Steps:
- Generously grease a 9x13-inch casserole dish.
- Heat a skillet over medium heat; cook and stir sausage until crumbly and completely browned, about 10 minutes. Transfer cooked sausage to the prepared casserole dish.
- Cook and stir mushrooms in the same skillet over medium heat until liquid has been released and mushrooms are lightly browned, 5 to 10 minutes; drain.

- Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.

- Spray a 13x9-inch (3-quart) glass baking dish with the cooking spray. Peel and thinly slice the green onions; you will need about 1/2 cup. Trim crusts from the bread.

- Lightly butter 1 side of each bread slice using the 2 tablespoons of softened butter or omit this step if desired.
- Top 4 slices of bread, buttered side up, evenly with ham and place the other 4 slices of bread buttered side down on top of ham.
- Quarter each sandwich forming 4 triangles and place in a buttered 2-quart baking dish, arrange triangles pointed sides up.

- Whisk eggs, milk and mustard in large bowl until blended. Reserve 1/2 cup cheese. Add remaining cheese to egg mixture with all remaining ingredients; mix well.
- Cut 3 (30-inch-long) sheets of foil. Fold 1 sheet lengthwise in half twice; repeat with second sheet. Fold remaining sheet to fit inside back edge of slow cooker; place in slow cooker. Crisscross foil strips; use to line bottom and sides of slow cooker. Spray inside of slow cooker with cooking spray. Add egg mixture. - Generously smear a 9x13x2 baking dish with softened butter.
- Stir together flour, mustard powder and optional cayenne. Combine ham cubes and cheese cubes; toss with flour mixture until well-coated. Add bread cubes and toss to distribute.
- Whisk together eggs, milk and hot sauce.
- Spread 1/3 of bread/ham/cheese cubes in a single layer in prepared baking dish. Drizzle with 1 tbsp melted butter, then sprinkle with 1 tbsp grated Parmesan. Repeat twice more, to form three layers. Pour egg mixture evenly over the top, then sprinkle with the last 1 tbsp of Parmesan. (The dish can be covered with plastic wrap and refrigerated overnight if desired. Let it come back up to room temperature while preheating the oven, at least 30 minutes, before proceeding.).
- Preheat oven to 350°F Bake, uncovered, until set, golden brown and crispy, about 1 hour.

- Heat the oil in a large sauté pan over medium heat. Add the onions and thyme and sauté until they are soft and tender, about five minutes. Add the spinach and stir until it is wilted and add the vermouth (if using). Remove the pan from the heat to cool about ten minutes. Season to taste.
- Preheat the oven to 350 °F and grease a 22 centimeter springform pan (or oval baking dish). In a large bowl, whisk the eggs, mustard, salt & pepper and whisk in the milk. Add the bread cubes and toss well to coat. Let this sit for 15 minutes to allow the bread to soak in the liquid. Stir in the cooled onion and spinach mixture as well as the diced ham, and then stir in the diced brie. Bake the strata for 60 to 70 minutes, until the centre springs back when gently pressed. - For the glaze, stir the mustard and maple syrup together. Brush this over the top of the warm strata and then use any remaining as a sauce when serving.
