GARLIC MOZZARELLA BREAD
A delicious garlic mozzarella bread that is fluffy, cheesy and delicious.

Steps:
- In a small plate bowel, combine milk, egg, yeast and brown sugar. Stir and set aside.
- In a large bowl, add flour and then the yeast-milk mixture. Stir using the wooden spoon followed by adding the melted butter
- Use your hand to knead the dough till it turns soft and fluffy
- Transfer into the baking tray and use your hand to shaped into a ball
- Cover with a clean towel and set aside for 1 hour to let it grow
- In a small plate bowel, add the unsalted butter, grated garlic, salt and chopped green onion.
- Stir to combine using small spoon till it turns into a paste
- Remove the towel from the dough, and use your hand to flatten into a circle shape.
- Use the sharp knife to score the dough in all side like the picture shown in the post.
- Cut the mozzarella cheese into a 1 inch smaller pieces.
- Insert each cheeses within the lines of the scored dough
- Use the brush to spread the bread dough with garlic butter
- Transfer into the oven and let it bake for 15 to 20 minutes in 200 C (400 F).
- You can eat it alone or serve with soup or pasta

MOZZARELLA BASIL BREAD

Steps:
- Mix warm water with sugar in a large mixing bowl until the sugar has dissolved. Sprinkle yeast over the surface of the water, and let stand until the yeast begins to form a creamy layer on the water. Stir the yeast into the water. Stir in salt, and 1 cup of bread flour, and beat the flour in to form a loose batter. Stir in 1 more cup of flour, and mix in the mozzarella cheese, milk, and basil. Mix in the remaining 2 cups of flour in 1/2-cup additions.
- Turn the dough out onto a well-floured work surface, and knead until the dough is thoroughly mixed, but still sticky, 5 to 8 minutes. Add flour into the dough as you knead, if necessary. Form the dough into a ball, and place into an oiled bowl. Turn the dough over in the bowl to oil the surface of the dough, and cover with a cloth. Allow to rise until double, about 1 hour.
- With your fist, press firmly on the dough to deflate the large bubbles. Turn the dough out onto a well-floured work surface, and knead the dough just long enough to eliminate the remaining bubbles in the dough, about 1 minute. Cut the dough into 2 equal pieces, and form each half into a round ball. Spray a baking sheet with nonstick cooking spray, and place the balls onto the baking sheet. With a sharp knife, slash an X into the top of each loaf. Cover the loaves with a towel, and let rise until doubled, about 25 minutes.
- Preheat oven to 425 degrees F (220 degrees C).
- Bake the loaves until browned, about 25 minutes. To serve, cut each loaf into 8 wedges.

- Combine 1/4 cup water and rennet in a small bowl; mix well.
- Combine remaining 1/2 cup water and citric acid in another small bowl; mix until dissolved.
- Pour milk into a large pot set over medium heat. Stir in water-citric acid mixture. Heat milk, stirring occasionally, until it registers 90 degrees F (32 degrees C) on an instant-read thermometer, about 5 minutes.
- Remove milk from heat and stir in rennet mixture in a figure-8 motion for 30 seconds. Stir counterclockwise for 30 seconds to still the milk. Let stand, covered, until milk sets into curd, 5 to 10 minutes. Press edge of the curd gently with a palette knife or the back of a spoon to check for firmness.
- Slice vertically into the pot to cut curd into 3/4-inch cubes with a palette knife. Stir curds gently, but leave cubes mostly intact.
- Return pot to the heat; cook over medium heat, stirring curds gently, until temperature reaches 109 degrees F (43 degrees C), about 5 minutes. Remove from heat.
- Ladle curds into a colander set over a large bowl using a slotted spoon. Press curds gently to extract liquid whey. Pour drained whey back into the pot.
- Heat whey to 185 degrees F (85 degrees C), about 5 minutes. Wearing gloves, tear off a piece of curd and place on a slotted spoon. Dip curd into hot whey for 5 to 10 seconds. Stretch, fold, and knead the curd. Repeat until mozzarella is smooth and elastic. Knead in salt and form curd into a ball. Repeat dipping and kneading process with remaining curd.
- Allow mozzarella to cool. Wrap tightly in plastic wrap and transfer to the refrigerator.

GARLIC BREAD BITES
These garlic bread bites are ridiculously easy to make and insanely tasty! To make them extra cheesy, sprinkle the tops with more mozzarella cheese after taking them out of the oven the second time. - Preheat oven to 400°. In a microwave-safe bowl, combine mozzarella cheese and cream cheese; microwave, covered, on high until melted, 30-60 seconds. Stir until smooth. Stir in egg. In another bowl, mix almond flour and seasonings; stir into cheese mixture until combined (mixture will be thick)., With wet hands, shape into 12 balls. BREAD-BOWL MOZZARELLA DIP

- Preheat the oven to 400 degrees F. Combine the mozzarella, feta and butter in a large bowl. Slice off the top 2 inches of the bread boule and hollow it out, reserving the top and insides for dipping. Fill the bread bowl with the cheese mixture. Transfer to a baking dish, cover loosely with foil and bake 20 minutes.
- Uncover and crack the egg on top of the cheese mixture. Continue baking, uncovered, until the egg white is almost set, 12 to 15 minutes, then broil until just set, 1 to 2 more minutes.
- Remove from the oven and sprinkle with the red pepper flakes. Just before serving, break the egg yolk with a fork and beat into the melted cheese.
- Serve with the bread trimmings or crudites.
GOOEY MOZZARELLA-GARLIC BREAD
