CHOCOLATE FAIRY CAKES

- Heat the oven to 180C/160C fan/gas 4. Line a 12-hole bun tin with paper cases. Put the sugar and butter in a bowl and beat together until light and fluffy. Gradually mix in the eggs and vanilla until combined.
- Add the flour, cocoa powder and baking powder to the bowl and mix to make a smooth batter. Fold the milk through to loosen. Divide the mixture between the cases using a spoon. Bake for 20 mins, or until a cocktail stick poked into the centre of one of the cakes in the middle row comes out clean. Leave to cool in the tin for 5-10 mins, then transfer to a wire rack to cool completely
- While the cakes are cooling, make the icing. Beat together the butter, icing sugar and cocoa powder in a bowl for 5-10 mins, until you have a smooth, creamy consistency. Add the milk to loosen if needed. Pipe or spread on top of the cooled cupcakes.

I found a recipe in a book called 1001 cupcakes and bars and tweeked it to match my diet. It turned out beautifull!!! I hope you like it

Steps:
- Preheat the oven to 190 degrees celsius while mixing the ingredients.
- Put caster sugar into a mixing bowl and mix together with the butter using a fork. (the fork is much better than a spoon it removes the lumps quicker and binds everything evenly).
- Sift in flour, xantham gum, cocoa powder and baking powder.
- Add eggs.
- Mix all together with a fork tipping bowl to a 45 degree angle until eveything is mixed together. This should add some air bubbles to the mixture and should after 2 minutes standing look a little like chocolate moose.
- Divide out the mixture into bun cases and bake in the oven for 15 minutes at 190 degrees celsius.
- You can top with anything you like and enjoy. They are great warm and cold.

- make sure you have 12 paper cases handy.
- Preheat oven to 200 degrees.
- Cream together margarine and sugar until light and fluffy.
- Beat in eggs and vanilla, followed by the sifted baking powder, sifted flour and milk.
- Half fill paper cases standing on baking tray.
- Bake for 10-12 minutes.
- When cold, decorate the top with jam or icing or just icing sugar, if desired.

CHOCOLATE AND ORANGE FAIRY CAKES
Originally from Leith's Recipe of the Day but with a couple of adaptions. I like to use whole nut chocolate. These are recipes I've kept for years, used time and time again and then moved house. I lost them six years ago and found them recently. It's like finding old much-loved friends. I want them safe. Please computer, don't die!

- Preheat oven to 190°C.
- Line 2 muffin pans (12 hole) with paper cases.
- Cream butter and sugar until light and fluffy.
- Mix eggs together in a separate bowl and gradually beat into creamed mixture a little at a time, adding 1 tablespoon of flour if the mixture begins to curdle.
- Stir in chocolate and orange zest.
- Fold in flour, adding orange juice to bring mixture to a dropping consistency.
- Divide mixture between cases so each is two-thirds full.
- Bake in middle of oven for about 20 minutes or until the cakes are well risen, golden and feel spongy to fingertips.
- Cool on a wire rack.
- Make icing.
- Orange: Place icing sugar and orange zest in a bowl, add enough orange juice to mix to a fairly stiff consistency.
- Icing should hold a trail when dropped from a spoon but gradually find its own level.
- It needs little liquid.
- Chocolate: Melt chocolate and milk together.
- (I use a microwave oven for this- take care, chocolate burns easily.) Stir well to mix.
- Ice cakes with orange icing and swirl the chocolate on top.

- Preheat the oven to 350 degrees. Lightly grease the bottom of a 9×13 baking pan. Sift the three flours together. Add cocoa, xanthan gum, baking powder, and baking soda to the flours and whisk together in a med. bowl. Beat the butter until creamy . Slowly add the brown sugar and the granulated sugar; whip until fluffy. Add the eggs and the egg yolks one at a time. Add the vanilla. Turn the mixer to low and alternately add the flour mixture and the buttermilk. Pour into the prepared pan. Bake for 30-35 minutes until the cake is springy to the touch.
- Since this was truly a no-frills chocolate cake, I made a simple frosting. Feel free to substitute your favorite frosting. This one is not very sweet, but my toddler loved it.
- 5 oz. semi-sweet chocolate.
- 1/2 cup sour cream.
- 1/2 teaspoon vanilla.
- 1-2 Tablespoons whipping cream.
- Directions: Melt chocolate in the microwave or over a double boiler. Let the chocolate cool until warm. Stir in the sour cream and vanilla. Add whipping cream to desired consistency. The frosting will thicken slightly as it cools. Once the cake has cooled, frost the cake. This frosting provided a simple, thin layer of frosting for my no-frills chocolate cake.

- Preheat the oven to 180'C (170'C fan) / Gas 4. Fill a 12-hole baking tin with fairy cake cases and set aside while you make the cake batter.
- Add the butter, sugar and vanilla extract to a large mixing bowl and beat with an electric whisk until pale and creamy. (TIP: If the butter is hard, zap it in the microwave for 10-15 seconds before adding it to the mixing bowl to make it easier!)
- Crack the eggs into the mixing bowl and beat again for 30 seconds to combine. Scrape down the sides of the bowl using a spatula.
- Sift in the self-raising gluten free flour and xantham gum and then beat together with the electric whisk until everything is fully combined. Add the milk 1 tbsp at a time, mixing in between. You want a fairly thick batter which drops from the spoon easily, so you may need either 2 or 3 tbsp of milk - this can depend on which gluten free flour you're using as some are more absorbent than others.
