BEST EVER SPAGHETTI SAUCE
This is my favorite spaghetti sauce recipe. It comes from a freezer cookbook called Once a Month Cooking. This makes alot so plan on freezing about half of the recipe. You can use this sauce on spaghetti, manicotti, veal (or chicken) scallopini, or French bread pizza

Steps:
- Brown beef with diced onion and drain.
- In separate sauce pan mix all other ingredients over medium high heat. Bring to boil.
- Reduce heat add beef and onions. Let simmer. The longer the sauce simmers the better it taste. (We usually simmer for 3-5 hours).
- I almost always end up adding more spices while it cooks to get it just right, so the measurements above are a starting point.

Steps:
- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

MOM'S BEST SPAGHETTI SAUCE
A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

Steps:
- Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
- Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
- After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
- Cool, cover, and refrigerate overnight. The next day, reheat and serve.

DON'S FAVORITE SPAGHETTI SAUCE
This is my husband's favorite spaghetti sauce that he requests frequently. I looked through 17 pages of spaghetti sauce on Zaar and never found one quite like it. It's very simple, tasty and freezes well. We like to add garlic, mushrooms, green bell peppers, basil and Italian sausage to this whenever I have them on hand. Although this is ready in about an hour, I usually let it simmer longer to meld the flavors.

MY FAVORITE SPAGHETTI SAUCE RECIPE

Steps:
- Brown ground beef, onion, and garlic in oil. Drain off grease.
- Put ground beef mixture into large stockpot. Add remainder of ingredients and bring to a boil. Use thyme to your personal taste. I probably use about 1/2-1 teaspoon. You may also use Italian seasoning mix instead of just oregano and omit the thyme.
- After sauce reaches boiling, turn down to simmer for 2-2 1/2 hours, and cook until sauce is thickened. Add more water during this cooking time if necessary.
- This sauce is not really good if you use wine instead of water. Also, use whole canned tomatoes instead of diced tomatoes, because they break down better in the sauce and make it thicker. Just keep mashing them with a wooden spoon as it cooks.

MY GOOD SPAGHETTI
DELICIOUS!! My family loves spaghetti. I have perfected my own recipe by preparing it over a hundred times to get the "just right" taste. We like a lot of sauce, therefore, I only cook 8 ounces of noodles. We like the thin spaghetti noodles. I had to write the recipe down because my granddaughter and her son love it. For this recipe I purchase the leanest ground beef which is 93 percent meat and 7 percent fat. We always have a large piece of crusty buttered garlic bread with our spaghetti.

Steps:
- In a large saucepan, heat vegetable oil and saute onions for 2 minutes. Lift out into a small dish and set aside. (For the garlic lovers, 1 teaspoon of minced garlic may be added to cook along with onions.).
- Brown ground beef and drain. Place onions and ground beef back into saucepan.
- Add spaghetti sauce - (I use Bertolli's Tomato and Basil sauce. I rinse out the jar with the 1/2 cup of water and pour into saucepan.) Continue to add: tomato paste, worcestershire sauce, Italian seasoning, garlic powder, sugar, salt and black pepper.
- Place lid on saucepan and cook on low heat for 30 minutes. While the sauce is simmering, cook noodles according to instructions on box. (I add 1 tablespoon vegetable oil to water to prevent noodles from sticking together and add salt to water.) Cook only to a la dente stage and drain.
- Serve noodles on plate with sauce on top. Serve with buttered garlic bread.
- ENJOY!
MY FAVORITE 'DOCTORED' JAR SPAGHETTI SAUCE
I sometimes use jarred, store-bought spaghetti sauce but just have to make it 'mine'. My favorite is the Gia Russa Brand Traditional Sauce but others will work. This is what I do.....................................

- Saute the garlic in 1 tablespoon of olive oil until aromatic but not browned. Add the butter to melt, then the sauce, basil and spices. Heat thoroughly for about 10 minutes. At this point you can add frozen store bought meatballs and heat till warmed throughtout. Serve over your favorite pasta.
- I prefer Trader Joe's Turkey Meatballs but any brand will do.

JO MAMA'S WORLD FAMOUS SPAGHETTI
My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

Steps:
- In large, heavy stockpot, brown Italian sausage, breaking up as you stir.
- Add onions and continue to cook, stirring occasionally until onions are softened.
- Add garlic, tomatoes, tomato paste, tomato sauce and water.
- Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
- Stir well and barely bring to a boil.
- Stir in red wine.
- Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!

- Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.
