The BEST easy Stir Fry Sauce Recipe! Use this simple homemade sauce in your favorite stir fry recipes - chicken, beef, shrimp, or vegetable stir fry. This healthy sauce is made with fresh ginger and garlic; you can make it spicy or not.

½ cup low sodium chicken broth (or vegetable broth)
⅓ cup low sodium soy sauce
2 tablespoons honey
2 teaspoons sesame oil
2 tablespoons minced fresh ginger
3 cloves garlic (minced)
1 tablespoon cornstarch
crushed red pepper flakes, sriracha or sweet chili sauce (optional, for spicy sauce)

Steps:

  • Combine all ingredients in a jar or bowl. Whisk or shake (with a tight fitting lid on the jar) until fully combined.
  • Use immediately or store in an airtight container in the refrigerator for up to one week.
  • To use stir fry sauce to make stir fry: Heat 1 tablespoon of oil in a large skillet or wok. Add 1 pound of protein (cubed chicken, sliced beef, shrimp, tofu, chickpeas, etc.) and cook until browned and almost cooked through. Transfer the protein to a clean plate. Add 1 more tablespoon of oil and 6 cups of chopped vegetables (broccoli, snow peas, carrots, bell peppers, zucchini, asparagus, etc.) to the pan. Stir fry until crisp-tender. Return your protein to the pan. Add 1 cup of stir fry sauce (this full recipe) and cook for 2 to 3 minutes, until the sauce has thickened, stirring to evenly distribute the sauce. Serve over cooked rice.

A basic stir fry sauce that I've been using for years. I got the recipe from my mother, but I don't know where she got it from. I make no claim to authenticity.

2 -3 tablespoons cornstarch
1/4 cup brown sugar, packed
1/4 teaspoon ground ginger (or a bit of fresh minced ginger)
2 cloves garlic, minced
1/2 cup soy sauce or 1/2 cup tamari soy sauce
1/4 cup cider vinegar or 1/4 cup white vinegar
1/2 cup water
1 1/2 cups beef broth or 1 1/2 cups chicken broth (I use chicken broth if my stir fry will have chicken, etc.)

Steps:

  • Combine all ingredients in a large glass jar with a lid.
  • Screw lid on.
  • Shake well.
  • Can store in fridge up to 2 weeks.
  • Shake well before using.
  • To use sauce: stir fry your vegetables and meat as desired, add appropriate amount of sauce, bring to a boil, boil for 1 minute or until slightly thickened.
  • Serve.

ALL-PURPOSE STIR-FRY SAUCE (BROWN GARLIC SAUCE)

Adapted from Martin Yan's Chinese Cooking for Dummies. This is my favorite stir-fry sauce. It makes enough for two meals. Having extra on hand makes for a quick meal. My son will actually eat vegetables he can dip in the sauce! WARNING about the amount of soy sauce. When I used Kikkoman soy sauce, I found this sauce far too salty. I now use Angostura, which is much lower in salt. When adding soy sauce, start with less than half the amount and slowly add more to taste. Using vegetable broth makes this vegetarian. Yield: 1 3/4 cups (couldn't get that amount entered)

1/3 cup rice wine
3 1/2 tablespoons sugar

Steps:

  • In a bowl, combine soy sauce, broth, rice wine, sugar, sesame oil and white pepper. (See note in intro about the soy sauce).
  • Dissolve the cornstarch in 1/4 cup water.
  • Heat a pan over high heat; add the cooking oil, swirling to coat; add the garlic and ginger; cook, stirring, until fragrant, about 15 seconds.
  • Add the soy sauce mixture; bring to a boil.
  • Reduce heat to medium and cook for 1 minute.
  • Add the cornstarch solution and cook, stirring, until the sauce boils and thickens.

Being a poor vegan college kid, I rely heavily on vegetable (and tofu!) stir fry because it's quick, delicious, pretty healthy, and relatively cheap. After messing around with sauces for about a year, this is the one that I've stuck with. I generally buy whatever veggies are convenient or cheap. My favorites are: broccoli, onion, carrot, red pepper, napa cabbage, mushrooms, baby corn, tofu or seitan, zucchini, etc. Mix & match...pick your favorites. This sauce compliments it all well!

1/4 cup soy sauce
1/4 cup dry sherry
1 teaspoon grated fresh ginger
1 teaspoon garlic, minced
1/8-1/4 teaspoon red pepper flakes, to taste
1 dash Chinese five spice powder
1 cup chicken broth
1/8 cup soy sauce
1/8 cup dry sherry
2 tablespoons cornstarch
1 teaspoon grated fresh ginger
1 teaspoon garlic, minced
1/8-1/4 teaspoon red pepper flakes
1 dash Chinese five spice powder
1 -2 boneless skinless chicken breast
1 cup broccoli floret
1 cup cauliflower floret
1/2 cup carrot, cut in sticks
1/2 cup celery, sliced diagonally
1/2 cup salted peanuts (not dry roasted)
8 ounces fresh mushrooms, sliced
1 bunch green onion, cleaned and cut in 1-inch lengths
2 tablespoons canola oil (for frying)

Steps:

  • Combine all ingredients for the marinade, and prepare chicken in bite sized pieces, either thin strps or chunks. Place chicken and marinade in a ziploc bag and marinate in refrigerator at least one hour.
  • Meanwhile, prep all of your vegetables for stir-frying.
  • Make the sauce by combining the chicken broth, soy sauce, ginger, garlic, and pepper flakes and 5-spice in a small saucepan. Bring to a boil. While this is heating, combine the sherry and cornstarch until smooth. When sauce mixture boils, add the cornstarch mixture and stir until sauce is thick. Keep sauce warm.
  • Heat 1-2 Tbsp oil in wok until nearly smoking hot(I like to add a few red pepper flakes to the oil) and add the peanuts. Fry for 2 minutes, then remove to a small bowl.
  • Add all of the vegetables to the very hot wok and stir-fry until the vegetables are tender crisp. Drain the chicken and discard the marinade.
  • Remove the vegetables to a bowl. Add oil to the wok if necessary and again get it smoking hot. Add the chicken and stir-fry until juices are clear and cooked off.
  • Add peanuts, cooked vegetables, and sauce back in to the wok and stir to coat.
  • Serve immediately over hot cooked rice.
