I found this in a local newspaper and fell in love with it. It was unlike any pie I ever had. Fabulous! This recipe came from Pillsbury.

1 (15 ounce) package pillsbury refrigerator pie dough (softened as directed on box)
1 (8 ounce) package cream cheese
1/4 cup sugar
1 egg
1/4 teaspoon vanilla
3 cups thinly sliced peeled apples (3 med.)
1/3 cup sugar
3 tablespoons all-purpose flour
1 teaspoon apple pie spice
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup old fashioned oats
3/4 teaspoon apple pie spice
1 cup butter

Steps:

  • Heat oven to 450 degrees.
  • Make pie crust as directed on box for one-crust pie shell, using 9" glass pie pan, except DON'T prick crust.
  • Bake 9-11 minute or until light brown. If crust fluffs up gently push down with fork.
  • Reduce oven temp to 350.
  • In a small bowl, stir together streusel ingredients except butter until it looks like coarse crumbs. Set aside.
  • In a large bowl gently mix apple layer ingredients, set aside.
  • Mix cream cheese and sugar well. Beat in egg and vanilla and mix well.
  • Spread cream cheese mixture into pie shell. Add the apple slices evenly. Top with streusel mixture and top with small chunks of butter.
  • Bake 50-60 minutes, or until apples are tender and streusel is golden. You may need to cover the pie loosely with foil the last 15 minutes of baking to prevent over browning.
  • Let pie cool 1 hour prior to eating. Store pie in fridge.

3 cups all-purpose flour
½ teaspoon salt
1 cup unsalted butter, chilled
½ pound shredded sharp Cheddar cheese
¼ cup ice water
¼ cup white vinegar
7 large Granny Smith apples - peeled, cored and sliced
3 tablespoons lemon juice
1 ½ cups white sugar
½ teaspoon ground cinnamon
1 tablespoon unsalted butter, cubed
1 egg, beaten
1 tablespoon white sugar

Steps:

  • In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cheese. Combine water and vinegar, and gradually stir in until mixture forms a ball. Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 4 hours or overnight.
  • Preheat oven to 450 degrees F (230 degrees C.) Roll one ball out to fit a 9 inch pie plate. Place bottom crust in pie plate. Roll out top crust and set aside.
  • In a large bowl, toss apples in lemon juice to prevent discoloration. Drain and discard any excess juice. Stir in sugar and cinnamon. Arrange rows of overlapping apple slices, working from outer rim in. Dot with butter. Cover with top pie crust. Seal and crimp edges with fork, then trim excess dough. Cut a few slashes in top crust to allow steam to escape.
  • Bake on cookie sheet in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking for about 30 minutes, or until golden brown. Remove from oven, brush lightly with beaten egg, and sprinkle liberally with sugar. Bake 5 to 10 minutes more until sugar forms a crisp glaze.

Butter, for greasing the pie dish
5 medium Granny Smith apples, peeled, cored and quartered (about 2 1/2 pounds)
1 cup coarsely grated sharp white Cheddar (4 ounces)
2/3 cup dark brown sugar
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon kosher salt
Two 9-inch-diameter, unroll-and-bake refrigerated pie crusts
1 egg white, beaten until frothy

Steps:

  • Position an oven rack on the bottom third of the oven and preheat to 400 degrees F. Butter the sides and bottom of a 9-inch-diameter glass or ceramic pie dish.
  • Cut the apple quarters into 3 wedges. Mix the apples, cheese, sugar, butter, flour, cinnamon, nutmeg and salt in a medium bowl.
  • Unroll one crust and place in the buttered pie dish. Brush the inside of the crust with some of the egg white to coat. Pour the apple filling into the crust. Unroll the second crust and place on top of the filling. Pinch the edge of the top crust and the edge of the bottom crust together to seal. Fold the double edge under and crimp, making a decorative edge. Brush the top of the pie with more of the egg white. Cut several slits in the top crust to allow steam to escape.
  • Bake the pie until the crust is deep golden and the filling is bubbling through the slits, about 1 hour. Cover the edges of the pie with foil if the crust browns too quickly. Cool the pie for about 20 minutes before serving.

