MUSHROOM STEAK MARSALA

Mushroom Steak Marsala image

I wanted marsala one cold, rainy night and came up with this after combining pieces of two of my favorite recipes. It is pretty easy and was a big hit with the family. I served it over whole wheat cheese tortellini with roasted asparagus, but it would also be delicious with roasted or mashed potatoes and a veggie. The sauce is versatile enough that it would also be great with chicken if beef isn't your thing...You can also GRILL the steak.

MUSHROOMS MARSALA

Mushrooms Marsala image

I love mushrooms and so I put together this recipe by adding some of my very favorite things to them. They turned out so good that soon they became one of my family's favorite, and so i've been making them for years. There is almost always a bowl of them in my fridge. They are delicious, simple to put together and very versatile. I have served them hot, room temperature or cold, as appetizers or over salads. I have also chopped them up and added them to sauces or used them as a garnish over beef or chicken dishes. Hope you Enjoy!

Time 20m

Yield 4 serving(s)

Number Of Ingredients 7

about 30 baby bella mushroom
1/2 teaspoon salt
3 tablespoons extra virgin olive oil
1 tablespoon dry chopped basil
1 tablespoon crushed or finely chopped garlic
2 tablespoons good balsamic vinegar
1/3 cup sweet marsala wine

Steps:

  • Clean and take stems off (optional) the mushrooms.
  • Place mushrooms in a sauce pan at medium to high heat, sprinkle them with the salt and cover them almost completely with a lid for about 8-9 minutes. Stir them a couple of times just so they don't burn.
  • You want them to render just about all of their water, reducing them in size and growing in flavor. Once they've rendered just about all their water and the bottom of the pot is dry.
  • Add the oil, the basil and the garlic and saute, browning the mushrooms a bit and always stirring so that the garlic does not burn.
  • After about 1 minute of sauteing add the balsamic vinegar and stir for about 30 seconds (the balsamic should boil as it hits the pan) and keep stirring.
  • Lastly, turn the heat a little bit higher and add the marsala wine, stirring and deglacing the bottom of the saucepan as well as burning off the alcohol.
  • Continue to stir for 1 minute or so until the balsamic and marsala sauce begin to thicken a bit. Take off the heat and let it cool.

MARSALA MARINATED SKIRT STEAK

Marsala Marinated Skirt Steak image

I was in Santa Monica a few years ago, where I ordered a chicken Parmesan that featured a garlic, rosemary, and Marsala-spiked sauce. I loved the subtle sweetness the wine added to the tomato. For whatever reason, I thought of those flavors while brainstorming a quick skirt steak marinade, and this is what happened. Skirt steak is always great on the grill and doesn't need much help, but I love how this came out.

Provided by Chef John

Categories     Meat and Poultry Recipes     Beef     Steaks     Skirt Steak Recipes

Time 8h20m

Yield 4

Number Of Ingredients 7

⅔ cup Marsala wine
¼ cup ketchup
6 cloves garlic, minced
2 teaspoons kosher salt
1 teaspoon dried rosemary
1 teaspoon ground black pepper
1 (1 1/2-pound) skirt steak, cut in half across the grain

Steps:

  • Whisk Marsala wine, ketchup, garlic, kosher salt, rosemary, and black pepper together in a large glass or ceramic bowl. Add skirt steak and turn to evenly coat. Cover the bowl with plastic wrap, and marinate in the refrigerator, 8 hours to overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove steak from marinade, shake off excess, and discard marinade.
  • Cook steak on the preheated grill until meat shines, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Transfer meat to a plate and let rest at least 5 minutes before slicing against the grain.

STEAK MARSALA - THE MIDNIGHT BAKER - GREAT STEAK RECIPE
Most of the ingredients you need to make up the marsala sauce, you probably have on hand. Basically, any wine will do in the sauce, but marsala will give the best flavor. I’m a huge advocate for using fresh–be that veggies or herbs–so I highly recommend using fresh in this sauce. It will taste much better.
