2 pounds ground sirloin
1 medium onion, chopped
1 jalapeno pepper, seeded and chopped
2 garlic cloves, chopped
1 large egg
1/2 cup panko bread crumbs
Salt and pepper
3 tablespoons olive oil
2 cups sliced mushrooms
2 tablespoons unsalted butter, plus 8 teaspoons for freezing
2 tablespoons all-purpose flour
2 cups dry red wine
2 cups prepared garlic mashed potatoes
2 cups blanched green beans and baby carrots
1 cup Microwave Brownie batter, recipe follows
1/2 cup (1 stick) unsalted butter
3 ounces unsweetened chocolate
2 large eggs
1 cup sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
Nonstick cooking spray
1/2 cup chocolate chips

Steps:

  • Combine the sirloin, onion, jalapeno, garlic, egg, bread crumbs, and salt and pepper, mixing well with your hands. Form the mixture into 4 (1/2-inch thick) patties, shaped like a steak. Put 1 tablespoon oil into a skillet over medium-high heat and brown the Salisbury steaks on both sides, about 3 to 5 minutes, adding more oil to the pan as needed. Set the browned steaks aside and let them cool.
  • Add the mushrooms to the same pan, along with the butter and flour. Cook over medium heat for 3 to 5 minutes, until the butter has melted and the flour is cooked through. Remove the pan from the heat and pour in the red wine. Return the pan to the heat and cook until the sauce has thickened, about 5 minutes more. Remove from the heat and let cool.
  • In a microwave-safe plastic TV dinner tray, put the steaks in the largest compartment and cover each with 1/4 of the sauce. Put 1/2 cup mashed potatoes into another section and top with 1 teaspoon butter. Put 1/2 cup vegetables in another section and top with 1 teaspoon butter. Pour enough Microwave Brownie batter into the last section to come up almost to the top of the container and sprinkle over some chocolate chips. Cover the whole thing with plastic wrap and freeze overnight, or up to 1 month.
  • When ready to eat, remove from the freezer and cut the plastic wrap away from the brownie compartment. Microwave on high for 6 minutes, then on medium for 3 minutes. (Times will vary depending on the wattage of your microwave.) Let rest for 1 minute, carefully remove the plastic wrap, and eat.
  • Put the butter and chocolate into a microwave-safe bowl and heat on high for 1 to 2 minutes, stirring every 30 seconds to melt the chocolate. Set aside.
  • In another bowl, whisk together the eggs and sugar.
  • In a large bowl sift the flour with the baking powder and salt. Add the egg and chocolate mixtures along with the vanilla and stir well to combine. Follow instructions above.

2 tuna steaks
2 tablespoons coarsely cracked black pepper
2 tablespoons sesame seeds
4 teaspoons sesame oil
4 garlic cloves, minced
4 tablespoons soy sauce
1/2 cup dry sherry
1 dash red wine, as needed
2 tablespoons chopped green onions

Steps:

  • Combine black pepper and sesame seeds in bowl.
  • Press tuna steaks into mixture, until coated.
  • Heat sesame oil over medium-high heat.
  • Add tuna steaks and sear about 1- 1 1/2 minutes each side (I like mine rare in the center, longer if you prefer well-cooked tuna).
  • Transfer steaks to tented aluminum foil to keep warm.
  • Add a touch more oil to pan, then add soy sauce and sherry.
  • Add garlic and most of green onion (reserving some of the tops).
  • If too much has boiled off, add a bit of red wine if necessary.
  • Reduce heat and simmer until mixture is slightly reduced, scraping up any brown bits, about 1 minute.
  • Spoon sauce over tuna steaks, and sprinkle remaining green onion on top.
  • Note: if you want to make more of this sauce, it tastes fantastic, and goes great with rices, potatoes, roasted veggies, etc.
  • In the photo, I cross-cut Italian bread, drizzled with olive oil and briefly toasted.

Steps:

  • Cut the loin in 4 equal, thick 'steaks'. Trim off any sinew. On a plate. Mix together all the spices. Season the tuna steaks with salt then dredge them in the spice mix. In a very hot saute pan coated lightly with oil, sear the tuna until it becomes dark brown then flip, about 3 minutes a side. The tuna will still be rare and slightly warmed. Let rest 3 minutes before slicing in half on the bias.
  • For the Black Bean-Shiraz Butter Sauce: In a non-reactive saucepan, add the shallots, black beans, ginger and wine. Bring to a simmer and completely reduce the wine. When wine is gone, add the cream and bring to a simmer. Immediately transfer to a blender and blend at high speed. Add the butter, 1 piece at a time. Season with salt and pepper and check for seasoning. Keep warm in a hot water bath. Plating: On large, round plates, place a mound of potatoes in the center. Top with the tuna and top that with the salad. Place the sauce around the tuna and drizzle with a little vinaigrette.