2 sheets of store-bought pie dough (not puff pastry)
375 ml (1 1/2 cups) of Armstrong Triple Cheddar Shredded Cheese
30 ml (2 tbsp) milk
15 ml (1 tbsp) granulated sugar
6 firm apples (Granny Smith, Honeycrisp, or Golden Delicious, for example), peeled, cored, and sliced (about 2 L/8 cups total)
160 ml (2/3 cup) brown sugar
45 ml (3 tbsp) cornstarch
5 ml (1 tsp) ground cinnamon
0.25 ml (1/4 tsp) each: ground allspice, ground cloves, and salt

Steps:

  • Preheat oven to 200°C (400°F). Lightly butter a 23 cm (9 in) pie plate.
  • Over a lightly floured working surface, unroll one sheet of pie dough. Sprinkle with 125 mL (1/2 cup) of the Armstrong Triple Cheddar shredded cheese. Roll the dough back up again to enclose the cheese, then use a rolling pin to roll the dough back out to a 30 cm (12 in) circle. Transfer the rolled-out dough to the prepared pie plate and gently ease it into the bottom of the pan, letting the excess dough overhang.
  • Repeat these steps to create the top crust. Set aside.
  • In a large bowl, combine the sliced apples, brown sugar, cornstarch, spices, and salt. Sprinkle the bottom crust of the pie with the remaining 125 mL (1/2 cup) Armstrong Triple Cheddar shredded cheese. Fill the crust with the apple mixture, gently pressing the apples down to fit them into the plate (they should generously fill up the plate as they will lose volume upon baking).
  • Using a pastry brush, brush the edge of the bottom crust with milk. Cover with the top crust, then cut out the excess dough, leaving a 3 cm (1.5 in) border all around. Fold the excess dough under the edge and press to seal together and crimp as desired. Use a sharp knife to cut air vents into the top layer of the pie. Brush with milk all over, then sprinkle with granulated sugar.
  • Bake the pie for 30 minutes, then lower the heat to 190°C (375°F) and loosely cover the pie with aluminum foil to prevent excessive browning. Keep baking for 40 minutes more, or until the pie bubbles and the apples are soft.
  • Transfer the pie to a wire rack and let cool for at least 30 minutes before slicing.

  • Combine apples with the other 4 ingredients and set aside.

  • In a large bowl, mix flour, sugar and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Divide dough in half. This hearty potato pie hails from Lancashire and is a little like a giant cheese pasty. Our version contains apples and thyme

800g potato (we used Desiree), sliced into 5mm rounds
50g unsalted butter , plus 25g (optional)
2 large (not mild) onions , halved and thinly sliced
½ small pack thyme
2 Cox's apples
splash of lemon juice
500g all-butter shortcrust pastry , defrosted if frozen
plain flour , for dusting
175g mature Lancashire cheese , or cheddar, grated or crumbled
beaten egg , to glaze
pickled cabbage or beets, to serve (optional)

Steps:

  • Bring a pan of salted water to the boil, then cook the potatoes for 8 mins until just tender but not falling apart. Drain and leave to steam-dry in the colander.
  • Meanwhile, heat the butter in a wide pan. Stir in the onions, seasoning and the thyme, then cover and cook for 8 mins until translucent and turning golden. Peel and slice the apples, toss with the lemon juice, then cook with the onions in the now uncovered pan for 5 mins, stirring often. Mix in the potatoes, then leave to cool. Remove the thyme.
  • Cut just under two-thirds of the pastry from the block, squash into a round, then roll out on a flour-dusted surface until large enough to line a deep 23cm loose-bottomed tart tin, leaving a little excess overhanging. Fill the pastry case with layers of the potato and apple mix, and all but 1 tbsp of the cheese. Dot with the rest of the butter, if using, and season generously. Brush the overhanging edge of pastry with egg. Heat oven to 190C/170C fan/gas 5 and put a baking tray in the oven to heat up.
  • Shape the remaining pastry into a round, then roll out until just large enough to cover the top of the pie. Press the edges together. Trim the pie by pressing your thumb against the rim of the tin all the way around. Brush with egg, then cut slits to allow steam to escape. Slide the pie onto the hot baking sheet and cook for 1 hr, scattering with the remaining. cheese with 10 mins to go, until the pastry and cheese are golden. Serve warm or eat cold with the pickled cabbage or beets on the side.

