MOTABEL DIP (QATAR)
Found on multiple websites. Untried. Supposed to be a spicier version of baba ghannouj. Number of servings is a guess.

Steps:
- Preheat oven to 400 degrees. Place eggplant on lightly greased baking sheet. Roast for 30 minutes, or until eggplant is tender. Once roasted, remove from oven and allow to cool.
- Once eggplants have cooled, peel the skins. They should come off fairly easily. If you are having a tough time, just scoop the eggplant from the skin with a spoon. Set aside.
- In a food processor, combine and blend tahini, garlic, and peppers. Add in eggplant and blend well. Add in olive oil.
- Remove from food processor and place in serving bowl. Stir in lemon juice and sprinkle with salt and pepper.
- Serve immediately or store in the refrigerator for up to three days.

Steps:
- Arrange the dates on a pretty plate.
- Melt the butter and whisk in the flour and cinnamon and cook for a few minutes until thickened into a gravy like sauce (whisk constantly).
- Now, spoon the buttery cinnamon mixture over and around the dates.
- Let the warm sauce cool to room temperature, then dust like crazy with as much powdered sugar as you can stand.

- Place the eggplant on open flame. Keep rotating until entire skin is charred and flesh inside is soft and pulpy. Inserting a knife or skewer inside will tell you when flesh is completely soft.
- Allow it to cool for a bit and then peel the skin off, removing all the cooked, eggplant flesh in a large bowl. Discard any large chunks of seeds.
- On a chopping board, add 2 pinches of salt to the peeled garlic cloves and mash them with the side of the knife blade until you get a coarse paste.
- Mash the eggplant flesh with a fork, adding the tahini, yogurt, salt, garlic paste, juice of two lemons.

- Place each eggplant on a gas hob and turn a quarter every 5 minutes. The process should take 20-30 minutes in order for the eggplants to be completely charred all over and completely cooked through. They will have a “collapsed” appearance.