4 new potatoes
8 fingerling potatoes
4 waxy Peruvian purple potatoes
2 large beets
1 cup rice wine vinegar
1 tablespoon extra-virgin olive oil
1 tablespoon honey
1 tablespoon Dijon mustard
Salt and pepper
2 cups shredded carrots
1 cup cherry tomatoes, halved
2 cups green beans, blanched
2 cups snow peas, blanched
1 small head leafy green lettuce
8 ounces albacore tuna, white meat in spring water, drained
1 cup Nicoise olives

Steps:

  • In a large pot of boiling, salted water, place the potatoes one variety at a time, the purple potatoes last, and cook until fork tender. Remove with a slotted spoon into an ice bath. Drain all potatoes. Cut the new potatoes and purple potatoes into quarters. Slice the fingerling potatoes lengthwise.
  • Place the beets into the pot of boiling water and cook until fork tender, about 15 to 20 minutes. Rinse under cold water and remove the skin. Wear gloves to avoid turning your skin purple. Slice beets into wedges.
  • In a small bowl, whisk together the rice wine vinegar, olive oil, honey and Dijon until an emulsion has formed. Season with salt and pepper.
  • In a large bowl, toss all of the vegetables except the lettuce and the olives with approximately 2 tablespoons of vinaigrette. Marinate for 15 minutes.
  • In a separate large bowl, toss a handful of greens per person with 2 tablespoons of vinaigrette per person. Plate the lettuce and then place a mound of mixed vegetables on top of the lettuce.
  • Top each salad with a 1 to 2 ounce portion of the albacore tuna. Garnish with the olives. Serve immediately.

1 (3-pound) whole beef strip loin, trimmed of fat and trimmings reserved
Salt
1/4 cup prepared horseradish
2 tablespoons freshly ground black pepper
1 teaspoon grapeseed oil
Fat and trimmings from the beef
2 large cloves garlic, lightly crushed with the side of a knife blade and minced
1 large red onion, diced
12 ounces dry hopped pale ale
2 teaspoons beef base stirred into 2 cups water
1 tablespoon tomato paste
2 tablespoons butter, cubed
4 large carrots, peeled and cut julienne and blanched for 2 minutes in salted water
1 pound haricots verts, trimmed
2 teaspoons grapeseed oil
2 shallots, thinly sliced
1 large yellow bell pepper, stem and seeds removed and cut julienne
1 large green bell pepper, stem and seeds removed and cut julienne
Salt and freshly ground black pepper
3 large potatoes, peeled and cut into 1-inch chunks
2 tablespoons grapeseed oil (as needed to saute the onion and rissole cakes, respectively)
1 medium white onion, diced small
Salt and freshly ground black pepper
3 scallions, white and tender green parts only, sliced on the diagonal into 1/4-inch thick slices
1/2 pound cooked backfin or lump crabmeat (avoid canned)
1 to 2 cups canola oil, as needed, for frying the onion rings
3/4 cup all-purpose flour
3 tablespoons cornstarch
2 1/4 teaspoons baking powder
Pinch salt
3/4 cup dry hopped pale ale
1 large white onion, sliced into 1/2-inch slices

Steps:

  • Preheat oven to 400 degrees F.
  • Rinse strip loin to remove residue and season with salt. Combine horseradish and black pepper in a small bowl to make a paste. Place loin in roasting pan and coat entirely with paste. Roast until the meat reaches an internal temperature of 140 to 142 degrees F as measured with an instant-read thermometer, about 30 to 40 minutes, then remove from oven and let rest to carryover cook to about 150 degrees for medium-rare, or cook for whatever length of time is needed (usually specified on your meat thermometer) for your desired level of doneness.
  • For the sauce, heat grapeseed oil in a large saucepan over medium heat. When it begins to shimmer, add the beef trimmings and cook for about 10 minutes until you see that the fat is rendered from the meat. You should pour off all but 2 tablespoons fat or, if necessary, supplement with grapeseed oil if you do not have 2 tablespoons in the pan. Add garlic and onion and gently saute until the onion turns translucent. Pour beer into the pan and cook over medium heat until most of the alcohol has evaporated, then stir in the beef base (which has been diluted in water) and tomato paste. Return to a boil, lower the heat to medium-low and allow to reduce by half. Strain into a bowl and gradually whisk in cubed butter. Nest bowl in another bowl filled with hot water and cover to keep warm.
  • For the vegetable medley, blanch carrots and haricots verts for 2 minutes in salted water and drain well. Heat the grapeseed oil over medium-high heat in a large saute pan. When it begins to shimmer, add shallot, peppers, carrots and green beans and season with salt and pepper. Saute until the shallot turns translucent and the peppers begin to soften. Remove to a bowl and cover until needed. Reserve the saute pan.
  • For the rissole, boil the potatoes until soft, and drain well.
  • For the onion rings, heat oil in the reserved saute pan over medium-high heat. Combine flour, cornstarch, baking powder and salt in a small bowl and pour the beer in a stream while whisking constantly. Dip the onion slices into the batter and fry until golden. Drain on paper towels and keep warm. Discard oil and reserve the saute pan.
  • Return to the rissole. In the same pan saute pan, heat 1 tablespoon of the grapeseed oil over medium high heat in a large skillet, reserving the other tablespoon. When it begins to shimmer, saute the white onion until tender. Transfer the onion to the potatoes which have been boiled for the rissole, reserving the saute pan. Season potatoes, to taste, with salt and pepper, and mash together. Fold in the scallions and crab trying to avoid breaking up the crab. Allow to sit until cool enough to handle, then use 3-inch circle cutters as molds and form the potato/crab mixture into circles. In the same pan, heat additional grapeseed oil for the rissole over medium-high heat and sear the potato cakes leaving undisturbed for the first 2 to 3 minutes on each side to let the caramelization process begin and to prevent the cake from breaking apart. When you see the edges of the cake beginning to turn golden brown, flip and sear the other side. Then cook further until the cake is firm. Remove from heat and keep warm.
  • Slice roast sirloin. Place a rissole circle on serving plate. Place sliced beef on top and spoon demi-glace over. Top with onion rings. Arrange some vegetable medley around.

