MUSHROOM GALETTE RECIPE
A savory tart made with flaky pastry and a delicious combination of cheeses, mushrooms, and caramelized onions.

Steps:
- Preheat the oven to 400°F. To a pan, add about a tablespoon of olive oil. Warm over medium heat and once hot, add in the onion slices. Cook until the onions begin to become golden along the edges and caramelize.
- Add the mushroom slices to the pan and cook for another few minutes until the mushrooms are tender. Turn off the heat and temporarily set the pan aside.
- Unroll the pie crust onto a baking sheet fitted with parchment paper or a silicone baking mat. Brush the egg white over most of the pie crust, leaving about a 1 1/2 inch perimeter bare. Let the crust rest for a minute for the egg white to slightly dry.
- Spread the ricotta cheese all over the area covered with the egg white. Use a zester to finely grate a little bit of parmesan cheese as a slight garnish over all the ricotta cheese. Add a small pinch of salt and freshly ground pepper, as well as the pinch of nutmeg, over the cheese.
- Distribute the mushroom-onion mixture all over the ricotta cheese, then top that with the shredded gruyere. Add the thyme leaves all over the top.
- Fold the edges of the pie crust over the mushroom filling, all along the edges. Brush the egg yolk over the pastry, then top the pastry with some of the finely grated parmesan.
- Bake the galette for 20-30 minutes. If you're using store-bought crust, it will typically look golden and be ready in the 20-25 minute mark, whereas homemade pastry can take up to 30 minutes.
- Let the galette rest for 10 minutes on the baking sheet, then transfer to your serving plate.

ASIAGO MUSHROOM TART RECIPE
Serve our Asiago mushroom tart alongside a green salad for the perfect light dinner or lunch!

- Bring ½ cup water to boil in microwave. Add dried porcinis and submerge in the water. Allow mushrooms to sit and reconstitute for at least 30 minutes. Meanwhile, preheat oven to 400 degrees.
- Unroll pie crust and roll to a 15" circle. Wrap the crust around a rolling pin and transfer to a baking sheet lined with parchment paper and set aside.
- Use a slotted spoon to remove porcinis from liquid and chop coarsely, reserving the mushroom broth. Place a large skillet over medium-high heat and melt butter. Add porcini and criminis and cook for about 10 minutes, stirring occasionally until mushrooms are tender and dark brown in color.
- Add diced red onion, garlic, thyme and pepper and cook an additional 2 minutes. Add sherry or wine, Worcestershire and reserved porcini broth, making sure not to add any sediment that has collected on the bottom. Boil for 2-3 minutes until liquid is evaporated. Remove from heat and set aside to cool.
- Sprinkle half of the shredded Asiago into bottom of the rolled out pie crust then top with cooked mushrooms. Spread the filling out so it stops 2" from the edge of the dough. Fold the remaining dough up and over the mushrooms, folding and pleating as you work around the tart. Beat one egg thoroughly and brush egg wash over the exposed crust, going under the folds to help them stick together.
- In a small bowl, whisk cream and remaining 2 eggs until smooth then pour into crust. Top with remaining Asiago and bake about 30 minutes until set and the top is golden. Cool at least 15 minutes prior to serving.

FONTINA AND MUSHROOM CROSTINI
Steps:
- Preheat the broiler.
- Heat 1 tablespoon of olive oil in a large saute pan over medium heat. Add the cremini, shiitake and oyster mushrooms and saute for 5 minutes. Add the shallots and sweat until translucent. Add the wine and thyme. Cook until the wine has reduced and the pan is dry, about 5 minutes. Remove the thyme.
- Heat a grill pan over medium heat. Grill the slices of baguette until golden brown. Rub the bread slices with the garlic. Drizzle with olive oil and season with salt. Place the bread on a baking sheet. Place 1 to 2 slices of cheese on each piece of bread.
- Broil until the cheese is melted, 2 to 3 minutes. Top each toast with 1 heaping tablespoon of the mushroom mixture. Sprinkle with chives.
MUSHROOM TART WITH FONTINA AND ASIAGO CHEESE

