1/3 cup sliced celery
1/4 cup chopped onion
2 garlic cloves, minced
1 tablespoon cornstarch
1 can (14-1/2 ounces) beef broth
1 can (5-1/2 ounces) spicy hot V8 juice
1 teaspoon chili powder
1/2 teaspoon sugar
Dash pepper
1 cup dried cheese tortellini
Shredded Asiago cheese, optional

Steps:

  • In a small saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. In the drippings, saute the celery, onion and garlic until tender., Combine cornstarch and broth until smooth; stir into celery mixture. Add the V8 juice, chili powder, sugar and pepper. Bring to a boil; cook for 1-2 minutes or until slightly thickened. , Add tortellini. Reduce heat; cover and simmer for 15-20 minutes or until tortellini is tender. Sprinkle with bacon. Garnish with Asiago cheese if desired.

½ cup chopped red bell pepper
⅓ cup chopped green chile pepper
2 tablespoons minced garlic
1 jalapeno pepper, seeded and diced
1 tablespoon margarine
3 cups vegetable broth
2 cups peeled and cubed potatoes
1 teaspoon ground cumin
½ teaspoon salt
⅛ teaspoon ground black pepper
⅛ teaspoon ground red pepper
2 cups cheese tortellini
2 tablespoons all-purpose flour
2 tablespoons vegetable oil
1 (15 ounce) can whole kernel corn, drained
1 pint half-and-half cream

Steps:

  • In a large pot over medium heat, cook onion, bell pepper, chile pepper, garlic and jalapeno in margarine until tender but not brown, 5 minutes.
  • Stir in broth, potatoes, cumin, salt, pepper and red pepper. Bring to a boil, then reduce heat and simmer about 20 minutes, until potatoes are just tender.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
  • In a small bowl, stir together flour and vegetable oil. Pour into soup, increase heat to medium, and cook until thickened and bubbly. Stir in corn, half-and-half and tortellini and heat through. Serve.

  • In a 6-qt. stockpot, bring broth to a boil. Carefully drop sausage by heaping teaspoonfuls into boiling broth. 1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup red wine
4 large tomatoes - peeled, seeded and chopped

½ tablespoon packed fresh basil leaves
½ teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 ½ cups sliced zucchini
8 ounces fresh tortellini pasta

  • In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.
  • Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.

2 tablespoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into 1-inch cubes

1 habanero pepper, seeded and finely chopped
3 garlic cloves, minced

1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped

1 (14 ounce) can roasted-garlic seasoned chicken broth

1 tablespoon minced garlic
2 tablespoons chopped sun-dried tomatoes

1 lb hot Italian sausage
1 teaspoon olive oil
1 large onion
1 clove garlic, chopped
1 cup celery
1 cup chopped carrot
1 cup mushroom, sliced
2 teaspoons italian seasoning
1 (28 ounce) can diced tomatoes, undrained
2 cups chicken broth
3 cups spicy clamato juice
1 can red kidney beans, drained
1 package frozen cheese tortellini

Steps:

  • Steam sausage for 15 minutes to reduce fat content.
  • Let cool, and slice into bite sized pieces, removing casing if desired.
  • Spray large pot with no-stick spray.
  • Place sliced sausage in large pot with oil and let brown lightly. Remove sausage and pour off excess oil.
  • In same pot add onions,garlic, celery, carrots, and mushrooms until softened but not browned, then add back sausage.
  • Stir in seasoning, tomatoes, stock and clamato juice.
  • Bring to boil and simmer covered for 30 minutes.
  • Add frozen pasta and kidney beans; simmer covered for 20 minutes.
  • If too thick, dilute with water or more broth.
  • Season to taste.
