BAKED COD WITH GARLIC AND HERB RITZ CRUMBS



Baked Cod with Garlic And Herb Ritz Crumbs image

Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
  • Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
  • Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
  • Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.

1/4 lb mushrooms (thinly sliced)
1 pint mixed cherry tomatoes (halved)
2 garlic cloves (minced)
Kosher salt
Black pepper
4 cod fillets (each about 1" thick with skin removed)
Italian parsley (chopped)
Basil (chopped)
1 lemon (cut into wedges)

Steps:

  • Preheat oven to 400 degrees.
  • In a large skillet, heat oil over medium heat. Add mushrooms and cook until soft, about 5 minutes.
  • Stir in tomatoes and garlic. Season with salt and pepper then cook for another 2 minutes. Remove from heat.
  • Brush a shallow baking dish with oil. Arrange fish in a single layer then lightly season with salt and pepper.
  • Pour the tomatoes mixture over the fish and spread evenly.
  • Bake for 12 - 15 minutes, uncovered until fish is opaque. Sprinkle fish with chopped basil and parsley. Serve immediately with lemon wedges.

1 teaspoon olive oil
2 1/2 cups cubed wild mushrooms
1 clove garlic peeled and minced
2 teaspoons salt
Freshly ground pepper to taste
3 tablespoons chopped Italian parsley
1 cup mushroom broth
3 teaspoons fresh lemon juice
4 4-ounce cod fillets

Steps:

  • Heat the olive oil in a large, nonstick skillet over medium heat. Add the mushrooms and cook, stirring occasionally, for 2 minutes. Add the garlic and cook for 30 seconds longer. Stir in 1 teaspoon of salt, pepper, 2 tablespoons of parsley and mushroom broth. Simmer for 10 minutes. Stir in 2 teaspoons of lemon juice.
  • Season the cod with 1 teaspoon of salt and pepper. Drizzle with 1 teaspoon of lemon juice. Place the fillets in the skillet, spooning the mushroom liquid over the top. Reduce the heat to medium-low and braise until the fish is cooked through, about 6 minutes. Place 1 cod fillet on each of 4 plates and spoon the mushroom sauce over the top. Sprinkle with the remaining parsley and serve immediately.

For tomato compote:
1 tablespoon olive oil
1 pound tomatoes, peeled, seeded, coarsely chopped
1/2 teaspoon sugar
For fish:
8 tablespoons (1 stick) butter, room temperature
8 ounces fresh mushrooms, chopped (about 3 cups)
1/4 cup chopped shallots
1 large egg
6 tablespoons chopped fresh parsley
1 tablespoon plus 1 teaspoon chopped fresh thyme
1 teaspoon salt
1/2 teaspoon ground black pepper
3 cups fresh breadcrumbs made from French bread
4 garlic cloves, thinly sliced
2 shallots, thinly sliced
1 cup fish stock or bottled clam juice
4 6-ounce cod, orange roughy or red snapper fillets

Steps:

  • Make tomato compote:
  • Heat oil in heavy medium skillet over medium heat. Add tomatoes and sugar. Stir until tomatoes are very tender and mixture is thick, about 15 minutes. Season tomato compote with salt and pepper.
  • Make fish:
  • Melt 2 tablespoons butter in heavy large skillet over medium-high heat. Add mushrooms and chopped shallots. Sauté until liquid evaporates and mushrooms begin to brown, about 8 minutes. Cool completely.
  • Using electric mixer, beat 5 tablespoons butter in large bowl until light. Beat in egg, then parsley, 1 tablespoon thyme, 1 teaspoon salt and 1/2 teaspoon pepper. Mix in breadcrumbs and mushroom mixture.
  • Preheat oven to 450°F. Sprinkle sliced garlic, sliced shallots and remaining 1 teaspoon thyme over bottom of 15 x 10 x 2-inch glass baking dish. Add fish stock, then fish fillets. Sprinkle fish with salt and pepper. Spoon breadcrumb mixture atop fish, covering tops of fish completely and pressing slightly to adhere. (Can be prepared 8 hours ahead. Cover tomato compote and fish separately and refrigerate. Rewarm compote over medium-low heat before serving.)
  • Bake fish until opaque in center, about 15 minutes. Transfer to broiler. Broil just until topping is crisp and golden, about 1 minute.
  • Using slotted spatula, transfer fish to plates. Transfer cooking liquid to another medium skillet. Bring cooking liquid to simmer over medium heat. Add remaining 1 tablespoon butter and whisk just until melted and well blended. Season sauce to taste with salt and pepper. Spoon sauce around fish. Spoon dollop of tomato compote alongside and serve fish immediately.

In this recipe, tender, flaky cod is poached in a light, flavorful broth that optimizes bottled clam juice, a versatile yet underused ingredient. The juice is perfect for weeknight cooking, when shortcuts to big flavor are key, and it adds a subtle, briny backbone to any broth. This broth is also infused with rich shiitake mushrooms, aromatic garlic and a generous boost of bright ginger. Pearl couscous gets toasted before boiling, adding nutty notes to the soup. It also contributes delightful chewiness, but other small pastas like ditalini or orzo are also good substitutes, though cook time may need to be adjusted accordingly.

