Time 1h

Yield 6 to 8 servings

Number Of Ingredients 18

Nonstick cooking spray, for the baking dish
2 sticks (1 cup) salted butter
1/4 heaping cup unsweetened cocoa powder
1 cup boiling water
2 cups all-purpose flour
2 cups granulated sugar
1/4 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
One 10-ounce bag mini marshmallows (about 6 cups)
1 3/4 sticks (14 tablespoons) salted butter
6 tablespoons whole milk
1/4 heaping cup unsweetened cocoa powder
4 cups sifted confectioners' sugar
1 cup chopped toasted pecans
1 tablespoon vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with cooking spray.
  • In a saucepan, melt the butter. Whisk in the cocoa powder, then the boiling water. Let it bubble up for a few seconds, then turn it off and set it aside.
  • In a large bowl, mix together the flour, granulated sugar and salt. Pour the chocolate mixture over the flour mixture and stir a few times to start to cool the chocolate.
  • In a separate small bowl, mix the buttermilk, baking soda, vanilla and eggs. Pour over the flour-chocolate mixture and mix until everything is combined. Pour into the prepared baking dish and bake until a toothpick inserted in the center comes out clean, about 20 minutes. Remove from the oven and turn on the broiler.
  • Sprinkle the marshmallows over the cake, then return the dish to the oven to broil until the marshmallows start to turn golden, about 1 minute. Set aside to cool.
  • For the icing: Melt the butter in a saucepan, then whisk in the milk and cocoa powder. Whisk in the confectioners' sugar in 4 to 5 additions. Stir in the nuts and vanilla.
  • Pour the icing all over the marshmallows, allowing some marshmallows to remain visible. Let the icing set, then deliver or serve.

MY MOTHER'S MISSISSIPPI MUD CAKE

My Mother's Mississippi Mud Cake image

There are many recipes here for this, but my mom's seems to be just a bit different. I had to post for her. I have made this often but I must confess I do not eat it because I don't like coconut (good diet dish -- for me at least -- to bring to pot luck) -- people who will eat coconut always rave about this.

MISSISSIPPI MUD CAKE

Mississippi Mud Cake image

Gina: Just about every church cookbook and family recipe box throughout the South has its own version of this dark, rich chocolate cake named for the "muddy" Mississippi River. In our version, we add coffee to deepen the chocolate flavor, and throw in a handful of mini-chocolate chips, creating a sinfully "muddy" bottom that's fun to drag your fork through. Then we top the whole thing off with mini-marshmallows and a river of icing. This is one Mississippi cake you'll be happy to drown in!

Yield serves 10 to 12

Number Of Ingredients 20

1 cup unsalted butter, plus more for greasing
2 cups all-purpose flour, plus more for dusting
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa
1/2 cup strong brewed coffee
2 large eggs
1/2 cup buttermilk
2 teaspoons vanilla extract
1 cup mini semisweet morsels
8 ounces miniature marshmallows
1/2 cup unsalted butter, softened
3 tablespoons cocoa
2 teaspoons instant espresso crystals
2 tablespoons hot water
1/2 cup heavy cream
1 pound confectioners' sugar
1 teaspoon pure vanilla extract
1 cup pecans, coarsely chopped, for garnish

Steps:

  • To make the cake, preheat the oven to 350°F. Grease and flour a 9 × 13-inch baking pan.
  • Whisk together the flour, sugar, baking soda, and salt in a large mixing bowl.
  • Heat the butter, cocoa, and coffee in a medium saucepan over medium-high heat, stirring constantly, just until the butter is melted; remove from the heat, and cool slightly. Stir the dry ingredients into the chocolate mixture until smooth.
  • In a medium mixing bowl, whisk together the eggs, buttermilk, and vanilla, and then add this mixture to the chocolate batter, stirring until combined. Pour the batter into the prepared pan, and bake for 25 minutes, or until it is springy to the touch and a cake tester inserted in the center of the cake comes out mostly clean. Allow the cake to cool for 5 minutes on a wire rack, then top with the mini morsels and miniature marshmallows.
  • While the cake is baking, make the icing. Melt the butter with the cocoa, instant espresso, hot water, and cream over medium-low heat. Bring the mixture to a boil, then remove from the heat. Stir in the confectioners' sugar, then the vanilla.
  • Pour the warm icing over the cake and the chocolate chips and marshmallows, top with the chopped nuts, and cool completely before serving.

