OLDE TAVERN SPOON BREAD
Good ol' Southern style spoon bread made with a cornmeal mush which adds extra moistness.

Steps:
- Measure the milk into a saucepan and bring to a boil. Add the cornmeal; cook and stir for several minutes, until cornmeal has absorbed all of the milk. Remove from the heat and allow to cool for about 1 hour. The mixture will be very stiff.
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 1 1/2 quart casserole dish.
- Place the cornmeal mixture into a large bowl. Stir in the eggs, salt, baking powder and butter. Pour into the prepared casserole dish.
- Bake for 35 minutes in the preheated oven, or until the edges become lightly toasted. Serve hot directly from the dish by the spoonful.

CHRISTIANA CAMPBELL'S TAVERN SPOON BREAD

- Grease a 9x9" baking dish. Combine the water and milk and heat to simmer. Add the cornmeal, salt, sugar, and butter, and stir over medium heat until thickened, about 5 min. Remove from the heat. Beat the eggs with the baking powder until light and fluffy, then add to the cornmeal. Mix well. Pour into the prepared dish and bake 45 to 50min for 350 degrees F.
CHRISTIANA CAMPBELL'S TAVERN SPOON BREAD
I enjoyed my recent visit to Colonial Williamsburg in Virginia, and had a wonderful dinner at Christiana Campbell's Tavern. Our meals were accompanied by this spoon bread, scooped right out of the griddle and onto our plates. Absolutely delicious!

Steps:
- Preheat oven to 375 degrees F.
- In the bowl of an electric mixer, combine the cornmeal, salt, and sugar.
- With the mixer on medium low speed, add the boiling water and butter into the bowl and mix for about 5 minutes.
- Add milk and beaten eggs and allow to mix for another 5 minutes; stop mixer and allow mixture to cool for about 5 minutes.
- Turn the mixer on low and add the baking powder and mix until well incorporated.
- Pour mixture into a buttered skillet or 2-quart casserole and bake for 30 to 45 minute an the center has set.
- Serve immediately.

Salmagundi was the chef's salad of 18th century England. In present day England and in Colonial Williamsburg, the name has been revived. My mother enjoyed serving this as a main course for dinner. We always liked it!

Steps:
- Wash, drain, dry, and tear lettuce.
- Arrange the greems on individual salad plates.
- Place the remaining ingredients evenly over the top and around the greens.
- Sprinkle lightly wtih oil and vinegar dressing.
- Pass remaining dressing as needed.
- Dressing: Dissolve salt and pepper in the vinegar.
- Add oil and shake in a covered jar or whirl in the blender to keep it from separating.

- Prepare a crumb crust (below).
- Soften the gelatin in 1/2 cup of cold water. Place over low heat and bring almost to a boil, stirring to dissolve. Beat the egg yolks and sugar until very light. Stir the gelatin into the egg mixture. Cool. Gradually add the rum, beating constantly. Whip the cream until it stands in soft peaks and fold it into gelatin mixture. Cool until the mixture begins to set, then spoon it into the crumb crust and chill until firm enough to cut. Grate the unsweetened chocolate over the top before serving.
- Crumb Crust.
- Combine the ingredients and press into a 9-inch pie pan.
- Chill.

- In a colander under cold-running water, rinse the rice and transfer to a medium heavy saucepan with a tight-fitting lid. Pour in 2-1/2 cups cold water and bring to a boil over high heat. Reduce the heat to medium low, cover, and cook for 20 minutes. Remove the lid, fluff the rice with a fork, and add the butter, 1 teaspoon salt, and the saffron. Cover and let sit for 5 minutes. Season with more salt (if needed) and freshly ground black pepper before serving.
