This is a nutritious and delicious breakfast cereal. Use any type of dried fruit you desire! You can also use almonds in place of walnuts if you like. Wonderful when served in bowls with milk and fresh berries or sliced fresh fruit.

4 ½ cups rolled oats
½ cup toasted wheat germ
½ cup wheat bran
½ cup oat bran
1 cup raisins
½ cup chopped walnuts
¼ cup packed brown sugar
¼ cup raw sunflower seeds

Steps:

  • In a large mixing bowl combine oats, wheat germ, wheat bran, oat bran, dried fruit, nuts, sugar, and seeds. Mix well. Store muesli in an airtight container. It keeps for 2 months at room temperature.

85g porridge oats
15g flaked almonds
15g walnuts ,chopped
15g pumpkin seeds
1 tsp ground cinnamon
80g raisins
15g high fibre puffed wheat (we used Good Grain)
4 apples , no need to peel, grated
fortified oat milk , to serve

Steps:

  • Put the porridge oats in a saucepan and heat gently, stirring frequently until they're just starting to toast. Turn off the heat, then add all of the nuts, pumpkin seeds, and cinnamon, then stir everything together well.
  • Tip into a large bowl, stir to help it cool, then add the raisins and puffed wheat and toss together until well mixed. Tip half into a jar or airtight container and save for another day - it will keep at room temperature. Serve the rest in two bowls, grate over 2 apples and pour over some cold cold milk (you can also use regular or preferred non-dairy milk) at the table. Save the other apples for the remaining muesli.

3/4 cup Madeira wine
5 ounces soft, dried Black Mission figs (scant 2/3 cup), stemmed and quartered
3 whole star anise
All-purpose flour, for dusting
Pâte Brisée (page 322)
3 pounds ripe, firm Anjou pears
3/4 cup walnuts, broken into small pieces, toasted and cooled (see page 343)
Fresh juice of 1 lemon
1/2 cup granulated sugar
1/4 teaspoon salt
3 tablespoons cornstarch
2 tablespoons unsalted butter, cut into small pieces
1 large egg yolk, for egg wash
1 tablespoon heavy cream, for egg wash
Fine sanding sugar, for sprinkling

Steps:

  • Bring wine, figs, and star anise to a boil in a small saucepan. Reduce heat, and simmer until figs are softened, 10 to 12 minutes. Use a slotted spoon to transfer figs to a large bowl. Cook liquid over medium-high heat until reduced to a syrup, about 3 minutes; discard star anise. Pour syrup over figs.
  • Meanwhile, on a lightly floured surface, roll out 1 disk of dough to a 13-inch round. Fit into a 9-inch glass pie plate. Trim dough, leaving a 1-inch overhang; refrigerate or freeze until firm, about 30 minutes. Roll out second disk to a 13-inch round. Cut out steam vent in center with a cookie cutter; refrigerate or freeze dough round and cutout until firm, about 30 minutes.
  • Peel and core pears; slice into 1/4-inch-thick wedges. Add pears, walnuts, lemon juice, granulated sugar, salt, and cornstarch to figs and syrup; stir until well combined. Spoon into pie plate, piling high in center. Dot with butter; lightly brush edge of dough with water. Drape second disk of dough over pin; center over filling. Gently press around filling to fit; trim dough, leaving a 1/2-inch overhang. Fold edge of top crust under bottom one; crimp to seal. Brush water on bottom of cutout; press onto top crust. Beat egg yolk with cream; brush all over dough. Sprinkle pie generously with sanding sugar; freeze until firm, about 30 minutes. Meanwhile, preheat oven to 400°F, with rack in lower third.
  • Transfer pie plate to a parchment-lined rimmed baking sheet, and bake until just golden, 20 to 25 minutes. Reduce heat to 375°F. Bake until juices are bubbling and crust is deep golden brown, about 1 hour. If edges brown too quickly, cover with a foil ring (see page 324). Let pie cool completely on a wire rack.

