CRANBERRY COLESLAW

I love trying new recipes, and my family enjoys most of my "experiments". Salads are always in demand at our house, and this one is fast, festive and refreshing.

Number Of Ingredients 8

1/2 cup mayonnaise
1 to 2 tablespoons honey
1 teaspoon cider vinegar
1/2 teaspoon salt
1/4 teaspoon celery seed
Dash pepper
3 cups shredded cabbage
1/4 cup chopped fresh or frozen cranberries

Steps:

  • In a small bowl, combine the first six ingredients. Place cabbage in a serving bowl. Add mayonnaise mixture and toss to coat evenly. Fold in cranberries. Serve immediately.

This is a light, refreshing side dish. I created it by taking bits and pieces from several different coleslaw and broccoli salad recipes. Enjoy!

16 ounces bagged shredded Coleslaw or 16 ounces broccoli slaw mix
1 bunch green onion, thinly sliced
1/2 cup dried cranberries
1/2 cup chopped pecans
1 cup mayonnaise
1/2 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • In a small bowl,whisk together dressing ingredients.
  • Combine salad ingredients in a large bowl.
  • Pour dressing over salad mixture and toss well to coat.
  • Allow salad to chill for at least 20 minutes before serving.
  • Note: Add dressing to taste. Salad may not require all of the dressing.

1/4 cup skim milk
2 tablespoons apple cider vinegar
16 ounces coleslaw mix
1 cup dried cranberries
1/2 cup pecans, toasted, finely chopped
1/4 cup green onion, finely chopped

Steps:

  • In a large bowl, combine mayo, seasoned salt, milk and vinegar.
  • Add remaining ingredients and toss to coat.
  • Chill, if desired (recommended), or serve at room temperature.

These dressed-up canned cranberries become tart, juicy and a little bit savory thanks to some fresh citrus, thinly sliced red onion and a little flaky salt. With or without whole berries suspended in them? That's dealer's choice, but the rounds will be much easier to slice without them.

2 (14-ounce) cans jellied cranberry sauce
2 tangerines, oranges or blood oranges, peeled and sliced into rounds, seeds removed
1/2 small red onion, thinly sliced
1 lemon, halved crosswise
Flaky sea salt and freshly ground black pepper
1/2 cup mint or parsley leaves (optional)

Steps:

  • Open the cans of jellied cranberries and slice the cylinders into 1/2-inch-thick rounds.
  • Scatter the rounds on a large platter, and top with citrus slices and a little thinly sliced red onion. Squeeze lemon juice over everything, and sprinkle with flaky salt, black pepper and mint, if using.
