My mother always made this dish as a special treat, and now I do, too. The combination of ingredients is just right-the white sauce and cheese complement the flavor of the cabbage so well that even people who don't care for cabbage like it!

1/2 medium head cabbage, chopped (about 4 cups)
3 tablespoons vegetable oil
3 tablespoons all-purpose flour
1/2 teaspoon salt
Dash pepper
1 cup whole milk
1 cup shredded cheddar cheese
3/4 cup bread crumbs
2 tablespoons butter, melted

Steps:

  • Place cabbage in a greased 2-qt. casserole; set aside. In a saucepan, heat oil over medium. Stir in flour, salt and pepper; cook until bubbly. gradually stir in milk; cook and stir until thickened. Fold in cheese. Pour over cabbage. Combine bread crumbs and butter; sprinkle on top. Bake, uncovered, at 350° for 20-30 minutes or until bubbly. Serve immediately.

8 tablespoons unsalted butter
2 tablespoons packed light brown sugar
1/2 head light-green cabbage, sliced
Kosher salt
1 cup low-sodium chicken broth
1 1/4 pounds sea scallops
Freshly ground pepper
1 to 2 tablespoons capers, rinsed if packed in salt
1/4 cup golden raisins
3 tablespoons cider vinegar
1/2 cup roughly chopped fresh parsley

Steps:

  • Melt 2 tablespoons butter in a large skillet over medium-high heat. Sprinkle in the sugar and cook until it just turns golden.
  • Add the cabbage and 1/2 teaspoon salt, cover and cook until wilted, about 5 minutes. Add the broth and continue cooking, covered, until crisp-tender, another 15 minutes. Preheat the broiler to high.
  • Transfer the cabbage to a flameproof casserole dish. Wipe out the skillet, then add the remaining 6 tablespoons butter and melt over medium heat. Brush the scallops with some of the butter and season with salt and pepper; arrange in a single layer over the cabbage in the casserole dish and broil until firm, 5 to 7 minutes.
  • Meanwhile, continue cooking the butter over low heat, swirling the pan occasionally, until toasted and fragrant, 5 minutes. Add the capers, raisins and vinegar (be careful - the butter may foam and bubble); swirl the pan until the raisins are plump. Season with salt and pepper.
  • Divide the scallops and cabbage among plates. Add the parsley to the sauce and spoon over the scallops.

1 medium head cabbage, chopped
1 onion, chopped
1 ½ cups cooked ham, diced
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon salt
¾ cup processed American cheese
2 tablespoons dry bread crumbs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Steam cabbage and onion in a small amount of water until tender. Add the ham. Place into a buttered baking dish.
  • In a skillet, melt butter over low heat. Stir in flour until smooth. Add milk, stirring until smooth. Add salt, cheese and stir until melted. Pour over the cabbage mixture. Sprinkle with bread crumbs and dot with butter. Bake for 30 minutes.

Classic Cabbage With Ham and Potatoes image

This is one of my all time favorites and, I think, the easiest recipe ever! A fantastic winter dish that is equally enjoyed in any season. Ham, potatoes and cabbage... you just can't go wrong! You must start this dish in the morning. You can make the dish faster by using water and turning up the heat, but then you lose all the flavor.

1 ham hock (the more the merrier)
1 head cabbage
4 -6 potatoes
salt
pepper

Steps:

  • Cut cabbage head in half and pop out core.
  • Clean potatoes, no need to peel, but do use a dish sponge scratchy side to scrub them really well--cut off any bad black spots. Cut in half.
  • Place cabbage on bottom, then top with potatoes.
  • Toss in one left over ham, bone and all (or just the few pounds of ham you've purchased for this recipe -- I can say that you almost cannot have too much ham! But, it's all got to fit in your pot! LOL!). You do not have to cut it up. I see so many recipes where they are cutting the meat off the bone in neat little cubes and adding them to the pot. That is craziness! Firstly, the bone has a LOT of flavor and secondly, why work when the steam causes it to fall off the bone? I like to just toss in the entire ham, with whatever is leftover from our meal. When the dish is ready it will literally just fall off the bone at the time of serving. That is the beauty of this dish -- easy peasy!
  • It's ok to just squeeze in all the ingredients the best you can. You will be cooking at extremely low heat for a very long time, it will all be fine.
  • Salt and pepper to taste -- or do like I prefer to do and add nothing until it is plated. The ham is salty so it is very easy to over salt this dish. Be careful.
  • A crock pot is perhaps the best way to make this meal the first time around, however I have made it on the stove top with the heat set to the lowest setting for the past 30 years. I like to use the stove because I have a pot far larger than the crock. It's up to you. If using a crock pot, use the medium setting all day long (depending -- if you have a crappy crock, you may need to set it on high -- you know what you have). On stove, cook at lowest possible setting all day. This is the perfect meal to set up before going to work -- when you get home dinner is ready!
  • I just want to make a point of saying that NO water is required. You may have a hard time believing this. My mother certainly does and has ruined many pots as she will dump a tall glass (or 2) of water in when I'm not looking. Unfortunately you then wind up with a pot of water with ham, cabbage and potatoes swimming around begging to be rescued--and you lose a ton of flavor. DO NOT ADD WATER. Please trust me. There will be plenty of juice from the cabbage. So much so that you will most likely throw it out (though I like to use it as broth to pour over the dogs' dry food).
  • So, quick recap -- just clean everything and squeeze it all into you pot or crock. For stove top, cook at lowest setting all day long, crock -- go for medium.

2 tablespoons margarine
1 onion, chopped
1 small head cabbage, coarsely chopped
¼ cup water
3 large potatoes, scrubbed and sliced
1 dash seasoning salt
1 dash paprika
2 cups cubed cooked ham

Steps:

  • In a large skillet over medium heat, saute onions in the margarine. When tender add cabbage and stir. Pour water over, cover and simmer gently on medium low for ten minutes.
  • Add potatoes and mix. Cover again and allow to simmer for ten more minutes. Additional water may be needed. Sprinkle seasoning salt and paprika over cabbage and potatoes. Allow to simmer covered for an additional 5 to 10 minutes until cabbage is soft and potatoes are nearly cooked. Mix ham in and finish cooking until ham is hot and potatoes are done.

We weren't poor growing up but we sure didn't waste either. After Christmas dinner my mother would freeze part of the Christmas ham for New Years day dinner. So I guess you could call this New Years Day Ham and Scallop Cabbage!

6 c left over ham from christmas dinner. (or we have it all year round)
1 head cabbage
1 can(s) cream of celery soup
1 can(s) cream of cheddar soup
3-4 c of velveeta cheese
1-2sleeves of ritz crackers
1 stick butter
1/2 c can milk
2 silver coins (my grandson is 15 yrs old and still likes to look for the coins at new years dinner)
1-2 stick of celery

Steps:

  • 1. Cut your cabbage into small pieces. Blanch it for about 15 mins. Put cabbage into large casserole dish. Cut ham into cubes add to the casserole dish.Cut up your celery into small pieces and add it to your mixture. Then add your cream soups. Cut your Velveeta cheese into cubes and add to your mixture. Then add can milk and mix well. You can add your silver coins now too.
  • 2. Put your butter in a skillet after it melts crumble up your Ritz crackers into your butter and brown on top of the stove. Sprinkle on top of your ham and cabbage mixture.
  • 3. Heat oven at 350 degrees. Place casserole dish with your ham and cabbage mixture into oven. Bake for about one hour. Your mixture will bubble and the cheese will melt. The crackers on top will get a pretty golden brown. I serve this dish at our New Years dinner, the kids love it.
