brown.

BEST BUTTERMILK BISCUITS
I found a recipe in the 12th Edition of the Better Homes and Gardens cookbook and modified it a bit to suit my liking. I served them along side a hearty beef stew. My husband proclaimed they are by far the best biscuits I've ever made. They turned out flaky and buttery and raised so nicely that we could actually peel the layers apart.

- Preheat oven to 450°F.
- In a large mixing bowl, stir together flour, baking powder, sugar, salt and cream of tartar.
- Slice butter into cubes and cut into flour mixture until pea-sized crumbs form.
- Add buttermilk and stir with a fork untl mixture is moistened.
- Turn dough onto a lightly floured surface, kneeding and folding dough until it holds together. Be careful not to handle too much, or the biscuits will become tough and butter will melt.
- With a lightly floured rolling pin, roll dough until 1/4-inch thick. Cut out biscuits with a 2 1/2-inch biscuit cutter and place 1 inch apart on an ungreased baking sheet. Bake for 10 to 12 minutes or until raised and golden brown.
- Serve warm.

OLD-FASHIONED BISCUITS (FROM MY GREAT RECIPE CARDS)
These are really good - but sometimes in my oven 15 minutes is not quite enough so watch closely to make sure they are not underdone and when adding a couple minutes make sure they don't become overdone.

Steps:
- Mix flour, baking powder, baking soda, salt and sugar in a bowl.
- Cut in butter using pastry cutter or use 2 knives.
- With fork stir in buttermilk to make a soft dough (I have used an equal amount of buttermilk powder with added water and it works wonderfully in this recipe.
- Turn out onto lightly floured workspace and knead no more than 10 times to form a ball (if you over do it the biscuits can be tough).
- Roll into a 6" x 6" square.
- Place on ungreased baking sheet.
- Cut into 12 portions but do not separate.
- Bake at 400 F for 15 minutes or until golden brown.
- Serve with butter, honey, jam, or gravy.
HUSBAND'S FAVORITE SAUSAGE BISCUITS AND GRAVY
My Husband Bill is a true Florida Cracker, and he swears that my recipe for Sausage Biscuits and Gravy is THE BEST he has ever tasted anywhere! All this from his Italian Yankee Wife...lol!

- 1. Using a large frying pan, coat bottom with a scant 1/4" Olive oil. Heat oil and add a thin 2" to 2 1/2" Sausage pattie (per person) to the pan. Fry one side of the patty till it is no longer pink, turn it over, and while the other side is browning, cut the sausage pattie into small tidbits. (Photo)
- 2. After the sausage is sufficiently browned, sprinkle white flour over the sausage crumbles and stir around in the pan until a paste like substance is made, and all of the pan's grease(there won't be much), is absorbed. Add milk to the pan (3/4 C per person - approx.), and bring the temperature up to a slow rolling boil, be sure to watch very closley at this point so that the gravy doesn't scorch. Add salt, pepper and garlic powder to taste, while stirring the gravy until it thickens to the desired consistancy, taking care to cook the flour/milk combo for several minutes to get rid of that floury taste! (If gravy is too thin, sprinkle and mix in a little more flour, if too thick, slowly add more milk.)
- 3. Remove from heat and serve sausage gravy over warm biscuits that have been cut in half.(Photo) You can use your favorite biscuit recipe, or buy frozen or bakery biscuits. If you are lucky enough to live in the South, you can most likely find Southern Biscuit Mix in your local grocery stores...it's the very best for sure! ENJOY!
