1 (10.75 ounce) can Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1 pound ground beef
⅓ cup Italian-seasoned dry bread crumbs
1 small onion, finely chopped
1 egg, beaten
1 tablespoon vegetable oil
1 tablespoon Worcestershire sauce
2 tablespoons water
1 ½ cups sliced mushrooms

Steps:

  • Thoroughly mix 1/4 cup soup, beef, bread crumbs, onion and egg in a large bowl. Shape the beef mixture firmly into 4 (1/2-inch-thick) burgers.
  • Heat the oil in a 10-inch skillet over medium-high heat. Add the burgers and cook until they're well browned on both sides. Pour off any fat.
  • Add the remaining soup, Worcestershire, water and mushrooms to the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the burgers are cooked through.

1 (8 ounce) package mushrooms, chopped, or more to taste
1 onion, chopped
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon ground black pepper
cooking spray

Steps:

  • Remove ground beef from the refrigerator; let stand at room temperature for 20 minutes.
  • Mix mushrooms, onion, garlic, Italian seasoning, salt, and pepper together in a large bowl. Mix in beef. Form beef mixture into 1/2-inch-thick patties.
  • Grease an indoor grill pan with cooking spray. Cook patties in batches until browned and no longer pink in the center, about 10 minutes per side.

For some of the juiciest, most flavorful burgers you've ever had try making blended mushroom and beef burgers. Blended burgers combine beef and mushrooms to create tastier, healthier burgers with a lower environmental footprint.

1 lb ground beef
8 oz mushrooms (rough chopped)
1/3 medium white onion
2 cloves garlic
1/2 tbsp Worcestershire sauce
1 tsp smoked paprika
1-1/2 tsp salt
1 tsp ground pepper

Steps:

  • Wash and clean the mushrooms before giving them a rough chop to break them into chunks.
  • In a food processor mince the onions and garlic. Once they're done, add the mushrooms and use the pulse mode to mince them. Using the pulse mode and giving the mushrooms a rough chop helps them hold on to their liquid, making the burgers easier to form.
  • Combine the mushrooms with the smoked paprika, salt, pepper, and Worcestershire sauce.
  • In a large bowl mix the mushrooms and ground beef together.
  • Using your hands, form the mixture into five patties, using your thumbs to create a small indentation in the top.
  • Grill the burgers on a medium-high grill for 6 minutes per side.
  • Serve on toasted buns with your favorite condiments.

4 whole grain kaiser rolls or 4 hamburger buns, split and toasted

Steps:

  • Melt 1 tablespoon butter Spread in 12-inch nonstick skillet over medium-high heat and cook mushrooms, stirring frequently, 5 minutes or until golden; remove mushrooms from skillet and keep warm.
  • Melt remaining 1 tablespoon butter Spread in same skillet over medium heat and cook green peppers with onion, stirring frequently, 10 minutes or until very tender. Add to mushrooms and keep warm.
  • Cook burgers in same skillet over medium-high heat, turning once, 5 minutes or until burgers are thoroughly cooked. Serve on rolls, then top with mushrooms, peppers and onion.

A great way to use inexpensive round steak. The mushroom gravy is delicious with mashed potatoes. The recipe is an old one from Jean Anderson's Grass Roots Cookbook. I've been making it since before my kids were born.

3 lbs beef round steak (cut 1 - 2 inches thick)
2 tablespoons butter or 2 tablespoons bacon fat (I often sub olive oil)
1 medium yellow onion, chopped
3/4 lb mushroom, thinly sliced
1/3 cup flour
1 cup beef stock
1 cup milk
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat oven to 350 F (180 C).
  • In a large, heavy oven-proof skillet over moderately high heat, brown the steak on both sides in the fat.
  • Transfer to a plate and keep warm.
  • In the drippings in the skillet, saute the onion and mushrooms over moderate heat for about 5- 8 minutes, until limp and lightly browned.
  • Blend in the flour, add the stock, milk, salt and pepper, and heat, stirring constantly, until thickened and smooth- about 3 minutes.
  • Place the steak back in the skillet.
  • Turn and spoon some of the mushroom sauce over the steak.
  • Cover snugly and bake for about 1 1/2 hours, or until steak is fork tender.
