2 stalks lemongrass
4 tablespoons vegetable oil
2 medium red onions, thinly sliced
6 cloves garlic, thinly sliced
6 tablespoons chopped peeled ginger
1/4 cup green curry paste
2 15-ounce cans coconut milk
4 tablespoons fish sauce
6 pounds mussels, scrubbed and debearded
4 limes, halved
1 cup chopped fresh cilantro
Crusty bread, for serving (optional)

Steps:

  • Trim the lemongrass, leaving 6 inches at the root end; discard the tops. Smash the stalks with the flat side of a knife and cut into 1-inch pieces.
  • Heat 2 tablespoons vegetable oil in each of 2 large pots over medium-high heat. Add 1 sliced onion to each and cook, stirring, until soft, about 5 minutes. Add half each of the garlic, lemongrass, ginger and curry paste to each pot and cook, stirring, until golden, about 2 minutes.
  • Add 1 can coconut milk, 2 tablespoons fish sauce and 1/4 cup water to each pot and bring to a simmer. Divide the mussels between the pots; cover and cook, stirring occasionally, until the mussels open, about 8 minutes. (Discard any that do not open.) Add the juice of 2 limes to each pot, then add the lime halves. Stir 1/2 cup cilantro into each. Serve with bread, if desired.

A big pot of mussels is ALWAYS a win, win, win to me! There are LOTS of directions you can go in terms of flavor profiles-and to top it off, mussels are cheap and very quick to cook. The spice, acid and creamy coconut milk really bring big flavors to the party that are ALWAYS crowd pleasers. Be sure to have lots of bread to soak up all the delicious broth!

2 tablespoons vegetable oil
3 scallions, sliced, whites and greens separated
1/2-inch piece ginger, peeled and grated
2 cloves garlic, minced
1 bunch cilantro, stems chopped and leaves left whole
Zest and juice of 2 limes
1 bird's eye chile, thinly sliced
1 stalk lemongrass, sliced on a bias
1 pound mussels, cleaned
1 cup light beer
1/4 cup coconut milk
2 makrut lime leaves
2 teaspoons fish sauce
Vegetable oil, for the pan
1/2 baguette, sliced
1 garlic clove, halved

Steps:

  • For the mussels: Preheat a large lidded saucepan or moules (mussels) pot with the vegetable oil over medium-high heat. Add the scallion whites, ginger and garlic. Saute until soft and fragrant, 5 minutes. Add the cilantro stems, lime zest, lime juice, chiles and lemongrass and saute for 1 minute until fragrant. Add the mussels, beer, coconut milk and lime leaves, then cover and allow to steam until the mussels open, 3 to 4 minutes. Remove from heat. Add the fish sauce and stir to combine. Discard any mussels that do not open. Garnish with cilantro leaves.
  • For the toasted bread: Preheat a saute pan over medium-high heat with a little vegetable oil. Add the baguette slices and toast on both sides until golden brown, 2 minutes per side. Remove from the pan and rub with the garlic clove. Serve alongside the mussels.

He simply steams plump mussels in lager, then tosses them in a creamy, spicy, slightly tart sauce made with ginger, chiles, coconut milk and lime juice. The result is a Thai-inflected version of the French classic."

4 garlic cloves, coarsely chopped
2 Thai chiles, thickly sliced
1 1/2 inches piece fresh ginger, peeled and coarsely chopped
1 cup cilantro leaf
1 lime, zest of, finely grated
1/4 cup extra virgin olive oil
2 (13 1/2 ounce) cans unsweetened coconut milk
2 limes, juice of
salt
1 (12 ounce) can lager beer
5 lbs mussels, scrubbed

Steps:

  • In a food processor, combine the garlic, chiles, ginger, cilantro, lime zest and olive oil and process to a paste; transfer to a large bowl. Whisk in the coconut milk and lime juice and season with salt.
  • In a large soup pot, bring the lager to a boil over high heat. Boil until reduced to 1/2 cup, about 7 minutes. Add the mussels, cover and cook, shaking the pot a few times, until the mussels just begin to open, about 4 minutes.
  • Uncover the mussels and stir in the coconut milk mixture. Cover and cook, shaking the pot a few times, until all of the mussels open, about 8 minutes. Spoon the mussels and broth into bowls and serve.
  • Note: Beer: Since this Thai-influenced recipe calls for lager, a Thai lager would be a natural accompaniment. Consider the hoppy Singha lager from Boon Rawd Brewery, which has been making beer in Thailand for 72 years.