- Pre-heat the oven to 425 degrees F.
- Heat the olive oil and butter in a large saute pan over medium heat until butter foams.
- Add garlic and mushrooms.
- Sprinkle with 1/2 tsp. sea salt and stir until the mushrooms start to release their moisture and begin to shrink, 2 - 3 minutes.
- Increase heat to medium-high so that you hear a steady sizzle; stir occasionally.
- In about 5 minutes, when liquid evaporates and mushrooms begin to brown, give just an occasional sweep with the spoon (about once a minute) to let the mushrooms brown nicely, cooking them another 2 - 4 minutes.
- Resist desire to stir to often.
- Turn off heat and toss in the parsley and pepper to taste, adding more salt if needed.
- Add other herbs.
- Set aside to cool.
- Meanwhile, thaw the puff pastry at room temperature until pliable, 45 minutes.
- Position a rack on the bottom rack of the oven at 425 degrees F.
- Lightly dust work area with flour.
- Unfold the pastry sheet and roll into rectangle about 10 x 15 inches, and about 1/16" thick.
- Slide it onto a baking sheet lined with parchment paper.
- With the exception of about an inch border around the edges of the pastry, prick the pastry all over with a fork.
- With a pastry bush, brush the beaten egg over the border only (you won't need all of it, so fry it up and either eat it or give to your puppies like I did).
- Bake until the pastry begins to puff and the surface feels dry, about 5 minutes.
- Scatter the sauteed mushrooms onto the pastry, leaving an inch of the border uncovered.
- Bake until the crust border is puffed and deeply golden brown, about 10 minutes.
- Scatter the cheese over the mushrooms and continue baking until the cheese melts, another 5 minutes.
- Let cool briefly on a rack.
- Slide tart off of the pan and parchment paper.
- Slice and serve.
MUSHROOM ASIAGO TARTS
My friend Christine brought these to a Party at my house and she graciously shared the recipe with me. I served them the next week at a dinner party and had rave reviews. They freeze very well.

- Chop mushrooms in a food processor until finely minced.
- In a large saute pan over medium heat melt butter add mushrooms and onions.Cook stirring often until mushrooms are soft and all the liquid has evaporated.
- Stir in garlic and thyme and cook 1 minute longer.
- Remove from heat and season to taste. allow to cool.
- Preheat oven to 375.
- Whisk eggs and cream together and add to cooled mushroom mixture.
- Spoon mushroom filling into tart shells and top with Asiago cheese.
- Bake for 12 to 15 minutes, until pastry is browned and filling puffs up a little.

- Preheat oven to 400 degrees. On a floured surface, roll the puff pastry out to a 16-by-10-inch rectangle. Trim uneven edges. Place the pastry on a baking sheet. With a sharp knife, lightly score dough to form a 1-inch border. Using a fork, prick dough inside the border every 1/2 inch. Bake until golden, rotating pan once, about 15 minutes or until tender.
- Meanwhile, in a small saucepan with a tight-fitting lid, toss onion with 1 tablespoon oil. Season with salt. Cover and cook over medium heat until onion begins to brown, about 5 minutes. Stir. Continue cooking with cover on for 15 minutes, stirring every 5 minutes. Set aside.
- In a large saucepan with a tight-fitting lid, heat remaining oil. Add mushrooms; cover and cook until tender and all liquid has evaporated, about 10 minutes. Fold in spinach; season with salt and pepper. Cover and cook until wilted, about 5 minutes more. Drain any liquid.
- Top dough with mushroom-spinach mixture. Scatter onion and goat cheese on top. Bake until cheese is lightly browned, about 15 minutes.

MUSHROOM- FONTINA PUFF PASTRY TART
Using puff pastry make this a breeze to whip up for a tasty appe-teazer! Use any combination of mushrooms you like but mix 'em up for a more interesting flavor. Timing does not include time to defrost the pastry sheet. Recipe origin unknown, my cooking instructor shared this with the class. Super delish!