1 cup pearl couscous
1 (8-ounce) bottle clam juice
1 1/2 pounds skinless cod fillet, cut into 1 1/2-inch pieces
1 cup thawed frozen peas
1/4 cup chopped scallions

Steps:

  • In a large pot or Dutch oven, heat 2 tablespoons oil over medium. Add onion and cook, stirring occasionally, until softened, about 3 minutes. Add garlic and ginger, and cook, stirring, until fragrant, 1 minute.
  • Add mushrooms and the remaining 1 tablespoon oil, and season with salt and pepper. Cook, stirring occasionally, until lightly golden, about 3 minutes. Add couscous and stir until lightly toasted, about 2 minutes.
  • Add clam juice and 5 cups water, and bring to a boil over high heat. Reduce heat to medium and simmer until couscous is al dente, about 10 minutes.
  • Add cod and peas and bring back to a simmer. Cook, stirring occasionally, until fish is flaky and and cooked through and couscous is tender, about 5 minutes longer. Stir in scallions and season with salt and pepper.
  • Divide cod, vegetables and couscous across bowls, and top off with remaining broth. Serve warm.

Just looking for something new to do with a bit of cod, and came up with this delicious and simple dish. The bay leaf is the key ingredient, but make sure you use a small one, as it will take over otherwise.

1 (6 ounce) boneless cod fish fillets
1 small bay leaf
1 tablespoon butter
2 scallions
2 mushrooms
1 tablespoon beef stock
Worcestershire sauce

Steps:

  • Preheat oven to 375 degrees.
  • Place a piece of tin-foil large enough to make a pouch on an oven-safe pan, place half the butter on the tin-foil and put in oven until butter is melted.
  • Once the butter melts, add bay leaf and place the fillet on top.
  • Cut mushrooms and scallions into small pieces, and place on top of cod (reserving 1 Tbs of scallions for garnish).
  • Place remaining butter on top, add beef stock and two dashes of Worcestershire Sauce, and seal foil package.
  • Cook for 20 minutes, remove, garnish with reserved scallions and enjoy.
  • TIP: Use a small bay leaf; it is the key ingredient, but it will over-power the other ingredients if too large.

4 sprigs fresh rosemary

4 Pacific cod or halibut fillets (6 to 8 ounces each)
1 tablespoon fresh lemon juice
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. On a large rimmed baking sheet, toss mushrooms with 2 tablespoons olive oil and rosemary; season with salt and pepper. Roast until tender and browned, tossing occasionally, about 15 minutes.
  • Push mushrooms to sides of pan; place cod in center and season with salt and pepper. Roast until opaque throughout, 8 to 10 minutes.
  • Meanwhile, in a small bowl, whisk together remaining oil, lemon juice, mustard, and parsley; season with salt and pepper. Serve with cod.

1 whole head of garlic
1 1/2 tablespoons Sherry wine vinegar
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons chopped fresh chives

1 teaspoon minced shallot
1 teaspoon chopped fresh tarragon
1/2 cup extra-virgin olive oil
Fine sea salt
Mushrooms
4 4- to 5-inch-diameter portobello mushrooms, stemmed
1/3 cup extra-virgin olive oil
2 garlic cloves, chopped
8 fresh rosemary sprigs
8 fresh thyme sprigs
Fish
4 7- to 8-ounce skinless cod fillets
Quick-cooking flour (such as Wondra)
2 tablespoons canola oil

Steps:

  • For vinaigrette:
  • Preheat oven to 400°F. Wrap garlic in foil. Place foil packet directly on oven rack and roast garlic until tender, about 40 minutes. Cool garlic. Peel and finely mash enough garlic cloves to measure 1 tablespoon packed. Place mashed garlic in heavy small saucepan. Add vinegar, mustard, chives, parsley, shallot, and tarragon. Gradually whisk in olive oil. Season vinaigrette to taste with sea salt and pepper. DO AHEAD: Vinaigrette can be made 1 day ahead. Cover and refrigerate.
  • For mushrooms:
  • Preheat oven to 400°F. Brush mushrooms all over with olive oil. Place mushrooms, rounded side down, on foil-lined baking sheet. Sprinkle with sea salt and pepper, then chopped garlic. Arrange 2 rosemary sprigs and 2 thyme sprigs on each. Roast mushrooms until tender, about 25 minutes.
  • Meanwhile, prepare fish:
  • Sprinkle fish with sea salt and pepper; dust lightly with flour. Heat canola oil in heavy large skillet over medium-high heat. Add fish and sauté until brown and just opaque in center, about 5 minutes per side.
  • Whisk vinaigrette over low heat to warm slightly. Thinly slice each mushroom on slight diagonal; overlap slices in row on 1 side of each plate. Spoon vinaigrette onto opposite side of plate; top with fish.

Baked Cod or Other Fillets with Dried Mushroom Sauce image

Remember fish dishes baked with canned cream of mushroom soup? This is the original, and you may not believe how good it is. Never buy dried porcini in the tiny packages sold at stores. A package should contain at least an ounce, and the mushrooms should look like mushrooms, not powder. Given that you can buy a pound of dried porcini for as little as $25 (look on the Internet), you should expect to pay no more than $5 for an ounce. Serve this with buttered rice or noodles.

1/2 ounce dried porcini mushrooms
1 cup hot fish stock, preferably homemade (page 161), or water
2 tablespoons butter
1/4 cup chopped shallot or red onion
1 1/2 to 2 pounds cod, red snapper, striped bass, halibut, or any other thick fillet, in 1 or 2 pieces
Salt and black pepper to taste
1 cup sour cream

Steps:

  • Preheat the oven to 400°F. Soak the mushrooms in the stock until softened, about 10 minutes. Trim any hard parts and chop roughly. Pour the soaking liquid through a cheesecloth-lined strainer.
  • Use about half the butter to grease a baking dish just large enough to hold the fish. Add the shallot, then the fish; sprinkle the fish with salt and pepper. Cover lightly with foil and bake for about 5 minutes.
  • Meanwhile, combine the mushrooms, sour cream, and enough of the soaking liquid to make a thin sauce. Pour this over and around the fish, re-cover the pan, and continue to bake until the fish is done (a thin-bladed knife inserted into its center will meet little resistance), 5 to 10 minutes more. Serve hot.
