1 teaspoon baking soda
1/2 teaspoon salt
3 oz unsweetened baking chocolate
3 oz semisweet baking chocolate
1 cup butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
4 eggs
1 teaspoon vanilla
1 cup buttermilk
1 cup semisweet chocolate chips (6 oz)
1/2 cup butter, softened
1 box (1 lb) powdered sugar (4 cups)
1/2 cup whipping cream
2 teaspoons vanilla
Dash salt

Steps:

  • Heat oven to 350°F. Place jumbo paper baking cup in each of 12 jumbo muffin cups.
  • In small bowl, mix flour, baking soda and 1/2 teaspoon salt; set aside. In small microwavable bowl, microwave baking chocolate uncovered on High 1 to 2 minutes, stirring once, until softened and chocolate can be stirred smooth.
  • In large bowl, beat 1 cup butter with electric mixer on medium speed until creamy. Gradually add brown sugar and granulated sugar, beating well. Add eggs, one at a time, beating after each addition. Add melted chocolate and 1 teaspoon vanilla, beating well. Add flour mixture alternately with buttermilk, beating on low speed after each addition until blended. Divide batter evenly among muffin cups, filling three-fourths full.
  • Bake 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pans to cooling racks. Cool completely, about 45 minutes.
  • In small microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring once, until softened and chips can be stirred smooth. In large bowl, beat 1/2 cup butter with electric mixer on medium speed until creamy. Add powdered sugar alternately with melted chocolate and whipping cream, beating on low speed after each addition until blended. Stir in 2 teaspoons vanilla and dash salt. Frost cupcakes with frosting.

1/2 cup sour cream

2 cups confectioners' sugar
1 cup sweetened flaked coconut
1 cup chopped pecans, toasted
1/4 cup light brown sugar
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Prepare two 12-well cupcake pans by inserting a paper cupcake liner into each well.
  • Melt the unsweetened baking chocolate and unsalted butter in the top of a double boiler.
  • Set aside and allow to cool somewhat while you mix the remaining ingredients.
  • In a large bowl, combine the flour, white and brown sugars, salt, baking soda, and baking powder.
  • In another bowl, dissolve the coffee powder in the hot water.
  • Add the sour cream, eggs, and vanilla.
  • Pour the liquid ingredients into the dry ingredients and mix well.
  • Pour the melted chocolate and butter into the batter and mix well.
  • Divide the batter evenly between the wells in each of the cupcake pans (about 1/4 cup batter works well).
  • Bake 25 to 35 minutes or until fork inserted into middle of one of the cupcakes comes out clean.
  • Remove cupcakes to cooling racks and cool completely before frosting.
  • To make the frosting: Place the white chocolate in a small microwave-safe bowl. Microwave on medium (50% power) for 1 minute. Stir. Microwave 30 seconds more or until chocolate is softened. Stir until smooth and let cool.
  • Beat cream cheese in bowl until light and fluffy, using electric mixer at medium speed. Beat in butter, vanilla and salt. Gradually beat in cooled chocolate until smooth. Add the confectioners and brown sugars and beat about 2-3 minutes. Stir in chopped pecans and coconut; fold until incorporated.

  • Combine the butter, cocoa, coffee and 1/3 cup water in a microwave-safe bowl. Cover with plastic wrap and microwave on high until the butter melts, about 1 minute. Whisk to combine.
  • Meanwhile, whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. In a small bowl, beat the sour cream, vanilla and eggs. Whisk the hot cocoa mixture into the dry ingredients. Then stir in the sour cream mixture just to combine; don't overmix.
  • Divide the batter evenly in the prepared muffin tin, filling each cup about three-quarters full. Bake until a toothpick inserted into the center of the cupcakes comes out clean, 18 to 20 minutes for standard cupcakes or 16 to 18 minutes for minis.
  • Cool the cupcakes in the tin on a rack for 10 minutes, then remove from the tin and cool on the rack completely. Frost and decorate as desired.

