3 cups mashed sweet potatoes
1 cup brown sugar
2 large eggs (lightly beaten)
1 teaspoon vanilla
1/2 cup milk
1/2 cup melted butter
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter
1 cup chopped pecans

Steps:

  • Prepare a 1 1/2 to 2-quart casserole dish with cooking spray and set aside. In a large mixing bowl, combine mashed sweet potatoes, brown sugar, eggs, vanilla, milk, and melted butter. Pour into prepared casserole dish.
  • To make the topping: Combine brown sugar, flour, melted butter, and chopped pecans. Sprinkle over the top.
  • Bake at 350 degrees for 30-40 minutes until cooked throughout and the top is lightly brown.

4 (15.5 ounce) cans mashed sweet potatoes
1 cup white sugar
½ cup butter, softened
½ cup milk
2 eggs, beaten
1 tablespoon ground cinnamon
1 teaspoon vanilla extract
1 ½ cups brown sugar
1 cup chopped pecans
1 cup flaked coconut
½ cup butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir mashed sweet potatoes, white sugar, 1/2 cup butter, milk, eggs, cinnamon, and vanilla together in a large bowl until smooth; transfer to a casserole dish.
  • Mix brown sugar, pecans, coconut, and 1/2 cup butter in a bowl; spread atop the filling.
  • Bake casserole in preheated oven until topping is golden brown, about 30 minutes.

  • Mix first six ingredients and place in baking dish.
  • For topping, mix brown sugar, flour and pecans.
  • Spread on top of sweet potato mixture.

1 cup pecans, chopped
3/4 cup miniature marshmallow

Steps:

  • Mix first seven ingredients together.
  • Pour into greased 2 quart casserole dish.
  • Bake at 375°F for 30 minutes.
  • TOPPING.
  • Combine sugar, flour, margarine and pecans.
  • Spoon over top of hot casserole.
  • Sprinkle marshmallows on top of everything.
  • Bake an additional 10 minutes.

4 -6 orange-fleshed sweet potatoes (medium to large in size)
2/3 cup sugar
4 tablespoons unsalted butter, melted
2 large eggs
1/4 teaspoon vanilla extract
1 cup firmly packed light brown sugar
1/3 cup all-purpose flour
1/3 cup unsalted butter, melted
ground cinnamon, a pinch
1 cup pecans, finely chopped
1/4 cup candied ginger, finely chopped

Steps:

  • Preheat oven to 425°; line a baking sheet with foil.
  • Pierce the sweet potatoes several times with a fork or paring knife, bake them on the prepared pan for 1 hour, or until tender.
  • Remove from the oven and let cool for about 15 minutes, until cool to touch.
  • Decrease oven temperature to 350°; coat a 13 x 9 inch baking dish with butter or cooking spray.
  • In a bowl, combine the sugar, butter, eggs, and vanilla; using an electric mixer, beat on medium speed until creamy.
