Cheese omelette - fluffy, cheesy and delicious! Serve it for breakfast with toasted bread, or wrap it in a roti, tortilla or make roll.

2 eggs
¼ cup onions & bell peppers (heaped, (use whatever you like))
Salt ( little ( cheese is salted so use little))
coriander leaves (few, chopped)
1 ¼ tsp oil
Cheese ( as desired (cheddar or mozzarella) (¼ cup goes well))
2 pinches red chilli powder
1 pinch turmeric
2 pinches garam masala ( or any spice powder or Italian herbs)

Steps:

  • Whisk eggs well in a bowl.
  • Heat a pan with oil, when it is just hot enough add the onions, other veggies & salt. Saute on a high flame for 1 minute.
  • Add garam masala, turmeric and red chili powder. Mix well. Spread the mixture.
  • Reduce the flame to medium and pour the eggs.
  • Allow to cook until the base is set. Flip it and cook.
  • Fry it to and fro on both the sides until fully cooked. Then add the grated cheese as desired.
  • Fold it half way and cook on a low heat until the cheese melts.
  • Serve cheese omelette warm.

3 large eggs
Unsalted butter
Olive oil
Kosher salt and freshly ground black pepper
Few slices fresh mozzarella, thinly sliced
1/2 roasted red pepper, sliced or diced
Few slices paper thin sliced prosciutto
Fresh basil leaves

Steps:

  • Whisk the eggs in a bowl until light and fluffy and uniform in color.
  • Melt some butter in a 6-inch nonstick saute pan over medium heat. Sprinkle the beaten eggs with salt and black pepper. Add the eggs to the pan and lightly scramble them with a fork. Spoon a line along the center of the omelet with the cheese, roasted red pepper, prosciutto and basil. Roll the finished omelet onto a serving platter.

salt and freshly ground white pepper to taste
2 tablespoons butter
¼ cup shredded Emmentaler cheese

Steps:

  • Beat eggs in a bowl with a whisk. Add milk and season with salt and white pepper. Whisk for a few minutes until egg mixture is foamy; beating in air makes the omelette fluffy.
  • Melt butter in a small, nonstick skillet over medium-low heat. Pour in egg mixture and twirl skillet so bottom is evenly covered with egg. Cook for 1 minute until egg starts to set. Lift edges with a spatula and tilt the skillet so uncooked egg mixture can run towards the bottom of the skillet to set. Repeat until no visible liquid egg remains.
  • Carefully flip omelette and cook for another 30 seconds to 1 minute. Sprinkle Emmentaler cheese in one line in the middle of the omelette and fold omelette in half. Cook for 20 seconds, then slide omelette onto plate.

These rolls are Yummy with a capital Y! They're light and fluffy... with a great mozzarella treat in the middle. These will definitely be a hit around your dinner table. And, they are relatively easy to prepare - love it!

1/2 c milk
1/4 c water
2 Tbsp butter
2 c flour (up to 1/2 cup more, if needed)
2 Tbsp sugar
1 tsp salt
1 egg
1 pkg fast rise yeast
12 chunks mozzarella cheese
olive oil
melted butter
garlic salt
parmesan cheese

Steps:

  • 1. Combine milk, water and butter and heat to 115 - 125 degrees. Place 1 cup flour, sugar, salt, egg and dry yeast in large bowl.
  • 2. Add heated liquid and beat at medium speed for 2 minutes. Slowly stir in remaining 1 cup flour. (Dough will be sticky).**(See NOTE). Turn dough out onto a well-floured surface and knead until firm and smooth, about 10 minutes. Cover & let rest 10 minutes.
  • 3. Divide dough into 12 equal balls. Flatten each ball into a circle, approximately 3-4" across. Place a mozzarella chunk in the middle and close up, pinching dough together to seal. Place in a well-greased muffin pan or on cookie sheet at least 1" apart, and put in warm place until doubled in size, about 1/2 hour to 45 minutes.
  • 4. Brush tops with mixture of melted butter and olive oil. Sprinkle lightly with garlic salt. Sprinkle parmesan cheese on top.
  • 5. Preheat oven to 400. Bake for 10-15 minutes or until browned. **NOTE: The dough will be sticky and wet. Turn out onto well floured surface and use well floured hands to work with the dough, using extra flour as needed. Do not use too much, as you want to keep the dough soft. This creates a very light, fluffy roll.

Steps:

  • First use the butter to grease the pan.
  • Crack three eggs into a bowl (no need to use yolk if you don't like it, but that's me).
  • Pour the eggs onto the pan and set the stove for about medium heat.
  • Add pieces of mozzarella cheese to the egg and some salt and pepper.
  • Fry the egg like a normal easy over egg.
  • After the egg is done butter a hard roll and place pieces of mozzarella on the roll then put the egg in the roll and you're done! Enjoy!

  • Beat eggs, milk and flour in large bowl. I found that beating eggs with flour first and adding milk later, gives an omelette a smoother texture.
