8 ounces dried pasta shapes
1 ounce butter
8 ounces button mushrooms, halved
1 ounce plain flour
1 1/4 cups milk
2/3 cup single cream
1/2 teaspoon garlic, minced
salt & pepper
8 ounces ham, diced

Steps:

  • Cook pasta in boiling, salted water. Drain. Meanwhile, melt butter in a pan and fry mushrooms for 2-3 minutes. Add flour. Blend in milk, cream, garlic and seasoning.
  • Bring to the boil, stirring. Add ham and cook for 1-2 minutes. Toss into pasta.

1/4 pound 1/8-inch-thick slices serrano ham or prosciutto, cut into thirty 1-inch squares
24 small mushrooms, stems removed
6 6-to-8inch bamboo skewers
Coarse salt

Steps:

  • Alternate 5 ham squares and 4 mushrooms on each skewer. Brush skewers with 2 tablespoons oil.(Skewers can be made 6 hours ahead. Cover and chill.)
  • Brush heavy large skillet with remaining 1 tablespoon oil; heat over medium heat. Add skewers and cook until mushrooms are brown and softened, turning occasionally, about 12 minutes. Season skewers with salt. Serve, passing garlic mayonnaise separately.

1 tablespoon olive oil
1 onion, chopped
1 garlic clove, finely chopped
4 cups mushrooms, sliced
1/4 cup dry sherry or 1/4 cup dry white wine
1 teaspoon dried thyme
2 tablespoons flour
2 cups milk
1 cup black forest ham, chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
16 ounces linguine or 16 ounces spaghetti

Steps:

  • In a big skillet, heat oil at medium heat. Add onion, garlic and cook, stirring from time to time, for about 5 minutes or until onion has soften. Add mushrooms, sherry or wine and cook for about 5 minutes or until mushrooms have soften. Sprinkle with flour and stir.
  • With a whisk, add milk slowly and keep cooking, stirring from time to time, for about 12 minutes or until the sauce has thicken. Add ham, parsley, salt and pepper and stir.
  • In the meantime, in a big casserole with boiling salted water, cook pasta 8 to 10 minutes or until al dente. Drain pasta and put back in the casserole. Add the mushrooms and ham sauce and stir to coat well.

1 tablespoon olive oil
1/2 cup chopped onion
1 lb white mushroom, quartered (about 6 cups)
5 -6 cups bow tie pasta (or other short dried pasta)
1 cup cooked peas
1 cup fat-free chicken broth
1/4 teaspoon ground black pepper
1/4 cup grated parmesan cheese
2 cans chopped cooked ham

Steps:

  • In a large skillet (preferably nonstick), heat oil over medium-high heat.
  • Add onion; cook and stir until tender, about 5 minutes.
  • Stir in mushrooms and ham.
  • Cook and stir until mushrooms are tender, about 8 minutes.
  • Meanwhile, cook pasta according to package directions; drain; return pasta to saucepan.
  • Add mushroom-ham mixture, peas, chicken broth and pepper; cook and stir until hot, about 3 minutes.
  • Just before serving, add grated cheese.

Mushroom brochettes are easy to make, and can be made all year, in the oven or on the BBQ. Fresh herbs are best, but not necessary.

24 medium mushrooms
1/2 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon summer savory

Steps:

  • Clean the mushrooms well. You can scuff up the skin a little, so that the mushroom juices combine with the herbs.
  • Mix the herbs together and crush them with a mortar and pestle, or just crush them together.
  • Put 6 mushrooms on each of 4 bamboo skewers. Salt and pepper them, and sprinkle the herb mix over them.
  • Put them under a hot grill (or on the BBQ) and turn them frequently. Sprinkle more herbs and salt and pepper once or twice.
  • The mushrooms should be hot, and cooked but still crisp when they are done.

CREAMY HAM BROCCOLI AND MUSHROOM CASSEROLE

This is a great recipe to use leftover ham, you can also use cooked chicken or turkey in place of the ham. One medium cauliflower cut into florets can be used in place of broccoli if desired. This recipe can be doubled if desired. You will love this casserole!

3 cups broccoli florets (can use more)
4 tablespoons butter
1 -2 tablespoon minced fresh garlic
1 small onion, finely chopped
1 pinch cayenne pepper (optional or to taste)
1/4 cup flour
2 cups half-and-half cream (or use full-fat milk)
1 cup shredded old cheddar cheese
1/2 cup sour cream
1/2 teaspoon seasoning salt (or to taste or use white salt)
black pepper
2 cups cooked finely diced ham
3/4 cup canned sliced mushrooms, well drained
1 1/2 cups breadcrumbs
2 tablespoons grated parmesan cheese (optional)
2 tablespoons melted butter

Steps:

  • Set oven to 350 degrees.
  • Butter a 2 or 3-quart casserole dish.
  • Cook the broccoli florets in boiling water until just tender; drain very well, then place on paper towels to dry further.
  • Melt butter in a medium heavy-bottom saucepan over medium heat; add in the onions, garlic and cayenne, saute until tender (about 3-4 minutes).
  • Add in flour whisking constantly until mixture thickens (about 2 minutes, do not brown the flour, if the mixture is too thick just add in more cream to thin out).
  • Slowly add in half and half cream or full-fat milk, whisking constantly until the mixture begins to thicken.
  • Add in cheddar cheese and sour cream; stir until the cheese melts (do not boil).
  • Season with salt and black pepper to taste.
  • Add in broccoli florets, ham and mushrooms into the cheese mixture; mix to combine.
  • Transfer to prepared casserole dish.
  • In a small bowl mix together the breadcrumbs with Parmesan cheese (if using) and melted butter until combined; sprinkle on top of casserole.
  • Bake uncovered for about 45 minutes.
  • Delicious!

MUSHROOM AND HAM TAGLIATELLE

1 tablespoon oil
1 lb button mushroom, halved if large
7 ounces cream cheese
10 ounces spinach
2 teaspoons Dijon mustard
4 ounces Greek yogurt
4 1/2 ounces ham, roughly chopped
1 pinch salt and pepper
parmesan cheese (optional)

Steps:

  • Boil the pasta in lightly salted water as directed on the pack.
  • Meanwhile, heat the oil in a large frying pan, add the mushrooms and fry for a few minutes until golden.
  • Add the cream cheese and wait for it to melt, then stir in the spinach.
  • Cover with a lid and steam for 2 mins until wilted. Stir in te mustard, yogurt and ham and season wih salt and pepper.
  • Drain the pasta and stir into the sauce. Toss together before serving.
  • Serve with parmesan if you like.
