2 dried shiitake mushrooms
1/2 cup fresh spinach leaves
1/2 cup medium silken tofu
3 cups cold water
2 1/2 tablespoons dark miso (red or brown)
2 tablespoons scallion tops, sliced
1/2 teaspoon toasted sesame oil

Steps:

  • combine water and mushrooms in a saucepan, bring to a boil.
  • remove from heat, remove mushrooms.
  • cut off stems, discard, slice caps thinly.
  • return to water, bring back to simmer and cook 15-20 minutes.
  • add spinach and tofu, simmer for 1-2 minutes.
  • remove from heat.
  • in a small bowl combine miso with 2 tbsp of broth and mix well.
  • stir into soup.
  • sprinkle each serving with sliced scallions and 1/4 tsp of sesame oil.

Steps:

  • Beat eggs together with milk, salt, and pepper in a bowl.
  • Heat oil in a skillet over medium heat. Add mushrooms; cook and stir until softened, about 5 minutes. Mix in green onions; cook until slightly softened, about 1 minute. Pour in the beaten eggs. Cook and stir until the edges harden, 2 to 3 minutes. Flip and sprinkle Cheddar cheese on top. Cook until egg is set and cheese is melted, 1 to 2 minutes. Fold omelet in half; top with more Cheddar cheese.

1 cup sliced leeks
2 tablespoons margarine
2 tablespoons olive oil
½ cup dry sherry
3 (10.5 ounce) cans condensed beef broth
3 ¾ cups water
½ teaspoon ground black pepper
½ cup uncooked orzo pasta

Steps:

  • In a large pot over medium high heat, saute the mushrooms and leeks in the butter or margarine and olive oil until tender. Add the sherry and reduce liquid by half.
  • Then add the beef broth, water and ground black pepper. Bring to a boil and add the pasta. Boil gently for 10 minutes, or until the pasta is tender. Garnish with sliced mushrooms if desired.

2 cups Spring onion (green onion or scallion) (chopped)
1 medium or 1 cup Potatoes (cubed)
Salt to taste
3 cups Vegetable stock or water
½ teaspoon Black pepper powder
1 teaspoon Lemon juice

Steps:

  • Heat the olive oil in a pan on medium heat.
  • Once hot add sliced garlic. Saute for a minute or till it gets light brown in color.
  • Then add chopped scallions or spring onions. Saute for a minute.
  • Add potatoes and salt.
  • Pour in the vegetable stock or water. Crank the heat to high and bring it to a boil.
  • As it starts boiling, lower the heat to medium-low and let it simmer.
  • Simmer it till potatoes are cooked and soft
  • Let it cool down a little bit and make smooth puree in grinder or blender. Or use immersion hand blender.
  • The soup is thick yet right consistency. If yours is too thick then you can thin it out as per your liking by adding more stock or water.
  • Bring it to a boil, so soup will be nice and hot. Mix in freshly crushed black pepper.
  • Turn off the stove
  • Lastly mix in lemon juice and serve.

4 cups water
1 tablespoon soy sauce, preferably tamari
1/2 teaspoon rice wine vinegar (unseasoned)
2 ounces firm tofu, cut into 1/4-inch cubes (1/4 cup)
1 scallion, green part only, sliced very thin, for garnish

Steps:

  • Combine mushrooms and the water in a small saucepan, and bring to a boil over high heat. Reduce heat until liquid is at a simmer; cook, partially covered, until broth is a rich brown color, about 25 minutes.
  • Strain mixture through a fine sieve into a medium bowl (or large liquid measuring cup), pressing on mushrooms with a wooden spoon to remove as much liquid as possible; discard mushrooms. Stir soy sauce and vinegar into broth; divide evenly among four bowls. Add tofu, and garnish with scallion. Serve immediately.

12 scallions, green and white parts, sliced thinly
3 garlic cloves, finely chopped (or to taste)
4 tablespoons all-purpose flour
3 cups low sodium chicken broth (or for a vegetarian soup, use vegetable stock)
8 ounces mushrooms, coarsely chopped
1/2 cup heavy cream or 1/2 cup half-and-half, if you want to conserve calories
salt & freshly ground black pepper (to taste)
chopped fresh tarragon (to garnish) or chives (to garnish)

Steps:

  • Heat the butter in a large pot over moderate heat.
  • Saute the scallions and garlic until tender but not too brown, about 5 minutes.
  • Stir in the flour and cook 2 to 3 minutes to get rid of the raw flour taste.
  • Add the stock and mushrooms and bring to a gentle boil, stirring frequently.
  • Simmer covered for 5 minutes.
  • Puree in batches using an electric blender or food processor.
  • (If you have one, an immersion blender is the best!) Strain, return to the pot and add the cream or half& half, salt, and pepper.
  • Reheat and serve garnished with chopped fresh herbs.
  • Serve with a crusty loaf of French bread and a glass of wine.

Steps:

  • Melt the butter in a large pot over medium-high heat. When the butter begins to foam, add the onions, mushrooms, garlic, and a pinch of salt. Saute for 5 minutes, stirring often.
  • Sprinkle in the flour, coating the mushroom mixture. Cook for 1 minute, while stirring constantly. The flour may start to stick to the bottom of the pot, so be careful not to scorch it.

3 ounces dried shiitake mushrooms
1/2 cup light miso
1 pound baby bok choy, cut in quarters
8 ounces firm tofu, cut into cubes

Steps:

  • In a large soup pot over medium heat add the scallion white parts, ginger, garlic, and sesame oil. Cook for 1 minute and add 8 cups water. Rinse the kombu and add it to the pot along with the bonito flakes. Bring it to a simmer and cook for 10 minutes - do not let it boil. Remove the kombu and set it aside. Add the dried mushrooms and miso to the pot and let it simmer gently for 10 to 15 minutes, or until the mushrooms are hydrated and tender. Add the bok choy and simmer until it is tender, about 10 minutes. Add the tofu and cook for another 5 minutes. Ladle into bowls and garnish with the reserved green parts of scallions.
