Steps:
- Preheat oven to 375°F (190°C). I don't line my baking sheet when I make these, but you absolutely can with parchment or a silicone baking mat.
- Cut pears in half, then cut a small sliver off the underside so the pears sit flat when placed upright on the baking sheet. See video above for visual. Using a large or medium cookie scoop or melon baller (or even a teaspoon), core out the seeds. Arrange pears, facing up, on the baking sheet. Sprinkle evenly with cinnamon- feel free to add more cinnamon if you'd like.
- Whisk the maple syrup and vanilla extract together in a small bowl. Drizzle most of it all over the pears, reserving about 2 Tablespoons for after the pears are finished baking.
- Bake pears for about 25 minutes until soft and lightly browned on the edges. Remove from the oven and immediately drizzle with remaining maple syrup mixture. Serve warm with granola and yogurt. Store leftovers in the refrigerator for up to 5 days.

Steps:
- Make the maple-vanilla syrup
- In a small saucepan over medium-low heat, add maple syrup along with the vanilla bean and the seeds scraped from the vanilla bean. Bring to a low boil and simmer for 10 minutes.
- Remove from heat and let sit for 30 minutes.
- Discard vanilla bean and stir in vanilla extract.
- Store in the refrigerator in an airtight container. Keeps for about 2 weeks.
- Make the maple vanilla iced coffee (and be happy)
- Fill a large glass with ice. Pour iced coffee concentrate over the top. Drizzle in maple syrup and add a splash of half-and-half if desired. Stir and serve with a straw.
ORANGE MAPLE PANCAKES & SYRUP
Delicious pancakes, especially when served with the orange maple syrup. I make mine with medium-pulp orange juice and leave out the zest, but feel free to add the orange zest if you have some on hand! This recipe makes quite a few pancakes, which is good because they disappear quickly. Enjoy!

Steps:
- To make the syrup, combine maple syrup, vanilla, orange juice, and zest in a small saucepan over low heat. Remove when hot (do not allow to boil). Keep warm.
- To make the pancakes, combine flour, sugar, baking powder, and salt in a medium bowl. Add milk, orange juice, maple syrup, zest, butter, and eggs. Stir just until combined (little lumps are okay).
- Heat a griddle or a 12- to 14-inch skillet over a medium flame. When hot, brush lightly with vegetable oil. Using a 1/4-cup measure, pour batter onto hot griddle, making a few pancakes at a time. Cook until big bubbles form on top and edges are golden. Flip with a spatula and continue cooking until undersides are also golden.Transfer serving plate.
- Repeat with remaining batter, brushing griddle with additional oil if pancakes begin to stick. Serve warm with butter and orange-maple syrup.

VANILLA SNOW WITH HOT MAPLE SYRUP
Steps:
- In a small saucepan bring the water, sugar and vanilla bean to a boil. Once it's boiled, pour into a shallow 9 by 13-inch glass baking dish and let cool to room temperature. Place in the freezer and freeze solid, at least 6 hours or overnight. To serve, scrape the frozen vanilla ice with a spoon to shave it. Place shaved ice in bowls that have been in the freezer. In a small saucepan, bring the maple syrup to the softball stage, 240 degrees F. Immediately take off the heat and drizzle over the vanilla ice. It will slightly harden and become chewy. You can also roll up the syrup on a lollipop stick.

MAPLE SYRUP SUBSTITUTE: 5 ALTERNATIVES FOR FLAVOR & TEXTURE
From foodchamps.org
- Honey. Here’s a fun fact for you: during WWII, people had to ration food so more supplies could go to the American troops. Therefore, people substituted sugar in some foods by using maple syrup or honey instead.
- Sugar (White or Brown) Using sugar as a sweet maple syrup substitute goes without saying. It’s especially nice if you’re looking for a real sweet treat and don’t want to worry about being healthy for one meal.
- Molasses. If you require a bit of a darker, more powerful sweetener, molasses might be worth a try. Molasses is formed through boiling sugar beets or refined sugar, creating a sweetener.
- Corn Syrup. You may recoil at the idea of eating corn syrup, but it’s pretty similar to refined sugar. It’s created by processing cornstarch into a sweetener and contains about the same amount of calories as sugar.
- Chocolate or Caramel Ice Cream Syrup. Using chocolate or caramel ice cream syrup can turn an otherwise drab breakfast into a fun dessert. It also takes no preparation.
