MOZZARELLA & SPINACH BREAKFAST CASSEROLE
Sun-dried tomatoes and sausage add lots of texture and flavor to this gooey casserole. We've even enjoyed it reheated after a night game at our local college. It's always a winner in my book. -Nancy Murphy, Mount Dora, Florida

Steps:
- Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 6-8 minutes; drain. Mix hash browns and cheddar cheese. Layer an 11x7-in. baking dish with half of each of the following: hash brown mixture, sausage, spinach and tomatoes. Repeat layers; sprinkle with mozzarella cheese. Whisk together eggs, milk, salt and pepper; pour evenly over top., Bake, covered, 35 minutes. Sprinkle with Parmesan cheese. Bake, uncovered, until bubbly and cheese is melted, 10-15 minutes. Let stand 5-10 minutes before serving., Make-Ahead: Refrigerate unbaked casserole, covered, several hours or overnight. To use, preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake as directed.

SPINACH BREAKFAST CASSEROLE!
I tweaked this recipe to give it some pizazz for a Brunch Bridal Shower! It was a huge hit and all the girls wanted a copy! It looks very pretty and it's super yummy!! You don't have to use all of the veggies- but it definately adds to the taste and overall look if you do!

Steps:
- Preheat oven to 325.
- In a large mixing bowl combine eggs, milk, mustard, and salt; stir well.
- Spread 1/2 of bread cubes evenly in the bottom of a greased 9x13 pan.
- Sprinkle with 1/2 of veggies, ham, and cheese over bread.
- Repeat layering using the remainder of the ingredients(not eggs yet).
- Now- pour egg mixture slowly and evenly over casserole
- Bake for 55-60 minutes or until your eggs are set.
- Serve with a fruit salad for a beautiful brunch!
VEGETARIAN SPINACH, CHEESE AND " SAUSAGE" CASSEROLE
This casserole is a simple, easy to prepare, one-dish, meatless meal. Great for brunches. Be sure to drain the spinach really well. For non veggies, you can easily substitute ground breakfast sausage or crumbled bacon if you prefer.

- Thoroughly mix all ingredients.
- Pour mixture into a greased 9 inch pie plate (I have also used a square casserole dish as well).
- Bake at 350 for about 40 minutes or until center is set.
- Once out of the oven, I usually let it sit for 5 or 10 minutes.
- To serve, either cut into wedges, or squares, depending on what type of dish you used.

SPINACH 'N SOUR CREAM CASSEROLE
I've loved this since I was a kid. Creamy, delicious spinach. I crave this all the time. It's a comfort food for me.

Steps:
- Cook spinach according to directions and drain well.
- In a small saucepan, melt butter; add flour and milk; stir until thick. This is now referred to as white sauce.
- Combine white sauce, sour cream, onion powder, bouillon and salt.
- Combine with spinach and place in casserole dish.
- Bake at 350 for 20 minutes.
- Note: I sometimes sprinkle the top with grated mozzarella or Parmesan. Also, This may be too much onion powder for your tastes. Adjust according to preference.

- Preheat oven to 350 degrees F and prepare a baking dish with non-stick cooking spray and set aside.
- Ground and cook sausage in a skillet until fully cooked. Add garlic and onions to the skillet and sauté with sausage for 2 minutes. Place this in your prepared baking dish. Add chopped spinach and 1/2 cup of shredded mozzarella cheese.
- In a separate bowl whisk eggs with salt and pepper. Pour egg wash into baking dish and gently mix to make sure eggs are covering the entire dish. Top with remaining cheese and bake for 45 - 50 minutes or until a fork can come out clean and eggs are cooked all the way through.
