THE BEST GARLIC BREAD

The Best Garlic Bread image

We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

Categories     side-dish

Time 30m

Yield 8 servings

Number Of Ingredients 6

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

Yield 10-12 slices

Number Of Ingredients 6

1 loaf French bread
1/4 cup butter, melted

1/4 cup parmesan cheese
1 teaspoon italian seasoning
ground pepper

Steps:

  • Slice bread legnth wise and lay on a cookie sheet.
  • Drizzle melted butter on both halves and spread with a spoon as best you can (I do a little at a time to ensure I get it spread before it seeps into the bread).
  • Put 2 tbs dressing on each half and spread out evenly.
  • Then sprinkle the parmesan on top.
  • Then sprinkle on the seasoning.
  • Then the pepper, and you dont want to use too much of this, just a little.

  • Take out of oven and slice in 10-12 slices.

PULL-APART GARLIC BREAD WITH ASIAGO CHEESE

Pull-Apart Garlic Bread with Asiago Cheese image

Provided by Valerie Bertinelli

Categories     appetizer

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 7

One 8-inch round loaf country or sourdough bread
1 stick (8 tablespoons) unsalted butter
3 tablespoons extra-virgin olive oil
4 cloves garlic, finely grated
Kosher salt
3 tablespoons finely chopped fresh parsley
1/2 cup grated Asiago cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Use a bread knife to cut a cross-hatch pattern into the top of the bread, stopping short of cutting through to the bottom of the loaf (so the loaf holds together).
  • Melt the butter in a small skillet over low heat. Add the olive oil and garlic and cook, stirring often, until very pale golden, about 4 minutes. Stir in 3/4 teaspoon salt and the parsley. Remove from the heat.
  • Gently separate the cubes of bread from the top of the loaf. Spoon some of the garlic butter in the cuts and spread it over the cut surfaces; use all but 2 tablespoons of the garlic butter for this. Slather the remaining garlic butter on top of the loaf. Distribute the Asiago between the cuts and on top. Wrap the loaf in foil and place it on a baking sheet.
  • Bake the bread until heated through, about 10 minutes. Unwrap the foil and continue baking until slightly crisp on the outside, 5 to 7 minutes more. Serve immediately.

HERBED GARLIC BREAD

Herbed Garlic Bread image

There are two proper ways to use garlic: pounding and blooming. Pound raw garlic into a paste that dissolves into food, leaving behind only a faint rumor of its presence. To cook garlic, sizzle but don't brown it before adding it to food - this is blooming, and it will tame garlic's raw fire. Put both techniques into practice to make this unforgettable loaf of garlic bread. First, make a garlic butter rich with herbs and Parmesan. Then, score the loaf into thick slices and slather each with butter. Wrap and bake, then pull the steaming, mahogany-crusted bread from the oven, and stuff each slot with herb salad. The fragrant loaf will barely have a chance to cool before everyone at the table begins to tear into and devour it.

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 10

14 large cloves garlic
10 tablespoons unsalted butter, at room temperature
Salt
3 tablespoons chopped parsley, plus 1/2 cup parsley leaves
2 tablespoons chopped chives, plus 1/2 cup chives cut into 1-inch pieces
2 tablespoons chopped basil, plus 20 basil leaves
Heaping 1/3 cup finely grated Parmesan (about ¾ ounce)
Freshly ground black pepper
1 1-pound loaf rustic country bread
Extra-virgin olive oil

Steps:

  • Arrange a rack in the center of your oven, and preheat to 400.
  • Bloom half the garlic: Thinly slice 7 of the cloves. Melt 2 tablespoons butter in a small saucepan over medium-low heat, and add garlic. Cook, stirring and swirling constantly, 7 to 8 minutes, or until the garlic is aromatic and tender. Do not allow it to take on any color. (If you sense it starting to brown, remove the pan from heat, and add a few drops of water.) Pour garlic and butter into a heatproof bowl, and set aside to cool to room temperature.
  • Very roughly chop remaining garlic, then place in the bowl of a mortar. Add a generous pinch of salt, and pound to a very fine paste.
  • Place the cooled garlic butter in the bowl of a food processor along with the garlic paste, chopped parsley, chopped chives and chopped basil. Pulse until everything is very finely chopped, stopping to scrape down the sides of the bowl with a spatula as needed. Add remaining butter, Parmesan and black pepper. Pulse to combine, again stopping to scrape down the sides of the bowl with a spatula. Taste, and add salt as needed.
  • Deeply score the loaf of bread in 1-inch slices, but don't cut all the way through. Use an offset spatula or butter knife to generously spread garlic butter on one side of each slice, as far down as you can reach.
  • Wrap the bread in aluminum foil, and place on a baking sheet. Bake on the center rack for 10 minutes, rotate the loaf 180 degrees and bake 10 minutes more. Unwrap the loaf, return it to the baking sheet and bake for 12 to 15 minutes, or until the crust is brown and crisp. Remove from the oven, and let cool slightly.
  • Meanwhile, in a medium bowl, combine the parsley leaves and chive pieces. Tear the basil leaves into the bowl in 1-inch pieces. Add a pinch of salt, and dress lightly with a few drops of olive oil. Stuff herb salad into the bread crevices, and serve the loaf immediately.
