Homemade Peanut Butter Eggs image

Homemade Peanut Butter Eggs are loaded with peanut butter and covered in a delicious chocolate coat. They are super easy to make and are our favorite treats for Easter!

1 1/2 cups creamy peanut butter
3 cups powdered sugar
1/3 cup unsalted butter (melted)
2 tablespoons milk
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups milk chocolate chips
2 tablespoons shortening

Steps:

  • Cover a cookie sheet with wax paper and set aside.
  • Add powdered sugar and peanut butter to a large bowl and using a high-speed mixer, beat together until combined. Add melted butter and beat until smooth.
  • Add milk, vanilla and salt, continue to beat until a soft and smooth dough forms. The dough may be a little crumbly, which is ok.
  • On a lightly floured surface, roll dough in a disk about ½ inch thick. Using an egg cookie cutter, measuring cups that resemble an egg or a knife, cut the dough into egg-like shapes. Place on the prepared cookie sheet. Freeze for an hour.
  • Add chocolate chips and shortening to a microwave-safe bowl and microwave in 30 seconds increments, stirring after each one until fully melted. Careful to not burn it.
  • Using two forks, dip each peanut butter egg into the melted chocolate to coat. Place them onto the prepared baking sheet.
  • Chill for 20 minutes, or until chocolate hardens. Keet in the fridge.
  • Serve and enjoy!

Savory Deviled Eggs image

I've never been a fan of the traditional "sweet relish" Deviled Eggs, so I created this recipe over the years. They have a nice savory flavor that's always a big hit. I bring them to all kinds of gatherings - potlucks, work parties, block parties and the like. I generally garnish them with whatever's on hand - capers, olives, pimentos, chives. Once I brought them to a Halloween party and dressed them up using capers for eyes, pimento for a mouth, and chives for horns - they truly were Deviled Eggs! One tip: placing the eggs on a cloth napkin covered platter keeps the slippery buggers from sliding all over the place and it adds a nice, festive touch.

1 dozen egg, hard-boiled and shelled
1/4 cup mayonnaise
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/2 teaspoon celery salt
pepper, to taste
1 -2 dash Worcestershire sauce

Steps:

  • Cut eggs lengthwise and put yolks in a food processor.
  • Add Mayo, Dry Mustard, Paprika, Celery Salt, Pepper and Worcestershire Sauce to food processor and process until mixture is nice and creamy, adjusting the Mayonnaise as necessary and scraping down the sides of the food processor a couple of times to make sure everything is uniformly mixed.
  • Place mixture from food processor in a resealable bag, snip off small piece of bag corner, and pipe into egg white sections.
  • Garnish eggs as desired - capers, green and/or black olives, pimento, herbs, paprika.

We have chickens and deviled eggs are becoming a weekly treat for us. I have played around with this recipe for a while and think I have it perfect now. If you don't like a deviled egg that is slightly sweet this may not be for you. I have to say the idea of powdered sugar comes from a cooking blog "Measured by the Heart" in her recipe she suggested powdered sugar will blend better than granulated sugar and I agree. I adapted my own recipe but like the powdered sugar idea. Credit for the heavy cream comes from the Pioneer Woman, works nicely to make a creamy filling.

12 hard-boiled eggs
1 tablespoon sweet pickle relish
1 tablespoon honey mustard
2 tablespoons Miracle Whip
1 tablespoon powdered sugar
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon heavy cream (optional)

Steps:

  • Boil eggs in a large pot using the method you choose. Peel and slice eggs in half.
  • Remove the yolks from the eggs and place them in a bowl. Mash the yolks with a fork or in a food processor. Add all of the ingredients. If necessary add a little more Miracle Whip and mustard to make the mixture creamy.
  • Spoon the filling into the egg whites. I like to use two spoons to do this. Or you can use a piping bag.
  • Top with a tiny sprinkle of paprika if desired.

My mother-in-law made these for our Christmas Eve get-together recently. At first, I thought these would be "just another deviled egg," but they surprised me. They have that traditional deviled egg taste, but with just the right hint of both sweetness and tanginess added. The whole plate disappeared like magic. Even the kids loved them, as they weren't too spicy, nor did they have any "funny chunks" of onions, pickles, etc. They also keep well in the fridge, travel well, and are great to do ahead. I hope you enjoy them as much as our family did.

1/3 cup mayonnaise, plus
1 tablespoon mayonnaise
5 teaspoons sugar
