This is a honey mustard glaze with black pepper for a little spice. You may decrease or omit the pepper if you don't want it so spicy. You can also decrease honey if it is to sweet for your taste.

MUSTARD-CRUSTED PORK TENDERLOINS

Mustard-Crusted Pork Tenderloins image

This is so easy to make and the way many of the higher end restaurants serve pork tenderloins, the mustard crust seals in the juices and tenderizes the meat. The tenderloins can go from moist to dry quickly, so to avoid this use a digital-read thermometer to register the tenderloins at 155 degrees. Your compnay will think they are dining in a fancy restaurant! If you are using a pork loin roast the cooking will need to be adjusted,

MUSTARD-CRUSTED PORK WITH FARRO AND CARROT SALAD

Mustard-Crusted Pork with Farro and Carrot Salad image

Using a mandoline to slice the carrots turns them into ribbons, and cooking them briefly keeps them from being too crunchy. If you don't have a mandoline, use a vegetable peeler.

Yield Makes 6 to 8 servings

Number Of Ingredients 12

1 3-3 1/2-pound boneless pork loin
Kosher salt, freshly ground pepper
1 cup whole grain mustard
1/4 cup mustard powder
1/2 cup olive oil, divided
2 cups farro
1/3 cup apple cider vinegar
1 tablespoon caraway seeds, coarsely chopped
1 teaspoon honey
1 1/2 pounds baby carrots, any color, very thinly sliced lengthwise on a mandoline
1/2 small red onion, very thinly sliced into rings
1 cup (packed) fresh flat-leaf parsley leaves

Steps:

  • Place pork on a wire rack set inside a large rimmed baking sheet; season all over with salt and pepper. Whisk mustard, mustard powder, and 1/4 cup oil in a small bowl to blend. Rub over pork and let sit at room temperature 1 hour.
  • Preheat oven to 425°F. Roast pork until beginning to brown, 25-30 minutes. Reduce heat to 350°F and roast until a thermometer inserted in the thickest part registers 145°F, 25-35 minutes longer, depending on thickness of roast.
  • Meanwhile, cook farro in a large pot of boiling salted water until tender, 30-35 minutes; drain.
  • Whisk vinegar, caraway seeds, honey, and remaining 1/4 cup oil in a medium bowl; set vinaigrette aside.
  • Heat 2 tablespoons vinaigrette in a large skillet over medium-high heat. Add farro and carrots and cook, tossing often, until carrots soften and farro is warmed through, about 3 minutes. Remove from heat and transfer to a large bowl. Add onion, parsley, and half of remaining vinaigrette; season with salt and pepper and toss to combine.
  • Slice pork. Serve with farro salad. Pass remaining vinaigrette alongside.
  • DO AHEAD: Farro can be cooked 2 days ahead. Let cool, cover, and chill. Reheat before using.

RACK OF PORK WITH AN HERB-MUSTARD CRUST

Rack of Pork with an Herb-Mustard Crust image

Rack of pork-the loin including the rib bones-makes an excellent party roast when topped with a savory breadcrumb mixture that browns and crisps. It's wonderful with Oven-Roasted Potatoes, which can roast in the oven right alongside the meat. Have your butcher "french" or scrape the bones clean.

Provided by Anne Willan

Categories     Main Course

Yield six.

Number Of Ingredients 13

One 6-rib bone-in pork loin (about 4 lb.)
Kosher salt and freshly ground black pepper
2 Tbs. vegetable oil
3 Tbs. unsalted butter
2 to 3 cloves garlic, minced
2 shallots, chopped (about 1/2 cup)
1 tsp. ground cumin
1 tsp. ground paprika
1/4 cup chopped fresh flat-leaf parsley
3/4 cup packed fresh coarse breadcrumbs (about 2 oz.)
2 to 3 Tbs. Dijon-honey mustard
1 cup medium-dry white wine
1-1/2 cups homemade or low-salt chicken broth

Steps:

