BEST NO-FAIL PRIME RIB (GARLIC HERB CRUST)

Best No-Fail Prime Rib (Garlic Herb Crust) image

This is the best prime rib recipe with a garlic herb crust - the perfect holiday standing rib roast! Watch the video above to see how I make it.

Provided by Lisa Bryan

Categories     Main Course

Time 1h45m

Number Of Ingredients 12

6 pounds prime rib (bone-in (with bones cut off and tied back on))
1/2 cup butter (softened)
6 garlic cloves (minced)
1 tablespoon kosher salt
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
1 teaspoon black pepper
1 onion (quartered (if making the red wine au jus))
1/4 cup drippings from prime rib pan (make sure to separate the fat from the drippings)
2 cups beef broth
1 1/2 cups red wine
Optional: 1 tablespoon cornstarch or arrowroot powder (in a slurry) to thicken

Steps:

  • Remove the prime rib from the fridge 2-3 hours before cooking, and allow it to come to room temperature.
  • Preheat your oven to 450F/230C. In a small bowl, mix together the butter, garlic, salt, thyme, rosemary, and black pepper.
  • After the prime rib has come to room temperature, pat it down with paper towels to make sure it's dry. Then rub the entire outside of the prime rib with the herb butter mixture.
  • Place the prime rib in an oven-safe pan or roasting tray with the bones-side down, fat-side up. Place the onion slices in the pan around the meat, if you're making the red wine au jus. If not, you can omit the onions.
  • Cook the prime rib in the center of the oven for 20 minutes at 450F. It should get a nice sear on the outside. If not, cook it a few minutes longer. Then reduce the temperature of the oven to 325F and continue cooking until the internal temperature reaches 120F (about an hour and a half), for medium-rare. But go by temperature, not time, as it will depend on the size of your prime rib and your oven.
  • Remove the prime rib from the oven and let it rest for 20-30 minutes. You can tent it with aluminum foil to keep it warm. Then, remove the string and bones, and slice it up into thick 1/2" slices.
  • After you've removed the fat from the pan, add up to 1/4 cup of drippings back in along with the beef broth and red wine. If you have leftover herbs, you can toss those in as well.
  • Simmer this for about 15 minutes, or until the liquid has reduced by half. It's meant to be a thin sauce, but if you'd like to add a little bit of a thickener, you can do that as well. Strain the au jus to remove the onion and any browned bits, then drizzle over the prime rib.

PRIME RIB

Prime Rib image

Provided by Michael Symon : Food Network

Categories     main-dish

Time 4h

Yield 6 servings

Number Of Ingredients 7

1 4-bone prime rib, bones and excess fat removed and reserved
4 teaspoons kosher salt
Freshly ground black pepper
4 sprigs fresh rosemary
4 cloves garlic, unpeeled, smashed
4 ounces arugula (optional)
2 teaspoons extra-virgin olive oil (optional)

Steps:

  • Liberally season the prime rib with the salt and some pepper and refrigerate overnight.
  • An hour before cooking, remove the roast from the refrigerator to allow it to come to room temperature.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Put the reserved ribs in a roasting pan bowed-side up (the ribs will be acting as the roasting rack). Scatter any fat and meat trimmings in the pan around the bones. Roast the bones and trimmings for about 30 minutes, or until the fat starts to render.
  • Remove the pan from the oven, put the rosemary sprigs on top of the bones, then top with the prime rib. Put the smashed garlic in the bottom of the pan with the trimmings. Baste the beef with the fat drippings and return the pan to the oven.
  • Cook for 30 minutes and then baste the roast again.
  • Reduce the heat to 350 degrees F and cook until the meat is medium rare (an internal temperature of 125 degrees F to 130 degrees F), about 1 hour, 15 minutes, basting the roast every 30 minutes until it is done. Keep in mind that the roast will continue to cook while resting.
  • Remove the roast from the oven and put it on a cutting board to rest, uncovered, for 20 minutes. Slice the prime rib to the desired thickness and garnish with the arugula and olive oil.

PERFECT PRIME RIB

Perfect Prime Rib image

Complete the perfect night with the Perfect Prime Rib recipe. Our Perfect Prime Rib is seasoned with garlic, rosemary and pepper and drizzled in mushroom gravy, making each forkful even better than the last.

