GRILLED ZUCCHINI
This simple grilled zucchini will be a regular on your summer menu! Perfectly crisp-tender (not soggy!), it's a healthy and fast side dish!

Steps:
- Preheat a gas or charcoal grill to high heat (400 to 450 degrees F). Trim off the ends of each zucchini and cut it lengthwise into quarters so that you have four batons per zucchini. Place on a rimmed baking sheet or on a large baking pan.
- Drizzle the zucchini with olive oil and sprinkle with Italian seasoning (if using), salt, and pepper.
- Place the zucchini on the grill so that one of the cut sides is touching the grates. Grill for 4 minutes, until clear grill marks appear.
- Flip the zucchini over onto the back (peel) side. Grill for 5 additional minutes. At this point, you can flip it to the remaining ungrilled cut side for 1 to 2 minutes if you'd like grill marks on all surfaces (we usually just serve it as is!). Transfer back to the baking sheet or to a serving platter.
- Squeeze the lemon over the top and sprinkle with Parmesan. Enjoy!

- Mix butter, salt, pepper and parmesan cheese together and spread on each half.
- Put butter side up on grill pan on medium heat for 5 minutes.

- Pour olive oil into frying pan and heat on medium to high.

- In a large bowl whisk together the salad dressing with olive oil and minced garlic.

- Cut the Zucchini in half lengthwise (you can also use yellow summer squash).
- Spread butter or margarine on one half of the squash.
- Sprinkle the garlic, cheese's and spices on the other half.

Steps:
- Preheat grill to med/high with propane and until coals are white hot with charcoal.
- Slice zucchini lengthwise into 1/4-1/2 inch slices - you should be able to get 4 good slices out of each zucchini.
- Brush each side liberally with olive oil and sprinkle the Montreal Steak Seasoning using approximately 1/2 Tbsp per side.
- Take butter and place in microwave safe dish and melt in microwave.
- Place on grill and using a grill brush or spoon - brush zucchini side up with melted butter
- Grill about 5 minutes per side - depending on thickness up to 8 minutes per side.
- After flipping brush other side with melted butter.
