AMISH BREAKFAST CASSEROLE
We've enjoyed a few hearty breakfast casseroles while visiting an Amish inn. When I asked for a recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this quick and easy breakfast casserole my family loves. -Beth Notaro, Kokomo, Indiana

Steps:
- Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

This Amish Breakfast Casserole is a fast and easy hash brown egg casserole that can be made as a make-ahead breakfast. It's perfect for weekends or a holiday brunch.

Steps:
- Use a large saute pan to brown the bacon and onions over medium-high heat. This should take about 10 minutes and the onions should be soft and translucent. Allow to cool slightly and then drain the grease.
- Combine the remaining ingredients in a large mixing bowl and then add the six eggs. Stir to combine well. Pour the mixture into a greased 9 x 13 baking pan.
- If preparing as a make-ahead breakfast, wrap and seal the casserole and refrigerate overnight.
- When ready to eat, bake at 350° F. for 35 minutes. Garnish with additional fresh herbs if desired.

- Preheat oven to 350. Grease a 9x13 baking dish. In a skillet on medium high heat, brown sausage and onion until no longer pink, breaking meat up into small pieces. Drain well. In a large bowl whisk eggs. Add potatoes, 3 cheeses, sausage mixture, salt and pepper. Mix well. Transfer to baking dish. Sprinkle with parsley. Bake for 40-50 minutes until toothpick in center comes out clean. Let sit 10 minutes before cutting.
