Steps:
- Heat oven to 375 degrees.
- Coat a 2-quart baking dish with cooking spray.
- Melt butter in a large frypan over medium heat; add in onion and cook stirring occasionally until onion begins to brown (about 5 minutes).
- Stir in flour, then slowly add in milk.
- Add in potatoes; stir to mix; bring to a boil.
- Stir in 3/4 cup cheese, salt and black pepper.
- Pour mixture into prepared baking dish then spread out.
- Bake for 1 hour uncovered.
- After 1 hour cooking time cover with foil and continue to bake another 20 minutes more.
- Change oven to broil heat.
- Sprinkle the remaining cheese over potatoes and broil 6-inches from heat until the cheese is golden (about 1-2 minutes).
- Cool 5 minutes before serving.
SPINACH, FETA AND POTATO AU GRATIN RECIPE

- Preheat oven to 375. Spray a 9x13 baking/casserole dish with non-fat cooking spray.
- Squeeze out as much water from the spinach as possible.
- Layer half the potato slices in the baking dish (it's ok to overlap them a bit). Season with salt, pepper, and paprika. Top with the spinach and feta cheese. Then cover with the remaining slices of potatoes. Season these potato slices with salt, pepper, and paprika.
- In a medium sized mixing bowl, whisk together egg substitute, milk, garlic powder, onion powder, salt, pepper and the 1 tsp paprika.
- Pour mixture over the potatoes. Dollop butter evenly over the top (I just placed little pieces of the butter all over the top, and then spread it a bit with a spoon).
- Cover with foil and bake for 30 minutes, or until potatoes are tender. Remove foil and bake for another 30-40 minutes, or until top of au gratin is golden.
- Remove from oven and let cool about 10-15 minutes before serving. Cut into 6 equally sized portions.

WW POTATOES WITH ONIONS
This is so good!! It is out of a WW cookbook called "Simple & Classic Homecooking". Has only 1 Point per serving. Yukon gold potatoes give this dish a wonderful buttery flavor. Sprinkle 1/4 cup shredded reduced-fat sharp Cheddar cheese over the potaotes for a delicious cheesy flavor option. Hope you enjoy! Edit 5/24/07 This worked great on the grill. Place all the ingredients on heavy duty foil, seal and cooked about 30 minutes.

- Preheat over to 425 degrees.
- Rub a shallow 3-quart baking dish with cut sides of garlic halves; discard garlic.
- Coat dish with cooking spray.
- Coat a small nonstick skillet with cooking spray; and place over medium heat until hot.
- Add onion, and saute' 5 minutes or until onion is tender; set aside.
- Arrange one-third of potato slices in prepared dish, and sprinkle with half of salt and half of pepper.