3/4 cup Dutch-process cocoa powder (see Cook's Note)
1 1/2 cups granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup buttermilk, at room temperature
3/4 cup warm coffee
1/2 cup vegetable oil
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
6 ounces semisweet chocolate chips or semisweet chocolate (64-percent cacao), chopped
2 sticks (16 tablespoons) unsalted butter, at room temperature
1/2 teaspoon kosher salt
1 cup confectioners' sugar
2 teaspoons Dutch-process cocoa powder
1 1/2 teaspoons pure vanilla paste or extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Line two 12-cup muffin tins with paper liners.
  • Whisk together the cake flour, cocoa powder, granulated sugar, baking powder, baking soda and salt in the bowl of a stand mixer. Whisk together the buttermilk, coffee, oil, eggs and vanilla in a separate bowl.
  • Pour half of the wet ingredients into the dry ingredients and beat on low speed just until combined. Scrape down the bowl then add the remaining wet ingredients and beat to combine. Scrape down the bowl and paddle. Increase the speed to medium and beat for a full minute.
  • Fill the prepared cupcake tins 2/3 of the way full. Bake until a toothpick inserted in the center of each comes out clean and the top springs back when lightly pressed, 15 to 18 minutes.
  • For the frosting: Melt the chocolate in a medium heatproof bowl set over simmering water in a medium saucepan. Remove from the simmering water and let it cool until room temperature, about 30 minutes.
  • Beat the butter and salt in a large bowl with an electric mixer on high speed until light and fluffy, about 2 minutes. Reduce the speed to low, drizzle in the melted chocolate and beat until completely blended. Gradually beat in the confectioners' sugar, cocoa powder and vanilla. Increase the speed to high and beat until light and fluffy, about 2 minutes.
  • Transfer the frosting to a pastry bag fitted with a large star tip. Decoratively pipe the frosting onto the cupcakes.

100g plain flour
20g cocoa powder
140g caster sugar
1½ tsp baking powder
40g unsalted butter (at room temperature)
120ml whole milk
1 egg
¼ tsp vanilla extract
buttercream
chocolate vermicelli (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the flour, cocoa powder, sugar, baking powder, a pinch of salt and the butter in a free-standing electric mixer with a paddle attachment (or use a handheld electric whisk). Beat on a slow speed until you get a sandy consistency and everything is combined.
  • Whisk the milk, egg and vanilla extract together in a jug, then slowly pour about half into the flour mixture. Beat to combine and turn the mixer up to high speed, scraping any mixture from the side of the bowl with a rubber spatula. Pour in the remaining liquid and continue mixing for a couple more minutes until the mixture is smooth. Do not overmix.
  • Spoon the mixture into the paper cases until approximately two-thirds full. Bake in a preheated oven for 20-25 minutes, or until the sponge bounces back when touched and a skewer inserted into the centre comes out clean.
  • Leave the cupcakes to cool slightly in the tray before turning out onto a wire cooling rack to cool completely. Meanwhile, make chocolate buttercream or plain buttercream and spread it over the cakes with a palette knife, or use a piping bag. Scatter over chocolate vermicelli, if you like.

2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder

1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
3/4 cup butter (or margarine)
1 1/2 cups unsweetened cocoa powder
5 1/3 cups confectioners' sugar
2/3 cup milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch cake pans. This cake is known for sticking, you may want to cut out parchment circles to fit your pan, place in bottom of pan. If you use cocoa powder instead of flour, you won't get that white residue.
  • Use the first set of ingredients to make the cake. In a medium bowl, stir together the sugar, flour, cocoa, baking soda, baking powder and salt. Add the eggs, milk, oil and vanilla, mix for 3 minutes with an electric mixer. Stir in the boiling water by hand. Pour evenly into the two prepared pans (note that the batter will be thin, it's supposed to be - promise!).
  • Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool for 10 minutes before removing from pans to cool completely. The times are approximate, it can take longer depending on the weather and your oven.
  • To make the frosting, use the second set of ingredients. Cream butter until light and fluffy. Stir in the cocoa and confectioners' sugar alternately with the milk and vanilla. Beat to a spreading consistency.
  • Split the layers of cooled cake horizontally, cover the top of each layer with frosting, then stack them onto a serving plate. Frost the outside of the cake.
  • NOTE: For a REALLY rich cake, use Dutch Processed cocoa. Seriously, I would almost insist that you do. It really does make it SO yummy.

These light cakes are perfect for freezing - they just need a quick blast in the microwave to bring them back to life

300g dark chocolate , broken into chunks - don't use one with a high cocoa content
200g self-raising flour
200g light muscovado sugar , plus 3 tbsp extra
6 tbsp cocoa
150ml sunflower oil , plus a little extra for greasing
284ml pot soured cream
2 eggs
1 tsp vanilla extract

Steps:

  • Heat oven to 180C/fan 160C/gas 4 and line a 10-hole muffin tin with paper cases. Whizz the chocolate into small pieces in a food processor. In the largest mixing bowl you have, tip in the flour, sugar, cocoa, oil, 100ml soured cream, eggs, vanilla and 100ml water. Whisk everything together with electric beaters until smooth, then quickly stir in 100g of the whizzed-up chocolate bits. Divide between the 10 cases, then bake for 20 mins until a skewer inserted comes out clean (make sure you don't poke it into a chocolate chip bit). Cool on a wire rack.
  • To make the icing, put the remaining chocolate bits, soured cream and 3 tbsp sugar in a small saucepan. Heat gently, stirring, until the chocolate is melted and you have a smooth icing. Chill in the fridge until firm enough to swirl on top of the muffins, then tuck in.
