Tuna Noodle Skillet Casserole is classic comfort food made easy all in one skillet!

1 tbsp olive oil
1 cup diced onion
1 tsp minced garlic
4 cups chicken broth (or water)
8 oz. egg noodles (4 cups)
10 oz. can cream of mushroom soup
2 cups carrots and peas (frozen )
salt and pepper (to taste)
12 oz. can white tuna in water (drained)
1 cup marbled cheddar cheese (shredded )
1 cup garlic croutons (crushed)

Steps:

  • Heat a large skillet over medium heat and add olive oil. Saute onion and garlic until tender, about 3 minutes.
  • Add the chicken broth (or water) and soup and whisk until combined. Stir in the egg noodles and frozen vegetables. Season with salt and pepper to taste. Bring mixture to a small boil and then reduce heat. Simmer, stirring occasionally until the noodles are tender and the sauce has reduced, about 20 minutes.
  • Flake the tuna with a fork and gently fold into the pasta. Top the pasta with the cheese and simmer, covered until cheese melts and tuna is heated through.
  • Sprinkle the top of the casserole with the crushed croutons and serve. Enjoy!

1 cup frozen sweet peas
1 cup shredded Cheddar cheese (4 oz)
3/4 cup French-fried onions (from 2.8-oz can)

Steps:

  • In 12-inch nonstick skillet, melt butter over medium heat. Add bell pepper; cook 4 to 5 minutes, stirring occasionally, until pepper is tender.
  • Add milk, hot water and sauce mix (from Hamburger Helper™ box); stir to combine. Stir in uncooked pasta (from Hamburger Helper™ box) and tuna. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 5 minutes, stirring occasionally. Stir in frozen peas; cover and simmer 5 to 6 minutes, stirring occasionally, until pasta is tender and sauce is thick. Remove from heat.
  • Top with cheese; cover and let stand 3 to 4 minutes or until cheese is melted. Sprinkle with French-fried onions.

3 ears corn, husked
Olive oil, for drizzling
1/2 onion, thinly sliced
3 poblanos, charred, stemmed, seeded and julienned (see Cook's Note)
Kosher salt and freshly ground black pepper
3 cups shredded Monterey Jack cheese
Tortilla chips and/or plantain chips, for serving

Steps:

  • Preheat a grill to medium-high heat. Add the corn and grill, turning onto all sides, until evenly browned, about 10 minutes. Set aside to cool slightly, then remove the kernels.
  • Put a cast-iron skillet on the grill and heat. Drizzle with some olive oil and add the onions. Cook until translucent, about 5 minutes. Add the poblano slices and season with salt and pepper. Add the corn kernels to the skillet, then add the cheese and mix to combine. Continue to cook until the cheese is melted, about 5 minutes. Serve with tortilla chips and/or plantain chips for dipping.

3 cups uncooked wide egg noodles
1 (10 3/4 ounce) can cream of mushroom soup
1 cup milk
1 (6 ounce) can tuna in water, drained and flaked
1 cup sharp cheddar cheese, shredded
1/2 cup frozen sweet peas, thawed
2 tablespoons Italian bread, crumbs
1 tablespoon butter, melted

Steps:

  • Heat broth to a boil in skillet. Add noodles and cook until just tender, stirring often. The broth will be almost gone. Do not drain.
  • Stir in soup, milk, tuna, and cheese until incorporated.
  • Once cheese is melted, add peas and heat through.
  • Mix bread crumbs with butter. Sprinkle on top and heat another 5 minutes.

½ medium onion, thinly sliced
1 cup seasoned rice vinegar
2 (5-oz.) cans tuna packed in olive oil, drained
¼ cup mayonnaise, plus more for spreading
2 Tbsp. chopped celery
1 Tbsp. chopped dill pickles
Kosher salt, freshly ground pepper
8 slices sourdough bread
8 slices sharp cheddar
Dill pickle spears (for serving; optional)

Steps:

  • Combine ½ medium onion, thinly sliced, and 1 cup seasoned rice vinegar in a small bowl. Set aside.
  • Gently mix two 5-oz. cans tuna packed in olive oil, drained, ¼ cup mayonnaise, 2 Tbsp. chopped celery, and 1 Tbsp. chopped pickles in a medium bowl until just combined. Season with kosher salt and freshly ground pepper.
  • Heat a dry large cast-iron skillet over medium-low. Spread mayonnaise over 1 side of 2 slices sourdough bread. Place bread, mayo side down, in skillet; top 1 bread slice with 2 slices sharp cheddar. Cover with a lid and cook until bread is golden brown underneath and cheese is melted, about 4 minutes. (The cheese should form a crispy skirt around the bread.)
  • Uncover skillet and top bread with melted cheddar with one fourth of tuna salad, then some drained reserved pickled onion. Close up sandwich and gently press down on sandwich with a spatula. Transfer to a cutting board and slice in half on a diagonal. Repeat cooking process 3 more times with more mayonnaise and remaining tuna salad, pickled onion, 6 slices sourdough bread, and 6 slices sharp cheddar to make 3 more sandwiches.
  • Serve sandwiches on plates with dill pickle spears if desired.

Steps:

  • BRING water to boil in large deep skillet or saucepan on high heat.

  • Simmer 9 minute or just until pasta is tender and liquid is almost completely absorbed. (Do not drain.)