2 firm pears, cored and grated
120 g oats
1 tablespoon mixed seeds (I used sesame, sunflower and pumpkin seeds)
2 tablespoons walnuts, chopped (divided)
1 tablespoon agave nectar or 1 tablespoon runny honey
100 ml apple juice
100 ml milk or 100 ml water
2 tablespoons yogurt

Steps:

  • In a big bowl combine grated pears, oats, mixed seeds, 1 tbs of the walnuts, syrup/honey, apple juice and milk/water. Cover and refrigerate over night.
  • The next morning divide between two bowls and add 1 tbs of yogurt to each bowl, then top with reamining walnuts. Serve and enjoy!

A light, flavoursome and highly individual pasta dish which includes pear (or apple) and walnuts among its ingredients. Makes a great stand alone dish, or it could be served as a side dish for four. Adapted from a recipe from Australian chef flip shelton's 'green: modern vegetarian recipes'.

200 g spaghetti
200 g baby spinach leaves, washed well and roughly chopped
50 g gorgonzola (I don't like either of these, so I used 1 tablespoon parmesan and 2 tablespoons Greek yoghurt) or 50 g blue cheese (I don't like either of these, so I used 1 tablespoon parmesan and 2 tablespoons Greek yoghurt)
1/2 ripe pears, peeled, cored and very thinly sliced or 1 granny smith apple, cored and very thinly sliced
1/2 teaspoon dried thyme
1/2 teaspoon dried sage
1/2 cup walnuts, shelled, roughly chopped
1 teaspoon lemon juice
fresh ground black pepper, to taste

Steps:

  • Three quarters fill a large pot with water, bring to the boil, add the spaghetti and cook till al dente (about 8 minutes).
  • Drain the spaghetti being careful to RESERVE SOME OF THE COOKING WATER.
  • Return the hot spaghetti to the pot and, over a low heat, add the baby spinach leaves and cheese and stir until the baby spinach leaves wilt and the cheese starts to melt; add a little of the pasta water and continue to stir. (When I made this using yoghurt instead of cheese, I added very little water; judge how much water to use by the consistency).
  • Add the pear (or apple), walnuts, thyme and sage, stir well, and allow to warm through.
  • Drizzle with lemon juice, season to taste with freshly ground black pepper and serve hot.
  • Notes: For a smoother sauce, in a small pan, over a very low heat, melt the cheese with some of the pasta water and stir in the pear (or apple); then stir in the spaghetti and baby spinach leaves, until they are well coated; then add the lemon juice and gently fold in the walnuts, thyme and sage.

1/2 cup chopped walnuts
1 cup all-purpose flour
1/3 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup packed brown sugar
2 tablespoons vegetable oil
2 teaspoons vanilla
1 (8 ounce) carton plain yogurt (or vanilla if you like, experiment!)
1 large egg
1 1/2 cups finely diced peeled pears
cooking spray
1 tablespoon sugar
1/2 teaspoon cinnamon
1/4 teaspoon ginger powder

Steps:

  • Preheat oven to 400*F.
  • Place walnuts in a food processor, process until finely ground.
  • Gently spoon flours into dry measuring cups, level with knife. Mix flours, baking powder, baking soda and salt in a medium bowl, stir well with a whisk. Stir in ground walnuts. Make a well in center of mixture.
  • Combine brown sugar, oil, vanilla, yogurt and egg in a small bowl, add to the flour mixture, stirring just until moist. Fold in diced pear.
  • Spoon the batter into 15 muffin cups coated with cooking spray. Mix together sugar, cinnamon and ginger powder in a small bowl. Sprinkle batter with cinnamon/ginger sugar. Bake at 400*F. for 20 minutes or until muffins spring back when touched lightly in center. Remove from pans right away. Place on wire rack. Serve either warm or at room temperature. Enjoy1.

1 tablespoon maple syrup
1 cup coarsely chopped walnuts
4 ripe red bartlett pears, halved lengthwise, cored and cut into wedges
8 ounces gorgonzola, dolce room temperature

Steps:

  • Preheat oven to 375 degrees.
  • Mix sugar and salt in a small bowl and set aside.
  • Saute butter and maple syrup in a large pan, and bring to a boil.
  • Remove from heat. Add nuts and toss to coat.
  • Transfer nuts to a rimmed baking sheet.
  • Sprinkle with sugar mixture. Toss to coat.
  • Toast in oven until fragrant, about 7 minutes.
  • Let nuts cool completely on sheet.
  • To serve, arrange candied nuts, pear wedges and gorgonzola on a serving platter.