1 large onion, chopped
5 -6 garlic cloves, crushed
2 red chili peppers, deseeded and chopped
2 (14 ounce) can coconut milk
4 tablespoons fish sauce
2 limes, juice only
3 tablespoons cilantro, chopped
4 1/2 lbs mussels, scrubbed

Steps:

  • Put the onion, garlic, chili peppers, coconut milk, fish sauce, lime juice and cilantro into a large saucepan. Bring to the boil and cook for about 8 minutes or until the onions are cooked.
  • Check that all the mussels are tightly closed. If one is open, tap it - if it closes it's good, but if any stay open, throw those ones out.
  • When the onions are cooked in the saucepan, throw in all the good mussels, put the lid on and cook until the mussels are widely open.
  • Serve the mussels in their shells with the broth and some garlic bread.

2 tablespoons (1/4 stick) butter
1/4 cup chopped shallots
2 tablespoons Madras curry powder
1 14-ounce can unsweetened coconut milk
1 1/2 cups dry white wine
3 tablespoons fresh lemon juice
2 small bay leaves
2 pounds black mussels, scrubbed, debearded
Chopped fresh parsley

Steps:

  • Melt butter in heavy large pot over medium heat. Add shallots and curry powder; stir until fragrant, about 1 minute. Add coconut milk, wine, lemon juice and bay leaves; simmer 10 minutes. Add mussels. Increase heat, cover and boil until mussels open, about 6 minutes. Using tongs, place mussels in 4 bowls (discard any mussels that do not open). Boil sauce until slightly thickened, stirring occasionally, about 2 minutes. Season with salt and pepper; discard bay leaves. Spoon sauce over mussels. Sprinkle with parsley.

1 tablespoon oil
1/2 cup shallot, chopped
1 tablespoon fresh ginger, plus
1 teaspoon fresh ginger, diced
1 tablespoon curry
1/2 cup white wine
1 cup clam juice
2 inches lime peel, chopped
1 lime, juice of
3/4 cup coconut milk
4 lbs fresh mussels, cleaned and debearded
1/2 cup cilantro, roughly chopped

Steps:

  • In large stockpot, saute shallots and ginger for 5 minutes.
  • Add curry, saute 2 minutes.
  • Add wine, simmer 4 minutes.
  • Add clam juice, lime zest, and juice, simmer 4 minutes.
  • Add coconut milk, and simmer for 4 minutes.
  • Add mussels, cover pot, and steam 4 minutes, or until all or most mussels are open.
  • With slotted spoon, remove mussels and place into 4 bowls.
  • Discard any mussels that did not open.
  • Add cilantro to broth, cook for 30 seconds, then spoon over mussels into bowls.
  • Serve.

Here is a dish much beloved by my husband and children. Medium-sized clams may be substituted for the mussels. You may serve this as a first course, as the main course, or as a light lunch with a salad. Indians eat this curry with rice, but you may serve the mussels by themselves in individual bowls.

Number Of Ingredients 14

2 pounds medium-sized mussels
2 tablespoons olive or canola oil
1/2 teaspoon whole brown mustard seeds
1 good-sized onion (about 6 ounces), finely chopped
1 teaspoon finely grated peeled fresh ginger
1 teaspoon crushed garlic
1 3/4 cups coconut milk, from a well-shaken can
2 teaspoons ground cumin seeds
1/4 teaspoon cayenne pepper
3/4 teaspoon salt
15 fresh curry leaves or 10 fresh basil leaves, crushed in the palm of your hand
4 tablespoons finely chopped cilantro
2 fresh hot green chilies (bird's-eye is ideal), partially slit
1 tablespoon lemon juice

Steps:

  • Scrub the mussels well with a brush, discarding those that remain open even after they are tapped. Pull off any stringy beards.
  • Put the oil in a large pot and set over medium-high heat. When hot, put in the mustard seeds. As soon as the mustard seeds start to pop, a matter of seconds, put in the onions and turn the heat down to medium. Stir and cook 4-5 minutes or until the onions have softened. Add the ginger and garlic. Stir for a minute. Now add the coconut milk, 1 cup water, the cumin, cayenne, salt, curry leaves, cilantro, green chilies, and lemon juice. Stir and bring to a simmer. Simmer gently, uncovered, stirring now and then, for 5 minutes. (This much can be done ahead of time.) Add all the mussels and bring to a boil on medium-high heat. Cover and cook rapidly for 5 minutes or until all the mussels have opened (discard any that stay closed).
