EASY NO-BEAN CHILI
Chili, without the beans-just beef, tomatoes, onions, and lots of great spices. Make it ahead, freeze the leftovers, and eat it for days.

NO BEAN BEEF CHILI

Steps:
- Put a large heavy-bottomed skillet over medium-high heat and add the oil. Working in batches, add the beef to the skillet, season with salt and pepper, and cook until it is well browned, 10 to 15 minutes.
- To the slow cooker sleeve, add the onions, jalapenos, 1 tablespoon chile powder, cinnamon, red pepper flakes, garlic, and strained tomatoes (reserve the juice). Add the seared beef to the slow cooker. Pour the reserved tomato juice into the skillet, scrape up any browned bits, and pour into the slow cooker. Cover the slow cooker and cook on low for 4 to 6 hours.
- In a small bowl, combine the sour cream, remaining 1 teaspoon chile powder, lime juice, and hot sauce and mix until well blended. Keep covered in the refrigerator until the chili is done and ready to serve.
- Taste and adjust the seasoning. (Reserve 2 cups for the Round 2 Recipe Beef and Bean Burritos). Serve garnished with the sour cream mixture.
CHILI SANS BEANS

Steps:
- In a large Dutch oven, heat the oil over medium heat. Add the beef and chorizo and smoosh down. Start breaking up the chunks with a wooden spoon and let sear until the beef is no longer pink, about 5 minutes.
- Remove the meat from the pot and leave the fat. Then add the onions, chili powder, cumin, paprika and season with salt and pepper. Cook until the onions are soft, 7 to 8 minutes. Deglaze with the beer. Cook until the alcohol smell subsides, 3 to 4 minutes. Add the hot sauce, tomatoes, stock and the reserved meat. Simmer until thickened, stirring frequently, about 20 minutes. Adjust seasoning.
MY FAMILY CHILI (NO BEANS)
This recipe started off by following Alton Brown's pressure cooker chili recipe. We never had a pressure cooker, so we used a crock pot. Over time, my wife and I have changed the ingredients up, but we still follow the spirit of AB's recipe. You could also use a dutch oven over a low heat (200-250°F)

- Toss the cubed chuck roast and pork shoulder with the oil and salt.
- In batches, sear the cubed meat in a high sided sautee pan over med-high heat. When there is a brown crust on the outside, transfer to a bowl or to your crock pot. Don't crowd the pan, the goal is to get a good brown crust on the meat to build some flavor.
- Cut the skins on the brauts and place in the pan that was used for searing the meat. Add the ground beef and crush up all the meat, making sure to scrape the the bottom of the pan to get all the flavor bits off. I like to use a flat wooden spatula and a potato masher for this.
- Once all the meat is evenly ground, take a few good swigs off one of those beers and pour the rest in the pan with the meat. Let it simmer until most of the liquid is gone.
- Add the ground meat to the cubed meat and put it all in the crock pot.
- Add the rest of the ingredients to the crock pot and turn it to a low setting.
- Let it slow cook for about 8 hours.

EASY CHILI CON CARNE (NO BEANS)
Some people like beans in their chili, some do not. This chili has no beans, but if you like beans, you can easily serve them on the side.

- Brown beef in a large deep pan.
- Drain fat.
- Add the garlic, 6 tbsp of the chili powder, and cumin, stirring to coat beef.
- Add the tomato sauce and the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour (add some water if your heat is too high and chili gets too thick).
- Add masa gradually, stirring after each addition, until chili reaches desired thickness.
- Simmer 15-20 minutes more, then season to taste with salt and add cayenne, paprika, and last tbsp of chili powder.
NO BEANS, NO TOMATO CHILI
This family recipe has been passed down for generations. My dad used this recipe for an annual chili cookoff in our home town and it drew huge crowds. No tomatoes or beans in this true Texas chili. Important Note! This recipe called for Morton's Chili Blend. It is nearly impossible to find so I use William's Chili Mix in addition to the following ingredients. The real secret to this chili is the cooking method.

- In the 3 cups of water, simmer the meat for 30 minutes(do not brown the meat before boiling it). Crumble the meat up as you add it to the water. There should not be any large pieces. After 30 minutes add the remaining ingredients.
- Simmer for 2 hours, stirring occasionally.
- Serve this up with some cheese and extra onions if you want.
NO BEAN SLOW COOK CHILI
This is a great recipe to set up in the morning and eat when you get home from work. I made this intentionally because I do not like beans in my chili. You can also make it mild to hot depending on the kind and amount of chili powder and the addition of Louisiana Hot Sauce. I usually add a mixture of medium and hot chili powders. The chilies can be optional, but the morita chilies are required to give the chili a nice subtle smoky flavor.

- Brown beef making sure to prevent large clumps of hamburger.
- When hamburger is still pink add onion and salt to taste.
- Drain beef and add to 4qrt crockpot.
- Add tomato sauce.
- Drain and add diced tomatoes and corn.
- Add in chili powder to taste (I use mostly chili powder but add a couple dashes of hot chili powder.).
- Add the rest of the ingredients; mix well.
- Cook on low to medium for ~8hrs.

- Add your ground beef to a large stock pot. Use your spatula to crumble the beef. Add in your chopped green pepper and onion. Cook on medium high, stirring occasionally, until beef is browned.
- If your beef isn't very lean you'll want to drain the grease before moving on to the next step. I use a very lean beef so I don't need to drain mine.
- Once your ground beef is cooked it's time to add the other ingredients to the pot. Stir. Cover and let simmer for 20 - 25 minutes.
- Taste. Add extra salt or pepper if that's your preference. Top with green onions, avocado, cilantro, or onion. Enjoy!