Yield Makes one 10-inch round cake; Serves 12 to 16

Number Of Ingredients 22

Nonstick cooking spray
1 package (14.3 ounces) chocolate sandwich cookies, such as Oreos (about 34 cookies)
5 tablespoons unsalted butter, melted
1/2 stick unsalted butter
6 ounces dark chocolate (60 to 70 percent cacao), chopped (1 1/4 cups)
1/4 cup strong brewed coffee, room temperature
2 tablespoons plus 1 teaspoon instant espresso powder
1 tablespoon pure vanilla extract
1/4 teaspoon kosher salt
6 large eggs, separated, room temperature
1 cup sugar
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1/4 cup cornstarch
1/4 teaspoon kosher salt
4 large egg yolks
2 1/2 cups whole milk
3 tablespoons unsalted butter
2 teaspoons pure vanilla extract
3 ounces dark chocolate (60 to 70 percent cacao), finely chopped (3/4 cup)
2 cups heavy cream
2 tablespoons sugar

Steps:

  • Chocolate Cookie Crust:Preheat oven to 300 degrees. Lightly spray bottom and sides of a 10-inch springform pan with cooking spray.
  • Pulse cookies in a food processor until finely ground (you should have about 3 1/2 cups). Pulse in butter until well combined. Transfer mixture to pan, pressing it evenly into bottom and three-quarters of the way up sides. Freeze 10 minutes. Bake until dry to the touch, 10 to 12 minutes. Transfer to a wire rack; let cool completely.
  • Flourless Chocolate Cake:Increase oven temperature to 350 degrees. Place butter and chocolate in a heatproof bowl set over (not in) a pot of simmering water; stir until melted and smooth. Remove from heat. In a small bowl, whisk together coffee, espresso powder, vanilla, and salt.
  • In the bowl of a mixer fitted with the whisk attachment, beat together egg yolks and 1/2 cup sugar on medium-high speed until pale, thick, and almost doubled in volume, 3 to 4 minutes. Beat in chocolate mixture until just combined. Beat in coffee mixture until just combined. Scrape down sides of bowl, then reduce speed to low and beat until evenly incorporated, about 10 seconds.
  • In the clean bowl of a mixer fitted with the whisk attachment, beat egg whites on medium speed until foamy, about 1 minute. Increase speed to high and gradually add remaining 1/2 cup sugar, beating until soft peaks form, 2 to 3 minutes more. Gently fold 1 cup egg-white mixture into chocolate mixture with a rubber spatula. Fold in remaining egg-white mixture just until combined (do not overmix). Pour into cooled crust.
  • Bake until cake is cracked on top and set but still slightly wobbly in center, 40 to 42 minutes (it may not appear completely cooked). Transfer to a wire rack; let cool completely. Cake will deflate in center as it cools. Wrap tightly in plastic; refrigerate at least 3 hours and up to overnight.
  • Chocolate Pudding:Whisk together sugar, cocoa, cornstarch, and salt in a medium saucepan. Whisk in egg yolks and milk. Bring to a gentle boil over medium heat, whisking constantly to prevent scorching. Boil 30 seconds, then remove from heat and whisk in butter, vanilla, and chocolate until smooth. Transfer to a bowl; cover with plastic wrap, pressing it directly onto surface to prevent skin from forming. Let cool to room temperature.
  • Pour pudding on top of cake, spreading to edges of cookie-crust border with an offset spatula. Cover with plastic wrap and refrigerate until cold, at least 3 hours.
  • Whipped Cream Topping:In the bowl of a mixer fitted with the whisk attachment, beat cream on medium-high speed until soft peaks form, about 1 minute. Gradually add sugar; beat until stiff peaks form, 1 to 2 minutes more. Top pudding layer with whipped cream, spreading to edges of pan. Unmold cake. Serve immediately, or refrigerate, covered with plastic wrap, up to 2 days.