- Preheat oven to 425°F Position the rack to the middle of the oven.
- Heat the oil and butter in a 12" saute' pan over medium heat. Once the butter starts to foam, add the mushrooms and garlic.
- The mushrooms will quickly absorb all the fat in the pan.
- Sprinkle with 1/2 t salt and stir until the mushrooms release their moisture and start to shrink, about 2-3 minutes, maybe a bit longer.
- Increase the heat so that you hear a steady sizzle; stir occasionally.
- In about 5 minutes, when the liquid evaporates, and the mushrooms start to brown, give an occasional sweep of the spoon, once a minute, to let the mushrooms edges brown nicely, about 2-4 more minutes. REsist the inclination to stir to often.
- Turn off the heat and stir in the pepper and parsley. Add more salt if needed. Add the other herbs and set aside to cool.
- TART:.
- Thaw the puff pastry sheet at room temperature until pliable, 30-45 minutes.
- Lightly dust a work surface with flour. Unfold the pastry sheet and roll it into a rectangle about 10x15 inches and 1/8" thick.
- Slide onto a baking sheet lined with parchment paper.
- Prick the pastry crust all over with a fork but NOT the outer 1" on all sides.
- Over the 1" border, brush with the beaten egg wash. You will not use all of it.
- Bake the pastry until it begins to puff up and surface feels dry, about 5 minutes.
- Prick the crust with a fork or skewer to release the steam if it puffs up like a pillow.
- Scatter the mushrooms onto the pastry, leaving a 1"border.
- Bake until the border is puffed up and golden brown, about 10 minutes.
- Remove from oven and scatter the cheese on top the mushrooms and continue baking until the cheese melts, about 2-3 minutes.
- Cool briefly and slice. Using a pizza cutter/wheel will help wit tis.

- Put 175g Flora 100% Natural Ingredients, wholemeal flour, half the thyme and a pinch of salt in a food processor and pulse until it starts to clump together. Add 2-3 tbsp cold water and pulse again until it forms a ball. Wrap and chill for 20 mins.
- Meanwhile, heat the remaining 2 tbsp spread in a frying pan, and fry the mushrooms and onions for 10 mins until soft and lightly golden. Season well and remove from the heat.
- Heat the oven to 220C/fan 200C/gas 7. Add a large flat baking sheet to the oven to heat up. Whisk the soft cheese with half the chives, remaining thyme and all the garlic. Season well.
- Roll the pastry out in between two sheets of parchment to a rough rectangle shape, the thickness of a £1 coin, about 30x40cm. Remove the top layer of parchment and smooth over the soft cheese mixture, leaving a 5cm border. Spoon over the mushrooms, in an even layer over the soft cheese, then fold over the 4 sides of the border to overlap the filling slightly. Trim the sides before you fold over if you need to, but will look lovely when baked either way. Glaze the pastry with egg.
- Using the parchment to help you, slide the tart onto the hot tray with the paper. Bake for 35-40 mins until the pasty is cooked though, and crisp. Scatter with the remaining chives to serve, along with a green salad.

- For crust:
- Blend flour and salt in processor. Cut in butter using on/off turns until mixture resembles coarse meal. Add enough water to blend dough. Gather dough into ball; flatten into disk. Wrap in plastic, chill 45 minutes.
- Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim edges, leaving 1/2-inch overhang. Fold overhang in to form double-thick sides. Press tart edges to raise dough 1/8 inch above pan. Chill 30 minutes.
- For filling:
- Bring 1 cup water to boil in saucepan. Add porcini; remove from heat and let stand 30 minutes. Spoon porcini from liquid; reserve liquid. Coarsely chop porcini.
- Melt butter in heavy large skillet over high heat. Add porcini and crimini mushrooms. Season with salt; sauté until deep golden, about 10 minutes. Add shallots; sauté 2 minutes. Add Cognac and reserved porcini liquid, leaving any sand behind in saucepan. Boil until almost all liquid is absorbed, about 3 minutes. Mix in 1 tablespoon herbs. Cool.
- Preheat oven to 375°F. Line crust with foil. Fill with dried beans; bake until golden, about 15 minutes. Maintain oven temperature.
- Sprinkle 1/3 cup cheese in crust. Cover with mushrooms. Whisk cream, yolks, egg and 1 tablespoon herbs in bowl. Pour custard over mushrooms. Top with remaining cheese. Bake until filling is set and top is golden, about 30 minutes. Cool on rack 15 minutes.
MUSHROOM TART
If you have made the mushroom ragoût, this tart is quickly assembled. You need about 2 cups of the ragoût for the filling.

- Line a 9- or 10-inch tart pan with the dough. Using a fork, pierce at regular intervals to allow for even baking. Refrigerate or freeze until ready to prebake and fill.
- Preheat the oven to 350 degrees. Beat together the eggs in a medium bowl. Set the tart pan on a baking sheet to allow for easy handling. Using a pastry brush, lightly brush the bottom of the crust and place in the oven for 10 minutes. Remove from the oven and set aside.
- Whisk the milk into the eggs. Add salt and pepper, and stir in the mushrooms and cheeses. Mix together well and turn into the crust, scraping every last bit out of the bowl with a rubber spatula.
- Place in the oven and bake 30 to 45 minutes, until set and lightly browned.