Provided by My Food and Family

Categories     Festive 2018

Time 2h50m

Yield 12 servings

Number Of Ingredients 11

1 bone-in (3-rib) beef prime rib roast (6 lb.)
1 Tbsp. kosher salt
2 tsp. ground black pepper, divided
1/2 cup HEINZ Real Mayonnaise
2 Tbsp. each minced garlic and chopped fresh rosemary
2 Tbsp. GREY POUPON Dijon Mustard
1 cup fresh bread crumbs
1/2 lb. sliced fresh mushrooms
1/4 cup chopped shallots
1/2 cup each dry red wine and fat-free reduced-sodium beef broth
1 jar (12 oz.) HEINZ HomeStyle Savory Beef Gravy

Steps:

  • Remove meat from refrigerator 30 min. before ready to roast. Heat oven to 500°F. Use boning knife to remove rack of rib bones, in one large piece, from meat, carefully cutting along edges of meat to remove the bones.
  • Place rack of bones on center of foil-covered rimmed baking sheet. Combine salt and 1-1/2 tsp. pepper; sprinkle onto meat. Place meat, cut side down, on bones. Roast 20 min.
  • Remove meat from oven. Reduce oven temperature to 325°F. Mix mayo, garlic, rosemary and mustard until blended; spread onto meat. Sprinkle with bread crumbs; press crumbs gently into mayo mixture to secure.
  • Roast meat an additional 1-1/2 hours to 1 hour 40 min. or until meat registers at 135°F for medium-rare doneness (or 145°F for medium doneness) when meat thermometer is inserted into thickest part of meat.
  • Remove meat from oven; cover loosely with foil. Let stand 15 min. (Temperature of meat will continue to rise 5°F to 10°F as it stands.) Meanwhile, cook mushrooms and shallots in large nonstick skillet on medium-high heat 8 to 10 min. or until mushrooms are golden brown, stirring occasionally. Deglaze skillet with wine; cook 3 to 4 min. or until most of the wine is evaporated. Add beef broth, gravy and remaining pepper; stir. Cook and stir 2 to 3 to min. or until heated through.
  • Cut meat into 1/4-inch-thick slices. Serve with the mushroom gravy.

SUE'S PERFECT PRIME RIB

Sue's Perfect Prime Rib image

This makes a delicious, tender prime rib roast. Great for the holidays! Rubs are used to flavor the meat, and are optional.

Provided by Lindas Busy Kitchen

Categories     Roast Beef

Time 1h22m

Yield 4-6 serving(s)

Number Of Ingredients 7

4 lbs rib roast
3 garlic cloves, crushed
1 teaspoon salt
1 teaspoon pepper
1 teaspoon herbs, leaves (tarragon, rosemary, thyme, etc.)
1/4 cup onion, finely chopped
1 cup beef broth

Steps:

  • Combine garlic and herbs, then rub the mixture evenly over the surface of the meat.
  • Roasting:
  • Because rib cuts are more tender, dry heat roasting (no cover and no added liquid) is preferred. Moist heat is used to tenderize tougher cuts of meat, but may also result in greater shrinkage and drier meat.
  • Place meat on a cooking rack, fat side up, in a shallow roasting pan. Do not place meat in a cooking bag, nor place a cover of any kind over the meat.
  • Roast at 350, for 18-24 minutes per pound. Medium-rare (145 degrees final internal temperature), medium (155 degrees internal temperature), and well-done (165 degrees internal temperature).
  • Note:.
  • Over cooking meat will dry it out, and toughen it.
  • Internal temperature of meat will continue to raise 5 more degrees during standing time.
  • Carving:.
  • Allow roast to stand 15-20 minutes before carving.
  • Proper carving will make meat more tender.
  • Slice across the grain of meat.
  • Serve with horseradish and au jus, as desired.
  • Au Jus:.
  • Remove meat from pan, and drain off excess fat.
  • Place pan on top of stove, and add onions. Cook and stir over medium heat 3-5 minutes.
  • Add broth. Stir until meat juices attached to pan are dissolved.
  • Continue to simmer until liquid is reduced to desired strength.