Put a savoury twist on apple pie with potato, cheese and onion, as well as mustard and thyme. The sweet and savoury flavours create a stunning pie

30g salted butter
1 tbsp vegetable oil
2 large onions, halved and finely sliced
½ bunch of thyme, leaves picked
30g plain flour
500ml vegetable stock
1 tbsp wholegrain mustard
1 tbsp white wine vinegar
450g potatoes (we used Maris Piper), cut into 2-3cm chunks
3 apples, peeled, cored and chopped into 1-2cm chunks
150g mature cheddar, grated
300g plain flour, plus extra for dusting
70g cheddar, grated
150g cold butter, cut into cubes
1 egg, beaten

Steps:

  • First, make the pastry. Tip the flour, cheese and a pinch of salt into a large bowl and mix. Add the butter and rub it in using your fingertips until the mixture resembles breadcrumbs. Mix in 4-5 tbsp cold water, and bring together into a dough. Wrap and chill for 30 mins.
  • To make the filling, melt the butter in a medium saucepan over a medium heat, then add the oil and onions and cook for 10-15 mins until caramelised. Add the thyme and fry for 1 min more. Tip in the flour, and stir to combine. Gradually stir in the stock, adding it in small amounts to prevent lumps forming. Bring to a simmer and cook for 10 mins, stirring occasionally. Stir in the mustard and vinegar towards the end of the cooking time.
  • Meanwhile, put the potatoes in a large pan of cold water, bring to the boil and cook for 4-5 mins until just cooked and still holding their shape. Drain well, then stir into the sauce. Add the apples, cheddar and some seasoning, and stir again. Heat the oven to 200C/180C fan/gas 6.
  • Pour the filling into a 28cm oval baking dish (ours was 28 x 18.5 x 6.5cm). While it cools, roll out the pastry on a surface lightly dusted with flour to the thickness of a £1 coin. Cut into strips roughly 1cm wide. Lay half the strips across the dish horizontally, leaving gaps of a few millimetres in-between, then, one by one, weave in the remaining strips vertically, using an over and under technique, also spacing them apart by a few millimetres. Re-roll any trimmings and cut into flowers, leaves, or other shapes to decorate, if you like (see tip, below). Arrange any pastry shapes on top, then brush with the beaten egg.
  • Bake for 50 mins, keeping an eye on it - you may need to cover the top with foil if it's starting to brown too quickly. Leave to cool for at least 10 mins before serving.

Pastry for 10-inch pie crust and lid (see recipe)
6 slices bacon
2 medium onions, peeled and chopped coarsely
7 tart apples (such as Granny Smiths), peeled, cored and sliced thick
2 tablespoons water
2 teaspoons sugar
1/4 cup chicken bouillon
2 teaspoons vegetable oil
1 egg white
3 cups (9 ounces) tightly packed sharp cheddar cheese, shredded

Steps:

  • Prepare pie pastry as directed below and refrigerate.
  • Meanwhile, in large skillet, fry bacon. Drain and crumble it and pour out all but 2 tablespoons of bacon grease.
  • In grease saute onions until they begin to brown.
  • Add apple slices and water, cover skillet and simmer until the apples are fork tender but still slightly firm. Remove skillet from heat and mix in crumbled bacon, sugar and bouillon.
  • Line 10-inch pie plate (preferably one 2 inches deep) with pie pastry and brush it with oil and then with egg white.
  • Spread third of apple mixture on pastry, then some cheese, and continue to alternate layers, ending with apple mixture.
  • Set top crust in place, crimp edges and vent top with fork.
  • Bake in a preheated 450-degree oven for 10 minutes. It is wise to place some aluminum foil on the bottom of the oven to catch drippings. Reduce heat to 350 and bake additional 45 minutes. Let pie rest for 10 minutes before slicing.