  • Heat the oven to 425°F. Trim any excess fat from the pork but leave on an even layer of fat to moisten the meat during cooking. Sprinkle the pork with salt and pepper. Heat the oil in a small flameproof roasting pan or a large ovenproof skillet over medium-high heat and brown the fat-covered surface of the pork until it turns a deep golden brown, 5 to 7 minutes. Turn the roast rib side down and roast in the oven, basting occasionally, for 30 minutes.
  • Meanwhile, make the topping: In a 10-inch skillet over medium heat, melt the butter and sauté the garlic and shallots until soft and fragrant, 2 to 3 minutes. Stir in the cumin and paprika; continue cooking for 1 minute. Remove from the heat and stir in the parsley and breadcrumbs. Season with salt and pepper.
  • After the pork has roasted for 30 minutes, brush the surface with the mustard and spread with the breadcrumb topping, pressing so it adheres. Turn the oven down to 375°F (if you're roasting potatoes, put them in the oven beside the pork now). Continue roasting the pork until an instant-read thermometer inserted in the center registers 145°F, about another 30 minutes. Transfer the meat to a carving board or platter and cover loosely with foil. If the potatoes are done, turn off the oven and leave them in until ready to serve. If they're not fully cooked, continue roasting them while the pork rests and you prepare the gravy.
  • To make the gravy, put the roasting pan on the stovetop over high heat, add the wine, and boil, stirring to dissolve the cooked-on pan juices, until the wine is reduced almost to a glaze. Add the broth and simmer until well flavored, 2 minutes, or longer if necessary. Strain the gravy into a small pan, reheat it, and taste for seasonings.
  • Carve the pork at the table, cutting down vertically between the rib bones to form chops. Pass the gravy separately.

Time 8h40m

Yield 6 servings

Number Of Ingredients 16

1/2 cup stone-ground mustard
1/2 cup Dijon mustard
1 1/2 tablespoons soy sauce
1 tablespoon black pepper, freshly cracked
1 tablespoon chopped fresh thyme leaves
10 garlic cloves, roughly chopped
1 (4 to 5 pound) bone-in pork loin roast
1 fennel bulb, trimmed and sliced into 1-inch pieces
1 large yellow onion, peeled and sliced into 1-inch rounds
2 large carrots, cut into large pieces
2 tablespoons olive oil
Kosher salt and freshly cracked black pepper
2 cups panko bread crumbs
1 cup vermouth
3/4 cup chicken stock
1 tablespoon unsalted butter

Steps:

  • In a food processor, combine the mustards, soy sauce, pepper, thyme and garlic. Process until smooth. Rub all over the pork roast, loosely cover with plastic wrap and refrigerate at least 6 hours. Remove from refrigerator and allow to rest at room temperature for 30 minutes before cooking.
  • Preheat the oven to 350 degrees F. In a roasting pan, add the fennel, onions and carrots. Drizzle with olive oil and season generously with salt and freshly cracked pepper, to taste. Put the bread crumbs on a plate wide enough to fit the loin. Carefully roll the pork in the crumbs to form a nice crust. Put the pork on top of the vegetables in the roasting pan and bake until the internal temperature reaches 165 degrees F on an instant-read thermometer, about 2 to 2 1/2 hours.
  • Remove the pork from the oven to a cutting board and let rest. Put the roasting pan over 2 burners on high heat. Add the vermouth and chicken stock and let reduce by half. Season, to taste, with salt and pepper. Whisk in the butter and strain into a small pitcher or bowl.
  • Remove the pork from the bone and slice into serving portions. Arrange on a serving platter and drizzle with the jus.

