HOAGIE ROLLS

Hoagie, hero, sub, grinder, whatever you call your sandwich, this is a great roll for building your masterpiece.

Number Of Ingredients 7

1 packet (2 ¼ teaspoons, 7g) dry yeast
1 tablespoon granulated sugar
1 ½ cups (12 oz, 360ml) warm water
3 cups (15 oz, 420g) unbleached all purpose flour
1/2 cup milk, scalded and cooled to room temperature
1 1/2 cups (7.5 oz, 210) unbleached bread flour
2 teaspoons table salt

Steps:

  • In a large mixing bowl or in the bowl of a stand mixer, combine the yeast, sugar and the water. Add 2 cups of the all purpose flour. Mix with the paddle on low speed until it forms a thick batter. Cover the bowl and set aside for 30 minutes.
  • Add the milk, bread flour and salt and mix to combine. If using a stand mixer, switch to the dough hook. With the mixer running, add the remaining cup of all purpose flour. Knead the dough for 5 minutes until it is smooth and elastic. If mixing by hand add the flour using a wooden spoon and/or a plastic bowl scraper and knead on a floured surface.
  • Place the dough into a lightly oiled bowl, turn once to coat the dough. Cover the bowl and set it aside at room temperature for 1 - 1 1/2 hours or until doubled in size. Turn the dough out of the bowl and knead briefly.
  • Return the dough to the bowl. Cover the bowl tightly, refrigerate overnight. (see note)
  • In the morning, take the dough out of the refrigerator. Generously sprinkle two half sheet pans with corn meal.
  • Turn the dough out onto a lightly floured surface. Roll the dough back and forth to form a 12" log. Fold the two ends into the middle then roll back and forth to form a 12" log again. If at any point the dough springs back too much you can give it a 10 minutes rest then continue. Cut the log into 6 equal portions.
  • On a lightly floured surface, pat a piece of dough into a 6" oval. Tightly roll the dough from the long side to form a 6" cylinder. Pinch the seam tightly. Using flat hands roll from the center out to form a 10" long roll. Let your hands go over each side to taper the ends of the roll. Set the roll onto one of the prepared pans. Continue forming the other rolls and place 3 on each pan.
  • Cover the pans with a damp kitchen towel and set aside in a warm place to rise until doubled in volume (about 1 hour). Meanwhile Preheat the oven to 450°F.
  • To create steam in the oven, place a small pan onto the floor of the oven to preheat. If you have them, you can put lava rocks or whiskey rocks into the pan to preheat as well.
  • When the rolls are ready to bake brush them lightly with water. Place the trays into the oven. Pour a 1/4 cup of warm water into the preheated pan on the floor of the oven and immediately close the oven door.
  • Bake until the rolls are golden brown, about 15 minutes. Turn the trays after 10 minutes to promote even browning. Cool completely on a wire rack before slicing.

When it comes to sub rolls, I prefer mine light and fluffy. I make up a big batch of these and freeze them for later use.

5 teaspoons dry active yeast (2 pkgs)
1/4 cup sugar
2 cups water, blood warm
3 tablespoons butter, melted
2 teaspoons salt
6 -7 cups all-purpose flour
cornmeal
1 egg white
sesame seeds (optional)

Steps:

  • Dissolve sugar in water and add yeast to proof. Rest one to two minutes.
  • Melt butter and, along with the salt, stir into yeast mixture.
  • Mix in flour, 1 cup at a time until desired consistency is reached (this dough should not be terribly stick to the touch, but should have plenty of "give" and not be too tough).
  • Knead until VERY well developed (important!). Your dough is finished when you can tear a small piece off, roll into a ball and stretch to form a nearly transparent "window" between your fingers without it tearing.
  • Cover with plastic wrap and let stand until doubled in bulk (approx 40 minutes).
  • Lightly dust a small amount of corn meal over well-greased pans, roll your dough into long, thin "logs" and place about 3" apart on the pans. Slash each loaf every inch and a half with a knife, brush with egg white and sprinkle with sesame seeds if desired.
  • Let double in size.
  • Bake in a 400°F oven until golden brown.

2 (1/4 ounce) packages active dry yeast
3 cups water, divided (110-115 degrees)
2 tablespoons sugar, divided
1/4 cup vegetable oil
1 tablespoon salt
8 -8 1/2 cups all-purpose flour

Steps:

  • In a mixing bowl, dissolve the yeast in 1/2 cup warm water add 1 T. sugar and then let stand about 5 minutes.
  • Add remaining water and sugar. Beat in oil, salt and 4 cups flour until smooth. Stir in enough flour to form a soft dough.
  • Turn onto a floured board. Knead until smooth and elastic for about 6-8 minutes.
  • Place in a greased bowl turning once to grease the top.
  • Cover and let rise 45 minutes.
  • Punch dough down. Turn onto a lightly floured board, divide into 18 pieces.
  • Shape into an oval.
  • Place 2 inches apart on a greased baking sheets.
  • With scissors cut a 1/4-inch slash across the top of each.
  • Cover and let rise 20 minutes.
  • Bake at 400° for 13-18 minutes until golden brown.
  • Remove to wire racks to cool.

Quick and easy, but oh so good! A family favorite. I prefer homemade Italian Dressing (my variation of Recipe #20158, see my review there) but others in the family prefer store bought.

4 slices ham
4 slices turkey (optional)
16 slices hard salami
24 slices sandwich size pepperoni
4 -8 slices provolone cheese
Italian dressing

Steps:

  • Toast open sub rolls under the broiler until lightly browned.
  • Top each roll (covering both sides) with 1 slice ham, 1 slice turkey (optional), 4 slices hard salami, 6 slices pepperoni and 1-2 slices provolone cheese.
  • Place back under the broiler and heat until the cheese it brown and bubbly.
  • Remove from oven and top with Italian Dressing or mayo. Serve with chips and carrot sticks.
