1 medium onion
salsa mix, package
6 (14 ounce) cans diced tomatoes
1/2 cup vinegar

Steps:

Get boiling water bath canner ready and boiling making sure water is at least 1 inch over tops of pint jars, get lids simmering but not boiling. Have clean and ready 6 pint jars and 1 half pint jar.
In a separate pan combine 6 14oz cans tomatoes, Mrs Wages medium salsa package, vinegar and the chopped onion. Bring to a boil and then back down to a simmer and cook for 10 minutes.
Using a ladle scoop out 2 ladles of salsa into a strainer over a bowl and drain salsa before adding to the pint jars. Drain all salsa before adding to the jars. Fill about 5 pint jars leaving 1" head space. Fill Half pint jars again leaving a 1" head space. Use a little of the left over salsa juice and add just a little to each jar. Add left over salsa juice to a separate pint jar. Wipe tops of jars before adding lids and screwing on the rings.
Water bath can everything for 40 minutes as it says on the Mrs wages package directions.
Listen to lids to pop when taken out of the canner and cooled.

I have tried the other tomatillo salsa's on here and none were quite right - too sweet or too citrusy but this one is just right. Depending on the flavour of the veggies I add about 1/4 packet of Mrs Wages salsa mix.

16 cups pureed tomatillos
3 cups pureed red onions
3 cups pureed white onions
3 jalapenos (de-seeded)
1 anaheim chili (de-seeded)
1/2 cup lime juice
1/2 cup vinegar
12 garlic cloves, minced
1 cup cilantro, fresh
2 tablespoons dried cilantro
2 tablespoons salt
1 teaspoon white pepper
1 teaspoon black pepper
4 teaspoons cumin
1/4-1/2 teaspoon ground oregano
1/8-1/4 teaspoon ground coriander

Steps:

I puree tomatillos with the food processor and place it in the stock pot to cook down while I process all other items. I leave a bit of juice from the tomatillos in the food process and puree the onions, peppers and cilantro together, then add to stockpot. Add all other items and cook till desired thickness stirring occasionally.
Process in water bath canner for 20 minutes.

Fill up a stock pot about halfway with water and bring to a boil. Do step 2 while you are waiting for that to happen.
Remove all of the stems from tomatoes. Fill up a clean sink with water and dump all of your tomatoes in. Swish around and drain.
This step will need to be done in separate small loads. Add about a quart of tomatoes at a time to the boiling water and allow to blanch (boil in the water) for 30 seconds to one minute. While you are waiting for the first load to finish, put some ice in a big bowl and fill up with water. Set on the counter near the pot you are using for the tomatoes.
With a slotted spoon, remove the tomatoes from the boiling water and place them into the ice water for a couple of minutes. This will stop the cooking process. Remove from the ice water and place in a bowl for later. Repeat Steps 3 and 4 until all of the tomatoes have been blanched, cooled, and moved to the bowl for later.