Time P1D

Yield 8 serving(s)

Number Of Ingredients 23

nonstick cooking spray
16 ounces chocolate, sandwich cookies such as oreos crushed (35 to 40 cookies)
5 tablespoons unsalted butter, melted
4 tablespoons unsalted butter
6 ounces good-quality dark chocolate, chopped (60 to 70 percent)
2 tablespoons instant espresso powder
1 teaspoon instant espresso powder
1/4 cup strong coffee, at room temperature
1/4 teaspoon salt
1 tablespoon pure vanilla extract
6 large eggs, separated, at room temperature
1 cup sugar
3/4 cup sugar
1/2 cup dark unsweetened good-quality cocoa powder
1/4 cup cornstarch
1/4 teaspoon salt
4 large egg yolks
2 1/2 cups whole milk
3 tablespoons unsalted butter
2 teaspoons pure vanilla extract
3 ounces good-quality dark chocolate (60 to 70 percent)
1 1/4 cups heavy cream
2 tablespoons granulated sugar

Steps:

  • Make the Chocolate Cookie Crust: Preheat oven to 300 degrees. Lightly spray a 9-inch springform pan with nonstick cooking spray. Line pan with parchment paper and lightly spray parchment and sides of pan.
  • Place cookies in the bowl of a food processor; process to very fine crumbs. You should have about 3 1/2 cups. Transfer to a small bowl. Add melted butter and, using a spatula, stir until well combined.
  • Pour crumb mixture into prepared pan and press evenly with the back of a spoon into bottom and up sides, leaving about 1/2 inch between the top of the crust and top of the pan. Transfer to freezer until crust is set, about 10 minutes.
  • Transfer crust to oven and bake until dry to the touch, about 10 minutes. Transfer pan to a wire rack and let cool.
  • Make the Flourless Chocolate Cake: Increase oven temperature to 350 degrees.
  • Place butter and chocolate in a heatproof bowl set over (but not touching) simmering water to melt; stir to combine. Remove from heat. In a small bowl, whisk together espresso powder, coffee, salt, and vanilla; set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks with 1/2 cup sugar until light and almost doubled in volume, about 5 minutes. Add melted chocolate mixture and beat until just combined. Scrape down sides and bottom of the bowl and mix on low speed for 5 seconds. Add coffee mixture and beat until just combined. Scrape down the sides and bottom of the bowl and mix on low for 5 seconds.
  • In the clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites until foamy. Gradually increase speed to high and slowly add remaining 1/2 cup sugar, beating until soft peaks form.
  • Transfer 1 cup egg white mixture to chocolate mixture and, using a rubber spatula, gently fold to combine, about 30 seconds. Add remaining egg whites and continue gently folding until they are almost completely combined; do not overmix. Pour into cooled cookie crust and transfer to oven. Bake until cake is set but still jiggles slightly, 38 to 42 minutes. It may not appear completely cooked. Transfer to a wire rack to cool completely. Cake will deflate in the center as it cools. Tightly wrap cooled cake with plastic wrap and refrigerate at least 3 hours and up to overnight.
  • Make the Chocolate Pudding: In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Add egg yolks and whisk until combined. The mixture will look like a thick paste. Slowly pour in milk, whisking constantly.
  • Place saucepan over medium heat and bring mixture to a boil, whisking constantly to prevent it from burning on the bottom of the pan. Boil for 30 seconds and immediately transfer to a medium bowl. Add butter, vanilla, and chocolate; whisk until combined. Continue whisking until mixture is cooled slightly. Let stand at room temperature for 15 minutes. Press a piece of plastic wrap directly on the surface of pudding to prevent a skin from forming. Transfer to refrigerator until chilled, at least 3 hours.
  • Stir pudding to loosen and pour on top of cake, making sure to stay within the cookie crust border. Using an offset spatula, spread pudding to form an even layer on top of the cake. Transfer to refrigerator for 30 minutes.
  • Prepare the Whipped Cream Topping: In the chilled bowl of an electric mixer fitted with a chilled whisk attachment, beat cream until soft peaks form, about 1 minute. Sprinkle sugar over cream and continue whisking until stiff peaks form. Spread whipped cream over chilled pudding layer, working all the way out to the sides. Unmold cake and serve immediately. The cake can also be kept, covered, refrigerated, for up to 2 days.
