CHICKEN WITH MUSTARD CREAM ON WATERCRESS

Yield Serves 2; can be doubled

Number Of Ingredients 6

1 bunch watercress, stems trimmed
2 skinless boneless chicken breast halves
1 tablespoon butter
1/3 cup canned low-salt chicken broth
1/4 cup whipping cream
2 1/2 tablespoons honey Dijon mustard

Steps:

  • Divide watercress between 2 plates. Place chicken between sheets of waxed paper. Using rolling pin, pound chicken to even 1/2-inch thickness. Peel off paper. Sprinkle chicken with salt and pepper.
  • Melt butter in heavy medium skillet over medium heat. Add chicken; sauté until cooked through, about 4 minutes per side. Place chicken atop watercress. Add broth, cream and mustard to skillet. Boil until sauce thickens, whisking often, about 2 minutes. Season with salt and pepper. Spoon sauce over chicken.

1/4 cup minced shallots
2 tablespoons unsalted butter
1/4 cup dry white wine
1 cup sour cream
3 tablespoons coarse-grained mustard
2 tablespoons Dijon-style mustard
1 cup finely chopped watercress
1/3 cup hot water

Steps:

  • In a saucepan cook the shallot in the butter over moderately low heat, stirring, until it is softened, add the wine, and boil the mixture until the wine is almost evaporated. Remove the pan from the heat and whisk in the sour cream, the mustards, the watercress, the water, and salt and pepper to taste. Serve the sauce at room temperature with poached fish or steamed or grilled vegetables.

4 tsp honey mustard dressing
100g watercress
2 smoked gammon steaks

Steps:

  • Heat 1 tbsp olive oil in a medium-sized saucepan. Add the lentils, 1 tbsp dressing, ½ the watercress and 150ml of water, and cook for 7-8 mins or until the watercress has wilted and the lentils have broken down a little. Season.
  • Heat a griddle pan over a medium heat, drizzle the steaks with oil and cook on either side for 5 mins. Serve with the lentils and remaining watercress tossed in the rest of the dressing.

1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon crumbled dried tarragon
salt and pepper
1 tablespoon chopped fresh chives or 1 tablespoon green onion top
1/2 lb mushroom, sliced
1 bunch watercress or 1 bunch butter lettuce

Steps:

  • For the dressing, mix together the oil, vinegars, mustard, tarragon, salt and pepper, and chives.
  • Add the mushrooms to the dressing, mixing lightly.
  • Add several sprigs of watercress.
  • Chill briefly.
  • Arrange the remaining watercress or butter lettuce on a platter and and mound the mushroom salad on top.