Poached Oysters in Champagne with a Julienne of Vegetables, Leaf Spinach and Prosciutto Ham image

20 oysters (plus juice)
1 carrot
1 leek
2 ounces snow peas
8 ounces fresh leaf spinach
3 shallots, sliced
1 glass white wine
1-ounce cream
2 tablespoons butter, cut into small cubes
Salt and pepper
1/2 cup heavy cream
2 ounces champagne
1 clove garlic
2 ounces prosciutto, julienned
Salt, freshly ground pepper

Steps:

  • Shuck the oysters. Reserve the oyster juice. Wash the shells. Cut the vegetables into strips and steam. Set aside Blanch the spinach and set aside Peel and cut the shallots into small dice, then add the white wine and reduce until only 1 tablespoon remains. Add the cream reduce for 30 seconds, then whisk in the butter. Season with salt and pepper. Set aside.
  • Heat a sauteuse. Pour in the cream, oyster juice, champagne and garlic. Add the oyster, prosciutto and poach for 2 to 3 minutes, then add the shallot-butter sauce off the heat. Spoon into the oyster shells; top with the spinach, then top with the oysters and place a small pile of the steamed vegetables on each oyster. Serve on a bed of blanched seaweed or on a bed of mixed peppercorns.

1/4 cup soy sauce
1 sprig fresh rosemary
1/2 teaspoon salt
1/2 teaspoon pepper
6 (7-ounce) tuna steaks
3 1/2 tablespoons fennel seeds
3 teaspoons coriander seeds
2 tablespoons white peppercorns
3 egg whites
1 teaspoon salt
1/4 cup extra-virgin olive oil
1/4 cup extra-virgin olive oil
3 cups shredded green cabbage
1/2 cup julienned red bell pepper
1/2 cup julienned jicama
1 cup snow peas, cut on bias
1/2 cup thinly sliced carrot
2 tablespoons sesame seeds, toasted

Steps:

  • For vinaigrette, heat 1 tablespoon olive oil in a saucepan over medium heat. Add ginger and cook for 1 minute. Add garlic and shallots and cook for 3 minutes. Pour in the sherry vinegar. Stir to remove any browned bits on the saucepan. Add orange juice, liqueur, soy sauce, and rosemary; cook and stir until mixture has thickened and reduced by half. Remove rosemary sprig and puree mixture in a food processor. Slowly add remaining olive oil in a stream. Season with salt and pepper. Keep warm.
  • Rinse tuna steaks and pat dry. Grind fennel seeds, coriander seeds, and peppercorns. Transfer spices to a flat plate. Beat egg whites until slightly frothy. Season tuna with salt; dip in egg whites and then in spice mixture. Heat 1/4 cup olive oil in a heavy skillet. When smoking hot sear tuna steaks, 2 minutes per side, and set aside.
  • For the vegetables, heat 1/4 cup olive oil in a heavy skillet and add all vegetables to mixture. Cook for about 3 minutes. Vegetables should be coated with oil and still crisp. Toss in sesame seeds.
  • To serve, spoon Gilroy Garlic Vinaigrette onto the center of 6 serving plates, arrange vegetables on the plates, and top with tuna steak. Drizzle with a little more vinaigrette and serve.

1/3 cup black cumin
1/3 cup koseret (dried woodsy flavored herb, dried oregano can be substituted)

Steps:

  • Melt the butter on low heat in a large pot. Blend together the bishop seeds, cardamom seeds and black cumin until powder form using coffee grinder or food processor. Pour into the butter. Add the dried koseret. Bring to a boil then simmer for 15 to 20 minutes. Remove from the heat and cool. When room temperature, skim the frothy milk solids off of the top. Carefully pour the clear, clarified butter into a large storage container.