MUSTARD-AND-HERB-CRUSTED PORK ROAST

Mustard-and-Herb-Crusted Pork Roast image

Provided by Food Network Kitchen

Categories     main-dish

Time 10h30m

Yield 6 servings

Number Of Ingredients 16

1 cup kosher salt
6 tablespoons granulated sugar
8 cloves garlic, smashed
8 bay leaves
3 tablespoons dried juniper berries, lightly crushed
2 tablespoons black peppercorns
1 teaspoon whole cloves
1 6-rib center-cut bone-in pork loin roast (about 5 1/2 pounds), chine bone notched
For the crust:
1 cup panko breadcrumbs
4 tablespoons unsalted butter, at room temperature
1 scallion, cut into 1-inch pieces
1/2 cup fresh parsley
2 tablespoons fresh thyme
2 teaspoons dried juniper berries, lightly crushed
3 tablespoons dijon mustard

Steps:

  • Brine the pork: Combine 4 cups water, the salt, sugar, garlic, bay leaves, juniper berries, peppercorns and cloves in a large pot or wide Dutch oven (large enough to hold the pork). Heat over medium heat, stirring, until the salt and sugar dissolve. Add 8 cups ice cubes; stir occasionally until the brine is cooled.
  • Make small deep cuts, about 2 inches apart, all over the pork and between the ribs using the tip of a paring knife. Add the pork to the pot and submerge in the brine; add more cold water if needed to completely submerge. Refrigerate overnight.
  • Set a rack in a roasting pan and put the pan on the lowest oven rack; preheat to 325 degrees F. Remove the pork from the brine, pat dry and set aside to bring to room temperature. Remove 3 cups brine (along with the spices) to a medium saucepan; bring to a boil. Remove the hot roasting pan from the oven and carefully stand up the pork on the rack with the chine bone down. Add the hot brine to the bottom of the pan. Roast until the fat is mostly rendered, about 40 minutes.
  • Meanwhile, make the crust: Pulse the panko, butter, scallion, parsley, thyme and juniper berries in a food processor until the herbs are coarsely chopped and the mixture is combined.
  • Remove the pork from the oven and reposition so it is meat-side up; brush the top and sides with the mustard, then sprinkle with the panko mixture, patting to adhere. Return to the oven and roast 50 more minutes.
  • Increase the oven temperature to 425 degrees F and continue roasting until the crust is crisp and a thermometer inserted into the center registers 140 degrees F, about 20 more minutes. Remove from the oven, transfer to a cutting board and let rest 20 minutes before carving.

1 pork tenderloin
4 Tbsp grainy mustard
2 Tbsp freshly minced sage
1 Tbsp freshly minced parsley
½ tsp salt
¼ tsp freshly ground pepper
1 cup breadcrumbs
2 Tbsp butter
2 Tbsp canola oil

Steps:

  • Preheat oven to 425F.
  • Combine mustard, sage, and parsley along with salt and pepper in a small bowl.
  • Cut pork tenderloin in half width-wise and rub mustard mixture all over the pork. (Cutting it in half will make it easier to manage while you fry it.)

  • Place a cooling rack on top of a cookie sheet. This is what you will roast the pork on.
  • Heat a large skillet over medium heat and add butter and oil. When the butter stops foaming add the pork tenderloin.

  • In a small bowl, combine the reserved chopped garlic, mustard, chopped sage, thyme, salt and pepper; set aside. Place pork in the roasting pan with the rib bones pointing up. Spread mustard mixture over the pork. Arrange the garlic bulbs and shallots cut sides down around the roast. Loosely cover with foil. Roast for 30 minutes. Remove foil. Roast for 1 to 1 1/2 hours more or until an instant-read thermometer inserted near the center reads 145°.
  • Transfer pork to a serving platter or board. Arrange garlic bulbs and shallots around pork. Remove cloves from one bulb of roasted garlic. Mash and set aside. Tent pork with foil and let rest for 10 to 15 minutes.
  • Meanwhile, prepare gravy: Place roasting pan over medium-high heat and add wine. Stir, scraping up any brown bits, until nearly evaporated. Add remaining 3 tablespoons butter; stir to melt. Sprinkle with flour; stir to combine. Add stock and reserved mashed garlic. Cook and stir until thickened and bubbly. Season to taste.
